    The South Hills mall is a mess right now. At least parts of it. Hub and I were just up there a couple weeks ago and they are doing major construction. I don't know if that's the mall part or just the part with KMart and the movie theater part.

    I heard they were doing some construction up there. I think a ShopRite was supposed to opening up there (Of course they open when I leave, those pricks).

    Ummm its near the food court but its like a small sit down restaurant. Its not a fast food place if thats what you mean.

    I imagine it was probably there before the Pok Galleria opened, so South Hills was probably THE mall way back when.

    That's what happened in White Plains. They had the WP Mall, which was tiny, but unusual back in the late 70's because it was enclosed. Once the Galleria opened, no one went to the little WP mall anymore.

    Thats exactly what it was. They wanted to expand retail stores in Pok so they opened up the Galleria and the big name stores that were in SHM moved to the galleria (i.e. Sears) They still have Burlington coat factory and KMart in there, as well as the cinema (well last I knew)

    Pressure Cooker is on. Once pressure is up, the spaghetti sauce only takes about 12 minutes.

    There's a good Thai place in Bayside (of course I'll find something convenient to me). There's a ton of Indian places near me too (probably about as many as in your neighborhood, Trish), but I'm not wild about Indian food, so I pass them without going in. But I'd go to hang out with you all!

    Crock pot yesterday, was supposed to be ham and cabbage, but I bought a pork roast by mistake. But, I threw in a little salt and some Red Hot and it was great! Dunk that Italian bread and butter.....

    Shrimp, Clams, Scallops w/ Pasta
    • 2 teaspoons extra virgin olive oil
    • 1 cup chopped onion

    • 1/2 cup white wine
    • 1 tablespoon sugar

    • 1 tablespoon crushed red pepper flakes
    • 1 bay leaf

    • 1 clove garlic, minced
    • 1/2 cup grated Parmesan cheese
    Heat 2 teaspoons olive oil in a saucepan over medium heat, and cook the onion and garlic until tender. Mix in crushed tomatoes, tomato paste, wine, sugar, salt, oregano, red pepper, and bay leaf. Simmer uncovered 1 hour, stirring occasionally.
    Bring a large pot of lightly salted water to a boil. Place spaghetti in the pot, cook 8 to 10 minutes, until al dente, and drain.
    Place the clams in a pot fitted with a steamer basket over boiling water, and steam until opened. Discard clams that do not open. Stir into the sauce.
    NOTE - I have used two cans of chopped clams when I don't feel like dealing with fresh clams.
    Heat 2 teaspoons olive oil in a skillet over medium heat, and cook the shrimp and scallops 2 minutes, or until opaque. Mix in garlic. Stir into the sauce. Serve sauce with seafood over the cooked spaghetti, and top with Parmesan cheese.

    Normally I stick to simple things - grilled chicken sandwiches, etc. Being a single guy living on my own, I don't really need much more... which is why I'm kind of nervous.

    Cooking dinner in a week or two w/ my girl and I want to make it something good. Finalizing the menu now. I am going to go w/ a peppercorn crusted filet mignon with a side salad of spinach, apple slices, walnuts, cranberries, with a pomegranate vinaigrette. This will be pulled together with a nice red that I'm still looking for... should go well w/ the meat and the salad (since there is red wine vinegar in it)

    Very ambitious for my cooking skill level, keeping my fingers crossed I have an extra albiet smaller filet mignon chunk that I will be experimenting with this weekend... wish me luck!!!

    Andy, good idea experimenting with the filet first. Steak of any kind can be tricky to get cooked just right if you're not used to cooking it.

    I made a chicken stir fry with baby corn, water chestnuts and broccoli, over rice tonight. It was yummy.

    If you can find Wehani rice, I highly recommend it. Best rice I've EVER had. It's got kind of a nutty flavor, is reddish/brown and makes for great plate presentation.
    (Although, maybe something lighter than rice like couscous would complement the meal (plus it's incredibly easy and quick to make))?

    Whatever you decide, best of luck with the meal. It sounds fantastic!
