I like medium rare, too. Guess I'm gonna hafta buy a meat grinder. I used to have one that was my mom's (the kind that clamps to the counter) but I don't know what happened to it.
I have this one. Works a bit differently, it actually suctions to the counter/any table. I love it. Very portable, takes up next to nothing in terms of counter space, breaks apart easily so you can clean it well (which is very important), and does a very good job of actually grinding meat.

I don't think Whole Foods is any better. I remember one Thanksgiving that they were selling turkeys after TG that were out there from before. They didn't even reduce the price. I asked them about it and they said they just keep them out until they sell them. That turned me off.

Do you have a Kitchen Aid mixer? If so, I think there is an attachment for meat grinding that you can buy.

No, I don't have a big mixer. I just use the little hand mixer when I need to mix something.

I buy ground beef at Stop and Shop. It tastes good. I've never gotten sick from it. No one in my family has ever gotten sick from it. I don't know anyone that's ever gotten sick from it. I think I'm going to continue living on the edge.

The people most in danger are elderly, young kids and people with compromised immune systems.
I'm not saying I'd willingly eat tainted meat, but I'm sure I've had my share without knowing.

USDA recommendations drive me nuts. I think they say you should cook pork to an internal temperature of 160, but you have like, a 1/10000 chance of picking up trichinosis (higher with free range/wild boar, maybe 1/100), and those parasites die at 137 anyway, and by 145 you've definitely wiped out E. coli and salmonella.
But a lot of people still cook their pork chops to 160, which probably goes up to 165 through carry-over, end result being a completely dried out piece of pork. Sad.
Oh, and I went with a Klondike Bar and a salad for dinner. No way was I cooking.

What bothers me is that I have heard of people dying from tainted hamburger meat. A hamburger is not worth dying over, for sure. What I do is I buy only organic grassfed ground beef so I have a more secure feeling about it because I do have a med-rare hamburger once in awhile and I don't grind the meat myself. I did grind chuck steak once to make chili and it came out delicious.

A lot of restaurants will not cook it for you rare, they are afraid of being sued. I always ask for med-rare and most of the time get it medium, which I hate.

I just read an article where a farm was saying that Whole Foods won't spend the money to get the fresh farm stuff. Most of their stuff comes from the same suppliers as the major supermarkets. They do make a nice display of it though, but for what they charge I would rather go to my local farmer's market. I get farm fresh produce that is organic for much less than it would cost at Whole Foods.

That is one thing I like about California, we do get good produce in the winter time. The selection of fruit is not as good in winter, but vegetables are all good.

Muggs, if you have a smoker, try smoking a hamburger. You don't even need to add much wood. It takes about an hour to cook, but it will be the juiciest burger you ever had, and it will be cooked through. The smoke seals the outside of the burger, so nothing runs out. It's weird to see a cooked burger that hasn't shrunk at all.

I think your science is wrong here. Low temperature cooking allows meat to retain the maximum amount of water content.That is why it's more moist.
I really need to get me a sous vide machine.

You're own ground beef is so so so much better. I don't do it for the health benefits, I do it for the taste. It is a pain in the as* to do, but I think it's worth it.

I've had their grass fed ground beef before, it was pretty good. Grass fed beef is usually brighter red in color.

We have a few of those around too and I will sometimes buy there. There's a place called Hall's Market right down the road and D&D Market (on Franklin Ave - little Italy in Hartford) that have a butcher....and very good meat.

Trader Joe carries grass fed beef and it is much cheaper than Whole Foods so I buy most of my meat at TJ.

Whole Foods meat is not all grass fed. It would have to say grass fed on it. I am sure they carry meat that is not grass fed so check the label next time and see if that is what you are getting. I eat the grass fed meat because it is healthier and, I hope, safer.

Many years ago I got Hepatitis A from eating raw clams. (well, no one was really sure what I got it from but that seemed to be the most likely cause). I can't begin to tell you how sick I was - it was awful.
I love raw shellfish but I haven't eaten any since that horrible experience. I lost that lottery and I'm not looking to lose another one, so I'll let somebody else live on the edge. I learned my lesson the hard way.

What really scares me is when you hear about someone dying from eating a hamburger or a canned food that was contaminated with botulism. I always think, just my luck I will get the one can of tomatoes that is contaminated. :lol: Certain things you just have to take a chance but now you are telling me about the clams, just something else to worry about!

I don't have a Whole Foods very close to me, or any decent natural-ish store that would have meat. We have been going to a local butcher, though, who has nice stuff but I have not actually been there in person to ask him about the cows the meat comes from.
I've been looking at eatwild.com lately and pondering buying directly from a NJ farm.

I have been on those websites and was thinking of doing the same thing. The only problem is you have to buy a whole lot. Some places will split up orders which I am sure costs more. I wish I had a freezer because then there is a place to keep the meat. I haven't checked into that lately. Now you have renewed my interest. They list farms all over the country so I would have to buy mine from a farm in California or other nearby state.

I'm actually going to get some corned beef from the Irish bar near me, which makes excellent corned beef sandwiches, Irish style.
I just get the corned beef only w/the bread on the side, since they give enough to make two sandwiches. Their lettuce & tomato aren't so great, so I prefer making a sandwich from their meat.

I dont drink it as a rule and have noticed they sell it as cooking wine in the grocery store. Is that stuff total carp? I don't think I've ever actually seen marsala wine in a liquor store either. :confused:

Edit: I just looked at my bottle. It's Opici marsala wine and the big bottle was only $8.99.
I guess you could drink it as a dessert wine, but I always just think of it for cooking. Reminds me of sherry kind of, by the smell.

Ah, thanks Karen! Oh man, though...my ex used to get some kind of Opici wine to drink. It was very sweet, in a jug. But I do not think it was marsala.
Now that I think about it...I should try to use up via cooking the likker-in-a-jar we still have from our Tennessee friend. Who will be here this weekend coincidentally. It's a very sweet wine. I think. Kinda Manischewitz Concord Grape-y.

I love chicken marsala too. It's one of my favorite dishes. I think you can get Marsala wine at most food stores too (I think). I love the mushrooms soaked in marsala. :drool:

Definitely don't use cooking wine--the whole point is to reduce the wine down to concentrate the taste, so if you use lousy wine, you get concentrated lousiness. It's worth it to invest in a good bottle--maybe you can get a split instead.
Dinner: Pasta with garlic, tomatoes and basil in a parmesan cream sauce, with a little frizzled pancetta tossed in as well.

We are goin all out and we have steaks and some other stuff......after being on the road with Brendan's travel baseball, we decided we needed some "good food" for once.
I made a new creation the other night. The kids love the chicken breasts coated in the French's fried onions, but I didn't have any of those, so I looked through the pantry and I noticed I had some garlic croutons. I crushed them up, dipped the chicken in flour, egg and then the crouton crumbs and baked it in the oven. Everyone loved them (even Shannen!) We had no leftovers!

The kids love the chicken breasts coated in the French's fried onions, but I didn't have any of those, so I looked through the pantry and I noticed I had some garlic croutons. I've done that many times. No big deal - just ask them to steam them for you when you buy them. It usually takes about 12 minutes or so... so go shopping and stop back after that amount of time and they'll be done. Easy.

Actually no. They wrap them in foil and the lobsters are still quite hot when I get home. (I'm not talking an hour later. I'm talking 15 or 20 minutes)

Actually no. They wrap them in foil and the lobsters are still quite hot when I get home. (I'm not talking an hour later. I'm talking 15 or 20 minutes)

If it was striped bass, as in the kind caught around here...I don't think it's fishy or oily at all. It's a mild white fish. I caught a pretty big one a few years ago out in Raritan Bay.
Acme had buy one/get one free chuck roasts on sale yesterday so I got the two biggest ones they had thinking I would put one in the crock this morning. I didn't get up early enough. :o I guess I'll make it during the week. I put the other one in the freezer. Tonight I think we're making pasta. I'm using another recipe from the side of a box--this time from Philly Cream Cheese. You add it to jarred sauce with ground beef....

For fish, I'd just filet it and use a longer steamer w/butter. I'll cook you up a batch w/bachelor style recipes if you'd like. :P

Probably because Patagonian Toothfish sounds less appetizing.

I deep-fried some Goya beef empanadas today. They were pretty good. After browning them, I finished 'em off in the toaster oven (Trishie & Danielle would be so proud of me). :P
Now I'm just frying some quartered small taters. I don't know if they're fries, pomme frites, Freedom Fries, or wot-evah, but they sure as heck ain't home fries. I'll have to degrease them thar thingies.

Yes, JP caught striped bass and sea bass the last time he went out - they are different but both nice eating fish - not oily at all. JP is cooking them on the grill in foil tents with fresh herbs, lemon, butter and white wine...yum. :drool:
I'm making sauteed spinach and we bought bread to grill as well.

When I was in college, I had a job delivering furniture. I was in someone's house one day, and it smelled like burning hair. When I went into the kitchen, I saw the mother doing the hair of her two daughters with that hot comb thing. She had an electric range, and had a metal comb-- more like a pick-- sitting there on top of the orange-hot burner. I asked what she was doing. She told me 'this is how we get out hair straight.' I told her it didn't seem worth it and she laughed.

I love Bluefish. However, it has to be cooked right after it is caught so it does not have an oily taste yet. It is delicious just broiled with butter or you can slather it with mayo and broil it. I could eat it every night as long as it is fresh caught.

They'll hit anything shiny, so if I had to guess I'd say those folks had some type of jewelry on. The blues follow schools of little baitfish around, and the ones that are injured and swimming erratically reflect the sunlight differently. One time I was fishing for stripers, and wound up with a loop on my reel. To clear it, I cast out as far as I could with just a weight and no bait. I caught a bluefish on the way in on the bare hook.
Sometimes they'll hit the swivel instead of the lure and cut your line.

It also helps to bleed them out right away, so you don't get all that blood congealing in there. You can always cut the deep red part out of the fillet later on, but it's easier to just bleed them out as soon as you get them.

I had duck breast. Came out really nice. Very fresh from someone's farm. Scored it, fat side down on a cast iron pan for 15-20 minutes on medium-low, removing/saving the duck fat along the way. Flipped to meat side down and put in the oven for 5 minutes at 400. Removed it when the temp was 130. Let it sit for 10 minutes and sliced. Very simple.
Some reason had a side of eggplant with it. I don't know why, I just missed eating eggplant and it looked nice. Roasted it. Salt pepper in the oven at 400.
My only regret is I wish I did a balsalmic reduction with the duck.

I hope it comes out OK.
My fingers still smell like garlic...:drool:

So in a major rush this morning I got the crock, sliced an onion, threw in some mushrooms we had, plopped the roast in and topped with a can of tomato sauce, some shiraz/grenache, a bunch of garlic cloves, fresh parsley, and several sprigs each of rosemary, oregano, and thyme from my planter outside. I hope it comes out OK.

Had some shrimp with tomatoes, olives and feta over orzo pasta with some zucchini. Fresh Direct had a special on this gorgeous golden zucchini. It looks good on the plate, but even more important: it tastes great.

Juice, juice and even more juice. Everything from lemonade, pomegranate-blueberry, orange-tangerine, grapefruit, mango, guava, strawberry kiwi. Anything to avoid wilting away in this heat.
I also got some salad stuff like romaine, spinach, avocado, 'shrooms :smokin:, yellow pepper.

They went to my daughter-in-law's sister's house for the weekend. I couldn't compete with the lure of her having a swimming pool. I can't blame them for that. But they're stopping by this evening and we'll probably go out to dinner (depending upon what kind of mood the baby is in)... so that will be a nice change.
The contractor told them he would be in their house another 6 days but he would get their bedroom completed early in the week so they at least could move back home. That sewer back up was a disaster and I learned a lesson from it, though - I called my insurance agent and put a rider in my policy in case anything like that might happen in my home.

Yup. I've been setting up a new business and haven't had too much time to post here. Lots of stuff on Twitter and a few other forums though. :)
Tonight I fired up the old charcoal grill and made New York Strip Steaks. Sauteed onions and sliced French baguettes rounded out the main course. Dessert was ice cream sundaes. Alas, I did not whip the cream; I relied on Reddi-Wip. :( But still tasty.

No, actually I don't. I received nice knives (Shun) for a holiday. Pairing knife, chefs, and 4-5 inch serated knife, but that's all I have, all my other knives are crap. I need to upgrade.

Yeah, I'm not really sure what I was looking at. I bought the "filet" section, but it came with this flap thing, I wasn't sure what it was, so I cut most of it off. Yeah, and then there was the membrane, it's one odd looking fish.
Well the plan was to pan fry it in my cast iron, then drop some butter in the pan along with thyme and garlic and baste it. However, the fish was sticking terribly to the pan, and everytime I tried flipping it, it would remove the crust. So I got fed up after basting and flipping, I just threw it in the oven at 400. I wanted to take the fish out at 145 but I took it out at 152. I then let it rest for about 10-15 minutes.
It still came out tasting good despite the slight overcooking and lack of crust, it just wasn't uniform. So other parts were more cooked (overcooked) than others. I need a stainless steel pan and monkfish knowledge.
My hubby makes fish on the grill a lot. This weekend he did tilapia for our BBQ because it's so mild, even people who don't really like fish, love it. He puts it on foil, over some sliced onions, then sprinkles it with sea salt and salmon seasoning (believe it or not) and tops it with thinly sliced lemons. He folds the foil over so nothing leaks out, but doesn't close the top completely. It was so delicious, he had to make extras. :drool:

We are supplying: burgers, hot dobs, brats, farm stand corn, tuna mac, fruit salad with ginger and basil like the one I made a few weeks ago and was so good. Others have said they are bringing pasta salad, brownies, a cake, bacon/cheese dip, deviled eggs, chips/dip...and who knows what else.
I also bought stuff to make sangria since my one Hong Kong buddy said he would mix it up for us. Sangria. :drool:

It's a variety of tomato that is green with yellow stripes; they can also be yellow with green stripes. I've never eaten one, but they allegedly have a sort of spicy taste.

We haev pizza night every Friday so the pizza stone was a worthwhile investment for us.
We actually like it on the grill better than the oven because the crust comes out better.

Tonight was an old-fashioned grilling dinner.
Started with fresh green leaf lettuce, cucumbers, and Jersey Tomatoes from Von Thun's Farm here in Dayton.
Main course was Rib Eye steak seasoned with Lawry's Seasoned Salt and Seasoned Pepper. Side was corn on the cob, also from Von Thun's. Absolutely delicious!
Wine was Wine by Joe Rose.
Dessert was fresh strawberries with cream.
Great weekend meal!

It was my usual cole slaw (cabbage, carrots, onion, mayo, s&p) but I added cut-up nectarine per a recipe I found. It was very delicious and a nice accompaniment to the BBQ food.

I made fish tonight - more of the striped bass JP caught awhile ago. It was yummy. We had linguini with butter and garlic, California mix vegetables (broccolli, carrots and cauliflower) and salad. A nice meal, if I say so myself.

Mine came out tasty, but would have been better saving it till tomorrow. It was too soft right out of the oven. But it was very good. It had grated provolone, tomatoes, onions, garlic, basil, egg and crushed ritz roasted vegetable crackers (I didn't know I was out of bread crumbs till I was mixing the meat!)
