Tradition, I suppose, which as we know the Yanks are all about. That would be my best guess. Players didn't have names on the backs of their jerseys at all when they first started numbering them in 1929, and with the Yanks somehow it must've stuck.
BTW, the Sox only don't have names on their home jerseys. On the road they have names.
