It is clay pot put out by Rompertopf. It is specifically for cooking and you can cook lots of things in it, chicken, fish, roasts, practically anything really. The food comes out very moist using the clay pot. I never roast chicken without using the clay pot.Originally Posted by krystl

Right now, I'm working with two different coatings: an egg and buttermilk. I'm not too sure about mayo. I've never cooked anything w/mayo, which I use exclusively for my sandwiches. The mayo recipie is actually a Hellman's recipie. Mayo is just egg and oil which is emulsified, so it is really not that big of a deal to use. The mayo is mixed with parm cheese, and the mixture is nice and gooey and helps to keep the breading stuck to the chicken, and keeps the chicken moist. 1/2 cup of Mayo
1/4 cup of grated Parmesan cheese
4 boneless chicken breast halves
1/4n cup of Italian Seasoned bread crumbs
Combine Mayo & Cheese. Spread on chicken then roll chicken in bread crumbs to cover them in it. Bake @ 425 for 20-25 minutes.
You can use any kind of breading you like. Panko is very crunchy, and I tend to use that when I make this recipie.

Thanks for posting this recipe. It is not the recipe I was referring to though. The one I used was just coating pieces of a cut up whole chicken in mayo and then dredging it in seasoned crushed corn flakes and baking in the oven. The grilled chicken we had last night was so good. I made mashed potatoes and corn to go with it. Since there is a lot of chicken left, we'll probably just have that.
