    We had Dominos the other night.
    My daughter loves Dominos, but that's not pizza to me. I'm not a big pizza fan but I'd rather have pizzeria pizza than that stuff.

    It really is. It's so easy to make too. My friend couldn't figure out why her pot roast always comes out tough. I went over all the steps with her every time the conversation came up. Finally I figured out that she was adding too much water to the pot (covering the whole roast in water). In essence, she was boiling her roast. Not good.

    I think I'm making ravioli tonight - either that or turkey sandwiches and a corn frittata - we had quite a bit of leftover turkey from last night, so....

    - I thought it was easy, too, until the first time I made it. Well, it is - I just forgot to braise the roast before the cooking ... ugh - the meat just tasted terrible. It took me a couple weeks to figure out what I did wrong. I guess I never watched my mom do that part.
    I'm waiting for it to stay cold before I make a pot roast b/c ... well, I don't know why - it just seems like a cold weather meal to me. Although I really want one know b/c you are all talking about it

    My mom used the pressure cooker for pot roast too...I never was scared of it, though. I remember the first time I heard they could explode - I was totally amazed. However, I've still never gotten one!

    My son has been bugging us to take him to Chuck E. Cheese's for a long time now. We've never been there with him (I used to take my daughter when she was a toddler). So, since hubby got home a little early today, we are going to head up there in a bit so my son can get there before he's too old (as he says!)

    Boo! Well, pot roast, I think, tastes better the next day ;-).

    I am going to make some fresh guacamole tonight. I just have to figure out what to have with it. Although, I may just have that (with tortillas, of course).

    Chuck E. Cheese must make all their money on the food. What a gyp.
    We had 3 personal pizzas, 1 salad bar, 1 ham and cheese sandwich and 5 sodas. It came to 42 friggin dollars. Then we had to buy tokens. Well, we got 12 free with the food. But the tokens weren't as big a rip-off...everything only cost 1 token, so they lasted awhile.

    At least the salad bar was all you can eat. It was pretty tasty too.

    Oh. We're having a turkey roast that we saw at Costco and thought we would try for a change. I'm gonna make a pan stuffing with it. I've got an apple pie in the oven right now for our dinner on Tuesday. Apple Dutch Crumb.

    The recipe for stuffing comes from my mom and is really good.

    This is a Bobby Flay recipie from Food Network. I have made this a few times, and it is fantastic! Even my kids ate it...very moist, and excellent for sandwiches the next day (if it lasts that long). I usually tweek recipies, but this one needs no tweeking.

    3 tablespoons olive oil
    1 large zucchini, finely diced
    1 red bell pepper, finely diced
    1 yellow pepper, finely diced
    5 cloves garlic, smashed to a paste with coarse salt
    1/2 teaspoon red pepper flakes, divided
    Salt and freshly ground black pepper
    2 large eggs, lightly beaten
    1 tablespoon finely chopped fresh thyme leaves
    1/4 cup chopped fresh parsley leaves, plus more for garnish
    1/2 pound ground pork
    1/2 pound ground veal
    1 pound ground beef chuck
    1 cup panko (Japanese) bread crumbs
    1/2 cup freshly grated Romano or Parmesan
    1 cup ketchup, divided
    1/4 cup plus 2 tablespoons balsamic vinegar


    Preheat oven to 425 degrees F.

    Heat the oil in a large saute pan over high heat. Add the zucchini, peppers, garlic paste, 1/4 teaspoon red pepper flakes, and salt and pepper, to taste, and cook until almost soft, 5 minutes. Set aside to cool.
    Whisk together the eggs and herbs in a large bowl. Add the meat, bread crumbs, cheese, 1/2 cup of the ketchup, 2 tablespoons of the balsamic vinegar, and the cooled vegetables and mix until just combined. Mold the meatloaf on a baking sheet lined with parchment paper. Whisk together the remaining ketchup, balsamic vinegar, and red pepper flakes in a small bowl. Brush the mixture over the entire loaf. Bake the meatloaf for 1 to 1 1/4 hours. Remove from the oven and let rest for 10 minutes before slicing.

    That does sound yummy - we don't do meatloaf much (we love it, it's a matter of not really being supposed to eat any of the meats in it), but I'm going to print that just in case I want to make it.

    Mine comes out great. Here's what I do:

    2 pounds 85% beef (get it fresh).
    1.5 cups flavored bread crumbs.
    1 cup grated Parmesan/Romano cheese.
    2 eggs.
    1/2 cup Ketchup.
    1 onion, chopped.
    A little salt, oregano and garlic powder, maybe a touch of Rosemary.

    90 minutes at .350 in a deep pyrex dish. Don't drain the oil until you're just ready to serve. If you make a smaller one, take it out earlier or it'll get dry.
    Let the kids play.

    If you really don't like meatloaf, go heavier on the cheese and bread crumbs, and toss in a 3rd egg. The best way to like meatloaf is if it has lots of taste.

    That's pretty much exactly how I make mine too. I don't measure, so I'm not sure about the amounts, but the ingredients...all the same (no rosemary though).

    My mom never made meatloaf with anything but beef. I tried the combination of veal, pork and beef but did not like it.

    I'm home now....Here it is!

    Boston Market Meatloaf

    1 cup tomato sauce
    1 1/2 tablespoons Kraft original barbecue sauce
    1 tablespoon granulated sugar
    1 1/2 pounds ground sirloin (10% fat)
    6 tablespoons all-purpose flour
    3/4 teaspoon salt
    1/2 teaspoon onion powder
    1/4 teaspoon ground black pepper
    dash garlic powder
    1. Preheat oven to 400 degrees.
    2. Combine the tomato sauce, barbecue sauce and sugar in a small saucepan
    over medium heat. Heat the mixture until it begins to bubble, stirring
    often, then remove it from the heat.
    3. In a large bowl, add all but 2 tablespoons of the tomato sauce to the
    meat. Use a large wooden spoon or your hands to work the sauce into the
    meat until it is very well combined.
    4. Combine the remaining ingredients with the ground sirloin-- flour, salt,
    onion powder and ground pepper. Use the wooden spoon or your hands to
    work the spices and flour into the meat.
    5. Load the meat into a loaf pan (preferably a meatloaf pan with two
    sections which allows the fat to drain, but if you don't have one of
    those a regular loaf pan will work). Wrap foil over the pan and
    place it into the oven for 30 minutes.
    6. After 30 minutes, take the meatloaf from the oven, remove the foil and,
    if you aren't using a meatloaf pan, drain the fat.
    7. Using a knife, slice the meatloaf all the way through into 8 slices
    while it is still in the pan. This will help to cook the center of the
    meatloaf. Pour the remaining 2 tablespoons of sauce over the top of
    the meatloaf, in a stream down the center. Don't spread the sauce.
    8. Place the meatloaf back into the oven, uncovered, for 25-30 minutes or
    until it is done. Remove and allow it to cool for a few minutes before
    serving.
    Serves 4.


    Tonight I'm making London Broil...but would much rather be at the stadium eating a sandwich...Last week I had a pastrami on rye there...and enjoyed every morsel!

    Thanks to Nancy, Irascible Yankee Fan, Bub, Karen and Trish for all your recipe's and added thoughts about what to add or not add to a meatloaf. They all look so much better than the recipe I used.

    We had our turkey dinner but with no stuffing. Also had mashed potato's, gravy, corn and some rice-a-roni that Katelynn likes. We then had some Dutch apple pie for desert. We're having hot cocoa right now.

    And dinner was good! I had been gone all day with Ryan and his friends from school. Went to a place called "Boomers." I think that was the name.

    Putt-putt, laser-tag, go-carts, video games ... but the food was so so. I had a burger, fries and drink there.

    My meatloaf: (actually, it's a variation on the devil, Martha Stewart's, recipe )

    4 slices white bread, torn into pieces
    2 1/2 pounds ground round
    1 medium yellow onion, peeled and cut into eighths
    2 cloves garlic
    parsley ( I just sprinkle some in )
    1 large egg
    1 cup ketchup (divided--1/2 cup and 1/2 cup)
    3 teaspoons dried mustard (divided 2 tsp and 1 tsp)
    About a tsp of salt
    About a half tsp of pepper
    2 tablespoons brown sugar

    1. Heat oven to 375. Place bread in the bowl of a food processor fitted with a steel blade; pulse until fine crumbs form. Transfer to a medium bowl and add the ground beef.

    2. Place onion and garlic in the food processor bowl and pulse until fine. Add to meat mixture. Add egg, 1/2 cup ketchup, 2 tsps dry mustard, salt pepper and parsley. Combine thoroughly. Place in a loaf pan. **I don't use a loaf pan myself...I don't like the meatloaf sitting in all that fat. I form a loaf and bake it in a baking pan.

    3. Combine remaining 1/2 cup ketchup, remaining tsp of dry mustard, and the brown sugar in a small bowl. Stir until smooth.

    4. Spread mixture over meatloaf. Place in oven and cook until a meat thermometer inserted in the center reads 160, about 90 minutes. If top gets too dark, cover with foil and continue baking.

    It's really delicious. It's even better the next day on sandwiches.

    Won't be what we're eating today though. 3rd Anniversary for us. Dinner will be out as will be where we will be laying our heads tonight. An evening away is nice.
