Someday I'm going to actually follow a recipe for meatloaf. Or at the very least write it down when I'm making it. Every time I make one it's different.
Meatloaf is something I follow a recipe for just for that reason. I found one I like and I don't want to vary from it, so I follow the recipe. Actually, it's Martha Stewart's mother's recipe, so I might be able to find it online.Originally Posted by yankeebot

I find the same thing. I start out with a recipe, but I either end up adding something or deleting something.Originally Posted by yankeebot

Yes, that's the basic recipe the bf uses but then sometimes he fidgets with it. Last time, with salsa. Blech.Originally Posted by krystl

I never tried the Lipton onion soup mix for meatloaf (sometimes I'll make it for the husband) because I always thought it would be too salty.

Nah, it's really not at all. If you do add it, though, you don't really need to add additonal seasonings.Originally Posted by 4bronxbombers

The meatloaf I make I got off a box of Stovetop stuffing.
You add a bag of stuffing to about 3 lbs of meat, and add in a can of mushroom gravy and another can of water.
I think the recipe is on the mushroom flavored stuffing box.

This is exactly the recipe I use. I omit the carrots and celery though, and I don't bake it in a loaf pan. I use a Pampered Chef baking pan and form the loaf freeform. It doesn't sit in the fat that way. Works great.
My husband goes NUTS over this.

That reminds me of a meatloaf muffins recipe that I got from someone at a Weight Watchers meeting once. 1 lb. lean ground beef, 1 cup hot water, 2 egg whites, a package stove top stuffing mix. Mix it all together and place in 12 cupcake tins. Bake at 350 for about 45 minutes. 2 Weight Watcher points per "muffin."Originally Posted by Mr Coffee
I made roasted lamb last night. Came out delicious.
Fileted open a boneless leg of lamb, filled it with olive oil, dijon, rosemary, thyme, oregano, sherry, and lots of course garlic. Rolled it up tightly and tied it. Topped the outside with dijon and oilive oil. Cooked it at 350 until it hit 133.
Made pan sauce out of Pinot Nior (I was drinking it at the time), a little chicken stock, sherry, thyme, soy sauce, and flour to thicken.
Oddly the garlic in middle turned green, apparently that was because of the acid in the
sherry. No change in taste however. Heres a crappy picture I took on my iPhone.
Calmer than you are.

Wow that sounds delicious Javy, I love lamb.
All this talk of meatloaf has me thinking that's what I'm going to make this evening though...
Thank you, my deary.Originally Posted by Trish
I like the idea of not putting it in a loaf pan and I agree the carrots definitely have to go.

I can't make meatloaf anymore without wrapping it in bacon. And mushrooms, love my mushrooms in meatloaf.

I'm not a ketchup fan and don't like sweetness in my food so I might try this recipe substituting Tomato Sauce for the ketchup and just omit the brown sugar and see how that turns out. I am sure it will still be good for me because I am not used to the sweetness so I don't think I would miss it.Originally Posted by Trish

The brown sugar is just for the glaze on top. I'm sure you could do it without a glaze.

I had a salad that wasn't as appetizing as I hoped it would be (too much lettuce and not enough toppings). Still hungry so I may throw in a frozen pizza.

Sauteed Italian sausage, broccoli, onions, parmesan cheese, mushrooms, potatoes and chicken broth seasoned with some Lawry's and pepper. Soooo good.![]()
