me too..I'm so picky I should be thin..unfortunately the things I do like aren't what I would exactly call healthy. :o :D

I just yelled at the husband for constantly keeping supplies of double stuffed Oreos in the house. wtffff :argh: I don't need that stuff hanging around the house when I work at home. sigh.

I'm making cranberry/onion soup roast. It's in the crock pot now. I'll cut up and roast some red potatoes coated in olive oil and seasonings later. I'll probably serve the potatoes with sour cream as a dip. :drool:

I'm not into the fruit on meat thingy either (no jokes, Ryan).

Onion soup, I can see w/meat, since I've also added pasta sauce and gravy. I add a few things that comes from the Spanish bodega/convenience delis, since they often cook for large families.

I went to Fatty Cue last night. New Malaysian BBQ place in Williamsburg.

Going to try to replicate this smoked lamb shoulder dish I had. It was really incredible.

I put country ribs in the crock pot this morning before I left for work..6:15 a.m. They cooked on low for over 10 hours...sooooo tender & juicy....yum!~:)

I layer the ribs with slices of onion and bbq sauce...the final touch is 1/2 can or bottle of beer. Any kind will do...tthis a.m. it was Michelob UltraLite...

Try it...it's fool proof.:) And the first thing you smell when you open the door is those delicious ribs...:drool:

That's it, I need another small grill. I should start some grilled eggplant, zucchini and yellow squash f/din-din.

I knew that I'd needed some beer. I kept saying, "Nahhhh". I used the chopped onions thing, the BBQ sauce (I add in some tomato mix from Goya that's designed for cooking), but alas, no brewski.

Oh well, now to get some beer.

Sazon? I've used Sazon before but didn't have any today.One of my bff's is PR..she uses Sazon in just about everything. :)
I forgot to mention, I seasoned the meat overnight with Adobo and garlic powder in a large ziplock bag...stab 'em real good with a fork to get the flaovr in there...then layer with the onion slices & bbq sauce.

Vicki: It is awesome. Try it ...your kids will love it, and so easy.

I think that Sazon is the dry stuff. The Cuban-born lady said that the red Sazon stuff is what they use to make yellow rice. I've never made yellow rice, and wasn't sure if it was food coloring or somehow rice just came yellow.

Yes..Sazon is the dry stuff...I think it is actually safron..which makes the rice yellow and gives a really nice 'sabor'..;)

It's that easy? You buy pork ribs, put onion and bbq sauce and 1/2 can of beer......anything else? I'll try it, maybe this weekend.

Gring, do you put the ribs in the broiler first to crisp the outer edges before you put them in the crock? I usually do that but don't know if it's really necessary.

Gring, it's called Sofrito from Goya, which is a bottled cooking base. It's tomato-based, contains green peppers, onions, cilantro, garlic, in olive oil.

I'm going to put some more stew in the crock this evening. I'll just add some goat meat and some beef or veal.

I made Shepherd's pie the other night for Nicky's birthday (it's his favorite, next to steak, lobster and crab legs, lol)

Shannen requested that I make it with ground chicken instead of beef. I was hesitant because I didn't know if my hub and Nick would like the chicken. It was tasty (I still used the beef gravy or it would have totally changed the taste of the dish) and the chicken was not fatty at all and stayed firm after being browned, unlike ground turkey.

The kids and I liked it very much. Figures, hubby didn't. There isn't one meal that everyone in the family all likes (this was pretty much the only one).

I'm heading to the supermarket to get some stew, onions and peppers for the crock pot (I'll invite Vicki & Ryan fer the boiled meat).

I'm playing pool tonight, so it'll be on a low temperature.

I think it's just a filet, served chilled. I believe it's a newer item there and it's actually a club w/bacon. I normally get the turkey artichoke panini there because I love the caramelize onions on it....:drool:

NEW! Chilled salmon filet, Applewood-smoked bacon, lettuce, tomato and our zesty tomato aioli served on a freshly baked croissant.

Ooh, sounds good. I like oddball stuff like that. I only have one friend who really likes Panera and we don't get together that much. My friend who I bowl with doesn't really like their stuff (and complains it's expensive and all you get is chips with it) and Shannen turned her nose up at pretty much everything on the menu when we went there, so we went somewhere else.

I do that on weekends. I can't do it at work, because a big lunch just makes me feel like a giant bloated ball of gas if I have to sit at a desk the rest of the afternoon.

You all remind me of when my little sister helps/watches my mom cook. She'll ask "How much sugar do you put? Like teaspoon/tablespoon wise?" And my mom just looks @ her like :wtf: and usually says "IDK! I just put however much I feel like we need and go by taste! I don't do recipes! Don't ask me these questions!"

It's fresh. You use fresh veggies and meat. This just has the tortillas and seasoning packet.

But yeah, to feed a larger family it makes more sense to buy the things separate.

I'm definitely not the measuring type either....almost every recipe I make is eyeballed at this point. I like it better that way....it's liberating. :D

I like Panera OK--the soups are good too and it's pretty quick service-wise. I'm just sad they took out the Bear Rock Cafe but it seems like the whole company went out of business. There were only a few locations...some kind of franchisee or what not? Next to the Five Guys is a Panda Express. Blah.

Nearby however is a new Eat At Joe's crab shack or whatever and the klassy Brickhouse Tavern which is pretty much an upscale Hooters. My gf went there with another woman we know last week and wants to take me there now. It's all food for men too and everything has a double-entendre name. :boring:

There is a family in town who treats my daughter very well - like she's their 3rd daughter (they have twins).....so tonight I'm taking them out to the CC we belong to. The opened up the lanai tonight for the first time since last fall so it should be nice. Can't wait for a glass of wine.

Friday night I'm meeting friends in NY to dine at Mario Batali (sp) new restaurant. Can't wait for that either.

Just getting back to this...Sofrito in a JAR? Yeah I've seen it but....hahahahaaa my MIL would have a heart attack if I used Goya Sofrito in a JAR..:eek: No..I make my own. (her recipe of course...

Now that's a real sofrito...:D

btw...Like Vicki, I never measure ingredients..."eyeball it & taste it"..if it needs a lil' more of something, add it.

I'm trying the crock recipe Gring suggested with the bbq sauce, onions and beer. I didn't look back at exactly how it was done, so I did it from memory, but it seemed pretty simple. And I did remember to put the seasoning (don't have Adobo, so I used seasoned salt) on it last night. Smelled delicious when I opened the bag this morning. :)

Just getting back to this...Sofrito in a JAR? Yeah I've seen it but....hahahahaaa my MIL would have a heart attack if I used Goya Sofrito in a JAR..:eek: No..I make my own. (her recipe of course...
Fresh garlic sauteed in EVO...let the garlic cook a lil' first before you add the onion & green pepper. Sautee a little longer before adding a small can of tomato sauce..add the FRESH cilantro last & bring to a slight boil.

Once in awhile, I get off my arse and make real food. The rest of the time, I merely admire those that have the patience to do so.

I've bought garlic cloves before, but never roasted them or peppers. Would they be infinitely better than the roasted gahlic or peppers? You betcha (to quote an infamous source).

Once, I made a boulabaise seafood soup. I followed that recipe EXACTLY as written. That stuff rocked. I should've just kept following those recipes.

I have some meat (smoked turkey, lamb stew, beef short ribs, etc), but I'll need to cook all that stuff special. I don't wish to keep making the same base. I'll have to figure out what I'd like.

I just picked up 1/2 lb of beef bacon, since I have (all cold cuts) beef salami, beef olive loaf, smoked turkey, pastrami & corned beef. I'll have to make a big sammich soon (I'll invite Vicki & Trishie over). We'll call it "Brad's Leaning Pisa Work". :D

I may get a few cloves of gahlic, some EVOO, cilantro (don't get mad if it ain't fresh), and some tomato sauce. I've generally used marinara sauce, but I don't know if you, Trish or Ally would hide under the covers if hearing this.

Right now, it's a bowl of Cap'n Crunch w/skim milk. Ol' school food rocks. :D

Definitely let me know how the roast is - the gingersnap mixture is very intriguing (I love gingersnaps).

The first time I made the short ribs they were homestyle - carrots, potatoes, beef stock, some spices and made a gravy... meh...

Last night I made them kind of asian-y - soy, ginger, honey, onions, ketchup.
They were okay, but I think it's b/c they are fatty - I think I'm more of a pork rib person.

It smells yumm-o. It's a chuck roast since that's what was on sale @ Acme. I got the biggest one they had and it was/is a beaut. I hope it comes out ok...seems like it's not making that much liquid.

We had leftover tilapia that hubby cooked on the grill last night. OMG! It was the best. He made some kind of seasoning mix with butter, etc and put thinly sliced onions on it and wrapped it in foil and grilled it. It was so yummy!

Gingersnap Pot Roast

Ingredients

3 lbs beef chuck roast
1 tablespoon oil
1 cup water
8 gingersnaps, crumbled
2 tablespoons red wine vinegar
1 teaspoon beef bouillon, granules
1/8 teaspoon red pepper, ground
3 medium sweet potatoes, peeled & quartered
3 medium carrots, cut into 1/2-inch pieces or 2 parsnips, cut into 1/2-inch pieces
1 bay leaf

Directions

1Trim fat from roast. Cut if necessary to fit crock-pot.
2In large skillet brown roast on all sides in hot oil.
3In a small bowl combine water, gingersnaps, vinegar, bouillon, and red pepper.
4In crock-pot, place potatoes, carrots or parsnips, and bay leaf. Place meat on top of vegetables.
5Pour gingersnap mixture over meat.
6Cover; cook on low-heat setting for 10-12 hours or high-heat setting for 5-6 hours

Edit: I just noticed this says a 3 lb roast. My cookbook indicates a 2-2.5 lb roast for this recipe. *But* there is a note at the end: if you use a larger crock and use a bigger piece of meat (like I did) then, up the sweet potatoes and carrots to 4 each.

I didn't have the regular stuff, so I just threw in some gravy 'n' beans stuff that I had in the fridge. I'm going to finish it off w/some EVOO, a Spanish onion, some peppers and some gahlic (yes, Big Sis, your li'l Bro's been finally listening :goody: ).

Now then, who here is interested in a nice pasta al la crazy arsed bastard? I'll even figure out how to make the meat-a-ballz-a (I'll "half" the recipe). :O :P

How much are you spending? Check out jcp.com (JC Penney), and PC Richards even has some nice ones. BBB = Bed Bath & Beyond? They should have some very good ones. The convection ones are the way to go. They have high heat, which the galz here don't realize CAN be used to brown meats.

Anywayz ... I found that the toaster ovens do everything well BUT make toast. You use a toaster fer toast, and a toaster oven (the convection ones, not the cheap $30 models) to cook food, since there's no smell. I could cook a lotta bacon in those thingies and nobody would notice.

That's similar to what I just bought Karen. :) If it fits on my counter, I'll keep it. I got something called a Breville? (never heard the name before) but it got good ratings..so did the Kenmore if I remember correctly - they usually do. :)

As to browning meat, what kind of meat? If you put some gravy and other liquids into it, raise the heat, set it to boil, it will be properly cooked, no? Unless yer talking 'bout steaks, which are grilled, I can't see the need to brown something that's being heated in liquid.

Cuisinart is a very good brand, so I'd get that if looking for one.

I need a smaller rotisserie, but the toaster ovens w/convection and roto don't look like they should be having a roto piece. Then again, the roto that I have looks like it should be doing this, but it's a little too big (the standard Ronco unit).

Cuisinart is good, but I think over rated.

My Kenmore toaster/convection oven was $60 and Kenmore has a good name. I don't follow Consumer Reports at all, so I don't know if they rated it.

going to be making blackened catfish tonight, with a rice pilaf. cooking for one, family is going to disney this week, i have to work.

what i'd like to do is cook the fish in the skillet, cast iron, then let the fish rest and cook the rice in with all the cajun spices and bits of fish left over..

problem is that the fish takes much less time to cook, the rice pilaf needs to simmer for a while.

As to browning meat, what kind of meat? If you put some gravy and other liquids into it, raise the heat, set it to boil, it will be properly cooked, no? Unless yer talking 'bout steaks, which are grilled, I can't see the need to brown something that's being heated in liquid.
I do eat a lot of bagels and english muffins..I probably eat that more often for dinner than anything else. :o

If I suck it up and buy the crock pot and try to branch out from my bagel dinners, I thought sometimes you had to brown the meat first? :dunno:

I have been looking for a new convection/toaster oven for awhile. I read a lot of reviews online and the one that got the best reviews was the Cuisinart. There are two Cuisinart models and the one that is more money is the one that got the best reviews. I like the looks of the cheaper one myself, the Cuisinart TOP which has pretty good reviews. BBB has it for $129 plus they always have 20% off coupons available. A friend of mine has that one and likes it and it is much cheaper than the Breville which did not get such great customer reviews on the Macy's website. If you keep the Breville let us know how you like it. Did Consumer Reports give a rating for the Cuisinart?

The b/f was quite surprised when I said how much I spend on a toaster oven. :D I hope it's worth it - i'm going to use it for the first time this weekend. he asked if it goes out to the store to buy the bagel or makes the bread in there for that cost. :D

I don't really know the reason for browning first, but I used to do it when I made ribs or roasts and the last few times, I have not browned the meat. So, you don't really need to, unless a recipe specifically calls for it, I guess.

You really should get one. The crock is one of the easiest ways to make a tasty meal, and so easy.

I know sometimes you do - I have some crockpot recipes that don't call for browning the meat, but a lot of times you do.

oh no problem. :) the calphalon definitley got bad reviews even by Consumer's - the top rated breville was at a 79 and the calphalon was way down at a 58. it did bad in baking and toasting - it only scored okay for broiling. It only got 1 review and it was one star that was titled 'Never again." good move to stay away from that one. :D

I will say that the quality of the pans (12" round pizza pan, baking and broiling pans) seems very high quality but they recommend you don't put them in a dishwasher.

I do like that they have settings for bagels, toast, pizza, cookies, etc. It's large but kind of light weight but it does take up some room...

I didn't see it at the store but I notices there's a smaller one of this smart oven on BBB's website - maybe i would have been better off with that one but I like that you can fit a lot in it and not use the big oven. :)

Sounds like it might be too large for the space I have for it. I think the Cuisinart 60 is my best bet because with the 20% off it will only cost $103. The rating is only slightly lower because some people didn't like the way the toasting knob adjusts. I can live with that. As I said, my friend has it and the toasting is fine even though some people made a complaint about it. The higher priced Cuisinart 155 would be about $143 which isn't bad either but I just don't like the looks of it and the crumb tray has to be removed from the back, forget about that.

Can you tell me, if you have a chance, what the dimensions of the Breville are? I am wondering if it would fit in the space I have. Sometimes in their dimensions they include the handle which is misleading. I know it probably has a bulge in the back for a pizza, right? So that would have to be measured in. I was reading reviews on Amazon.com and most were very good.

I made some Brad Stew in the crockpot: oxtail, smoked turkey wings, veal stew, short ribs. I added some EVOO, chopped gahlic, some bottled gahlic sauce, a Spanish onion, peppers, Soy Vey sauce, Jamaican Pickapeppa sauce, 1/2 can of crushed tomatoes, some adobo, thyme, oregano.

Tastes great so far.

Sure - here are the measurements of the one I have :):

18.5"W x 10.5"H x 12.75' deep. There is a handle on the top that if you measured at the top would take it out to 14.5" deep.

There is no bulge in the back for pizza but you can't really push the unit up against the back of the counter because the plug is super heavy duty and it comes out over an inch -- they probably do that on purpose so it can also be vented all the way around...hope that helps. :)

Thanks! That helps. They give the depth at 14.5 but they don't say what that takes in. The handle doesn't matter but the plug in the back does. If I get it that will take away some of my extra space but I will have to decide if it is worth it.

Yeah I hadn't looked at the recipe at that point. I had it in by 12:30, and it cooked for 6 hours. It was very good.

I'd add salt next time, maybe when I'm browning the meat. It was a bit bland.

I make Oxtail stew. Just like regular beef stew, only I add oxtails, which I coat with flour, salt and pepper and brown in oil first. Sometimes I add crushed tomatoes to the broth, other times I just use beef stock. But I always add carrots, onions, celery, potatoes, turnip, parsnips, parsley and dill.

I love them, but don't by them that often because Nicky could eat them all by himself if I let him. I usually have to have something else with it.

We go to a place that has a special on Tuesday nights. We haven't gone in awhile b/c the bf plays pool but his league is over. Also, if he eats them too much he gets the gout. :o

Anyway...tonight I'm going out with women from work and we are having Ethiopian food, which I have never had before! :eek:

Regarding crab legs...they had an all you can eat special at Red Lobster once and my hubby ate so many, the manager finally cut him off. Apparently they either had a non-posted limit, or they just made it up because of my hubby. :lol:

The surf-n-turf special was a small lobster tail and a petite filet. But the bf noticed on the menu you could order a larger tail (like, 1lb maybe?) and a bigger steak à la carte...so he did. It was kind of amusing how he went about asking the waitress etc. It was basically two full dinners and took up two large plates. And cost $70. :eek: :o

I've been wanting to go again for awhile but have been resisting (trying to be good) then the other day, they wanted to go to Red Robin. They have good burgers/fries too - have you tried them? so much for me being good that day...we have a red robin up here, in Manchester (CT, not ENG). The family loves it.. they actually have really good mozzarella sticks, and my oldest son ALWAYS gets pizza there (now that's bamboozling).

As for why, i dont know, the 2VP we're going with decided it was too out of the way and picked another place that's on the way somewhere on route 2. some old fashioned side-of-the-road quickie burger place.

That doesn't seem right Karen! I wonder how many he had! :D

They used to have this lobster buffet for $39 each on Friday nights at The Manor which is an upscale restaurant in NJ (we have gone to weddings there and had one of my senior formals there)..anyway, it was a really good deal and we saw this woman once that must have had 6 lobsters. They had stopped doing it for awhile shortly after and we wondered if it was because of her. :D

I'll be having a salad this evening because I had Five Guys for lunch.
My first trip there.
I had a little burger with grilled shrooms and onions and 1/2 of a small fry...
It was good - but not worth the calories, tbh. Although I love that they had malt vinegar for the fries - yummy.

They have a whole street dedicated to Ethiopian restaurants near me. I have never had the courage to try it. Let us know what it is like.

It's "Restaurant Week" in New Brunswick, NJ near me, most places are offering prix fixe so that is the menu I ordered off of...I had never been there before but my friends had. It was very good. Most of the food is scooped up with soft bread and eaten by hand. I had this as an appetizer and it was wonderful:

I made sauteed brocolli rabe at hubby's request, but I'm also making a dish with leftover steak, asparagus, mushrooms, onions, pasta and beef broth. I made it a couple of weeks ago and it was soo good. I just winged it, so I hope it comes out just as good this time.

I remember having Ethiopian food a few times. I think that you have to look for it under African restaurants, but I've had it only in the Times Square area around 1990 and near me, but that place closed around 2008.

How much was the all you can eat? I heard one story about the late wrestler, Andre the Giant, who ate 40 lobsters before being told to take a hike. I guess they want people to eat lots of rice & veggies, buy some liquor.

The only Red Lobster near me is in Secaucus, but it has very good food.

Karen, are there Indian restaurants near you, or you've just never been to one? If you're in Manhattan, the local ones are by 28th St & Lexington, but the curry seasoning is very strong and catered to the cab drivers.
