    It is clay pot put out by Rompertopf. It is specifically for cooking and you can cook lots of things in it, chicken, fish, roasts, practically anything really. The food comes out very moist using the clay pot. I never roast chicken without using the clay pot.

    The ones that are meant for cooking don't have any lead in them but if it is not meant for cooking there is no way of knowing if the pot contains lead or any other toxic substance as far as I know. Also, there can't be any holes in the pot.

    I know, and there were no leftovers. Damn.

    I was looking online to see if I could find the recipe so you could see it, but I can't find it. It was not complicated, but I dirtied a lot of pots and bowls making it. Maybe it was a decent recipe, I just don't know what's supposed to be in it.

    You are right. We eat it about 3 times per week because it is so rich in Omega 3. When you get to be our age (my BF and I, that is) you need all the help you can get, lol!!! Luckily I like Salmon and other oily fish.

    I actually eat a lot of salmon when our grill is in commission. Right now we have no propane so we haven't been grilling (hub has been using the propane tank to heat the garage).

    We need to get another can or two. I miss grilling.

    Yeah, Salmon taste great when it is grilled. You can marinate it too.

    The mayo recipie is actually a Hellman's recipie. Mayo is just egg and oil which is emulsified, so it is really not that big of a deal to use. The mayo is mixed with parm cheese, and the mixture is nice and gooey and helps to keep the breading stuck to the chicken, and keeps the chicken moist. Here is the full recipie.

    Parmesan Crsuted Chicken

    1/2 cup of Mayo

    1/4 cup of grated Parmesan cheese

    4 boneless chicken breast halves

    1/4n cup of Italian Seasoned bread crumbs

    Combine Mayo & Cheese. Spread on chicken then roll chicken in bread crumbs to cover them in it. Bake @ 425 for 20-25 minutes.

    You can use any kind of breading you like. Panko is very crunchy, and I tend to use that when I make this recipie.

    Thanks for posting this recipe. It is not the recipe I was referring to though. The one I used was just coating pieces of a cut up whole chicken in mayo and then dredging it in seasoned crushed corn flakes and baking in the oven. Probably a variation on yours but it specifically called for corn flakes.

    No, that never made it out of the restaurant! We live close to a city that has several Portuguese bakeries, so we're never far away from replenishing the bread or the rolls!

    The grilled chicken we had last night was so good. I made mashed potatoes and corn to go with it. Since there is a lot of chicken left, we'll probably just have that. Aaron's mom has this fantastic recipe for sour cream potatoes that are just fabulous. I think I'll call her to get that and make them tonight!

    Oooh, I recently bought a brick of instant polenta to try but haven't done anything with it yet. The recipe on the side said to put it in a greased baking pan, cover it with pasta sauce and parmesan cheese and bake at 350ºF for 20 minutes, then slice and serve.
