I wanted to pass this recipe on again. I made it a few nights ago and it was fantastic, very healthy too. I made the medley and grilled some chicken.
Roasted Vegetable Medley
2 cups Brussels sprouts
8 ounces fresh green beans, cut into 2-inch pieces (2 cups)
2 cups cauliflower florets
2 tablespoons chopped fresh herbs or 2 teaspoons dried herbs, crushed (such as rosemary, basil, and oregano)
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
2 tablespoons water
3 red, yellow, and/or green bell peppers, seeded and cut into strips
1. Halve any large Brussels sprouts. Place Brussels spouts, green beans, and cauliflower in a shallow roasting pan. Sprinkle with desired herbs, kosher salt, and black pepper. Drizzle with oil and the water.
2. Cover with foil. Bake in a 400� oven for 20 minutes. Remove foil; stir in bell peppers. Bake uncovered for approximately 15 minutes or until vegetables are crisp-tender

I dumped a bunch of veggies and some leftover chicken with a can of cream of celery soup into the crockpot this morning before leaving for work. Hoping for the best.

Last night I baked marinated pork chops (orange marmalade, ginger, garlic, soy sauce, orange zest and a touch of honey). I made it up as I went along... Had that with some Kashi Pilaf and steamed green beans... I wish there were leftovers 'cause it turned out pretty good.
Tonight I think I am going with pesto shrimp over a salad or over the Pilaf...

I never use a recipe. I just put a little canola oil in the wok (sometimes I use stir-fry oil if I have it) and stir fry the chicken strips first until almost cooked through, then remove them and add the brocolli (I usually use frozen, but I thaw it out in the microwave first), then add the baby corn and water chestnuts. Stir fry those till cooked through and add the chicken back in. Add whatever sauce you want to use (sometimes I make it home made like the marinade above, or I use a garlic stir fry sauce from a jar). I add some sesame seeds at this point too. If you want a thicker sauce, put some cornstarch in a little cold water and add to the sauce and cook till it thickens.Originally Posted by 4bronxbombers

I did 2 center cut pork chops - poked a couple holes in them with a fork and put about a tbsp minced garlic, tbsp grated ginger, about 2 tbsp marmalade, a little bit of soy sauce and then i made sure it was all over the chops and then shaved some zest on and then covered it up and marinated them for about 6 hours in the frig ... then right before i baked them i put a drizzle of honey on both sides and cooked in the oven at 400 for about (i think) 15 mins...

I never think of making my own marinades. I usually use Good seasons, BBQ,teriyaki, or other bottled stuff. Those fresh marinades sound good.
Tonight it is chicken fajitas.
We are invited to friends for dinner this evening. She is making baked lobster tails with drawn garlic butter. I'm making dessert.

I just take Ground Chuck and put in eggs and I wet down stale bread and squeeze it out and add the bread to the ground meat and eggs, seasoning, like parsley, salt, pepper, and parmesan cheese. Then I form the meatballs and put them in a roasting pan and bake them in the oven til they are browned and crusty on the outside. Then you can add them to your sauce or you can eat them just like that. I can't tell you measurements, as I just go by instinct.Originally Posted by Luvtino
