    Hey you guys.

    I just bought a slow-cooker (go, me!). I have never been much of a main-course-cook--I'm good at pastas, appetizers, stuff like that. I'm going to try the cranberry sauce pot roast thingie I've seen in here when lurking. I know the (db)bf likes some veggies with his pot roast usually so I was thinking of adding carrots, and potatoes maybe to this dish. Can I put them in at the same time? Or should I not do this at all and just make a separate veggie dish or something?

    I've never done veggies in the crock with this. I have it cooking for too long and they'd be mush. I suppose you could put them in halfway through. I'm never home to do that though.

    Usually I just make garlic mashed potatoes and a separate veggie when I do this.

    That is what I was thinking too...mmm garlic mashed. If this makes a nice gravy like it's supposed to that sounds yummy with the mashed potatoes. I'm going to do it tomorrow night.

    We have leftover garlic shrimp and sausage from the Daytona 500 party I did not go to on Sunday so that is what we're having tonight mixed up with some rice.

    I strain out the onion pieces and thicken the gravy myself, but I don't think anyone else does.

    I am going to try this on the George Foreman grill my mother has been neglecting.

    Salmon with Garlic and Basil

    1 tablespoon fresh basil, chopped
    1 tablespoon fresh lemon juice
    1 teaspoon olive oil
    1/2 garlic clove, minced
    6 oz. salmon fillet
    salt and pepper to taste

    Combine basil, lemon juice, oil, garlic in a small bowl. Add fish and marinade for 1 hour.

    Spray broiler pan with non-stick cooking spray. Place fish skin side down. Sprinkle fish evenly with salt and pepper. You may cook fish with some of the marinade for extra flavor. Broil for 10-12 minutes; turn and cook an additional 3 minutes or until skin is crispy.

    I like both baking and grilling fish. The dbbf is/was in charge of the grilling but there would always some kind of issue with the fish falling apart etc. I finally got him one of those grilling basket thingies. Or, I'll wrap it up in foil.

    So, I was going to make mashed with my pot roast experiment tomorrow but then I remembered that I have this package of rösti (Swiss potatoes, kind of like hashbrowns) that I have not used yet.

    Danielle, you are going to love that pot roast!
    I have put veggies in the crock (potatoes and carrots) with pot roast and they are fine. I tried putting them in during the last couple hours once and they didn't cook enough.

    I also like to make egg noodles when I make pot roast. Nice and simple.

    I'm making tilapia tonight. Haven't decided how yet. I think there might be too much for the counter grill unless I open it up, but then I have to turn the fish.

    I overcooked the salmon (10 minutes) because I overestimated the power of George Foreman. I will likely have it again tomorrow so I will only leave it in for 7 or 8 minutes.

    I also had this on the side:

    3 cup mushrooms, thick sliced
    1/2 cup water
    2 each garlic, clove, crushed
    2 each lemon, juice of

    Place water in a teflon skillet with the garlic. Simmer 5 minutes. Remove the garlic. Add mushrooms and lemon juice. Cook, stirring frequently, for 3-5 minutes or until mushrooms are cooked to your taste.

    Servings: 4

    I'm like a total newbie with fish. I can always do fish & chips, but nothing fancy, like you're in a seafood restaurant. I've had much better luck with steak (no, I don't boil steak).

    I have some fish at home (I totally forgot what kind, but it looks like sole). I don't have a fish steamer, only a veggie steamer (pot and an electric one). I may just fry my fish, since I just thawed it out and marinated some of it today.

    I just got some foil today, so I'll likely bake some of that also. I'll try frying a small piece also. I have to see how that stuff turns out. The only fish I used to make all the time was some breaded fish cakes that I'd gotten at the butcher shop. About $10 for 24 pieces was a great deal, and those mini rolls (like what you'd put a 3-oz burger on) worked whenever I needed something that I could pop into the toaster oven, add some mayo and eat.

    Some of my friends can't even eat fish, so I'm kinda lucky.

    Hmmmm ... wot-evah.

    If you'd have eaten the whole thing, then you'd have lost your grip on weight loss.

    I think you're about 5'8" or so, which likely helps to distribute the weight a little bit.

    That's it!!! My toaster oven has some stupid "broil" setting that kinda burnt the skin of my chicken the last time. I may try that with fish, just to see how it works. At least it'll get the top smoked.

    I also have my rotisserie. So many ways to cook a stupid fish, yet still so hungry.

    I made the tilapia last night and it tasted funny. Not bad, just not like tilapia. So 2 lbs went in the garbage. If my hubby didn't want to eat it, I wasn't chancing it. He eats anything.

    i made my own recipe for chili this weekend (sorry, not this evening)...

    it was for a local cookoff.

    i took third place out of 15.

    here's the recipe if you're so inclined...it's a commitment!

    Chili LJC (named after a friend of mine):

    Ingredients:

    3 lbs. beef (sirloin or London broil will do but tri-tip is best), cut into 1/2” cubes
    8 oz. pork tenderloin, cut into 1/2” cubes
    1 can minced green chilies
    2 medium sweet onions (Walla Walla or Vidalia), chopped
    1 head garlic (elephant garlic is best), chopped
    1/2 cup chili powder (Gebhardts if you can)
    1 10oz. Cans chicken broth
    1 16oz. cans tomato sauce
    1/2 tbs. cumin
    1/2 tbs. salt
    1/4 tsp. cayenne pepper
    3/4 can of beer (drink the rest)
    1 tbs. oregano
    1/2 cup fresh lime juice
    1 tsp. Tabasco sauce
    1 tbs. honey
    2 tbs. brown sugar

    Directions:

    Saute onions and garlic until just soft (3 min.). Remove from heat and add chili powder. Mix well and set aside.

    Saute beef, one pound at a time. Transfer to large chili pot. Add a little chicken broth to prevent sticking. Stir in onion mixture.

    Saute pork and minced chilies in pan over very high heat (2 min). Add to chili pot. Simmer 15 min. Stir frequently. Drain juices from pot.

    Add chicken broth, tomato sauce, cumin, salt and cayenne pepper. Simmer 30 minutes.

    Meanwhile pour beer into a small saucepan. Add oregano and bring to boil. Allow oregano to brew like tea in the beer. Strain oregano from beer. Add strained beer to chili pot. Simmer 45 minutes.

    Add fresh lime juice and honey. Simmer 15 min.

    Add brown sugar and Tabasco. Cook 1 hour. Stir every now and then (Note: this is when I usually “work the chili,” meaning I stir the meat against the pot or use a potato masher so it begins to break up into finer strands. Leave some larger cubes for texture. The chili will thicken the most during this hour. And with proper working of the chili).

    Enjoy.

    Makes 1/2 Gallon.

    Nah, just bad food choices compounded by more bad food choices. I went from 1300 calories a day to who knows how many...the broken treadmill definitely didn't help.

    I'm 5'9˝" and while there's some truth to the "oh, you're tall enough to carry it" comment, there's not nearly enough for me to be happy about this.

    I'll snap back into it - sooner rather than later, I hope.

    I was just home for lunch and the cranberry pot roast smelled soooooo yummy. I threw a package of baby carrots in the pot...hopefully they will cook enough by 5/6. I'm also making roasted garlic mashed (another new thing for me) so hopefully that will come out OK too. I roasted the garlic while I was home for 35 minutes on 400F. I wrapped the head in foil after, and set it on the stove. I hope it stays mushy enough...and the bf does not throw it away.

    I wasn't sure of your height when I met you. I just think you were taller than the other gals.

    I still say that too many women worry about their weight. There were several women at the last gathering of various body sizes and heights, and all of you looked fine to me, yourself included.

    Now I have to taste the flounder. I ut some spices on it, but it was undercooked. I gave it an hour+, covered it in foil and in a pan. I'll have to see what it tastes like.

    Yes, some of us do worry about their weight more than we should, probably. But there are others that don't worry enough. I wish I had a better self-image.

    I forget. Some chicken thing. I really don't like her stuff. It always uses way too many spices and/or too many pans. It's easy for her when she's not A) paying for spices and B) doing the dishes.

    Only Ally, Vicki and Andy at the recent FP had absolutely nothing to worry about for the body. I guess everyone else (men & women) had the so-called "sins" that people seem to rely upon too doggone much:

    big hips
    short
    big arse
    big belly

    Who cares? I've got a belly, haven't worked out in ages, but I'm not going for any GQ covers. I think that with women, they see the über-skinny models like Kate Moss, then think they have to look like that or, as pretty as Bar Refaeli, or have a body like a health & fitness model. I also don't expect anyone here to look like Christy Brinkley when they're 54, or the late Eartha Kitt (the original purrrrrfect Miss Catty Woman) when they're 80.

    As "real women" in a real world (or wot-evah sad interpretation of this that I have), y'all look fine to me. Brooke and Danielle had some baby fat on 'em, and they both had great smiles, seemed very pleased. Dong has very nice hips on her, has a great deal of wisdom and confidence.

    Trish, you look fine, people here know you for your quality cooking and recipes, quick wit, intelligence and level-headedness. I'm not conducting an HFC contest here, so all of you galz look just fine. I can't see a guy or gal not liking any of you, at least the ones I know.

    You need not be as skinny as Kate Moss or Calista Flockhart, nor as pretty as Cindy Crawford, Beyonce or any other top celeb.

    Did Laura not notice me checking her out a little bit when she mentioned her age? (make sure Mr LDG never finds out or I'm done)

    You all look great. Stop worrying about a whole lotta nuttin'. Sheesh.
