The girl I'm dating and I are making spaghetti with home made meat sauce, garlic bread, and salad. Yum.

Nice - nothing like homemade sauce. :)

We're having sausage (turkey) and peppers tonight. :)

I decided to make a pot roast in the pressure cooker. Still waiting for the pressure to come up. The thing kinda scares me, but the food comes out so good. :)

I think we are having burgers if I buy the ingredients after work. When I was at Stop & Shop before, I saw they had nice pork roasts so I will pick one of those up and attempt my first in the crock pot tomorrow. I plan to do it stuffed w/sauerkraut...maybe on top of onions/rubbed with garlic and mustard too.

I was just browsing around on cooks.com and saw this recipe. Made me think of someone here. :lol: :-whistle-

TATOR TOT HOTDISH
1 lb. hamburger
1/2 onion
1 can mixed vegetables, drained
1 can cream of chicken soup
1/2 c. milk
1/2 c. diced cheese
Brown hamburger and onion. Put in greased casserole. Put vegetables over meat. Mix milk, soup and cheese. Pour over vegetables. Top with tator tots. Bake 1 hour at 350 degrees.

My freakin' pot roast was too dry, so I had to add beef broth. That never happened with this recipe before. WTF. I think it might be because I added the potatoes and carrots in there, which I'd never done before. Usually I let it cook by itself.

I don't add potatoes or carrots to that particular recipe, but I do add them when I make pot roast in the crock other times. I don't know if that would be why it was dry.
Do you mean the meat was dry or there wasn't enough liquid?

Jenn, did you put them in at the beginning? Maybe next time try adding them halfway through? Also, what cut of meat did you use? I had a pot roast come out awful and dry once like that--it was an eye round roast I believe.

We ended up having Peruvian rotisserie chicken last night since the bf forgot we had run out of gas for our grill! :lol: I also made the "dramatically seared" green beans I think I've posted about here before. These beautiful green beans I got on sale last week were at the end of their shelf life!

I have a sauerkraut-stuffed pork roast in the crock. I rubbed w/s&p and Dijon mustard and put it on top of a huge sliced yellow onion and about eight crushed cloves of garlic. I dribbled tiny bit of apple cider vinegar in there too. Hope it comes out OK...since I followed no recipe, obviously. :lol:

Noooo. My 13 year old knows how to use the crockpot. You can do it!

Jeanne, the crock has made me into a cook. :lol: It's practically idiot-proof. I never cooked anything, really, beyond pasta until I got one! You can make really easy, delicious meals with minimum effort. Once I did that a few times I became much more confident in trying other things e.g. preparing fish on the stove/in the oven, making vegetable dishes etc.

Oh, I forgot to mention that I used an electric wok for the first time last night for the beans; one of our friends picked it up at a yard sale. :o I was pretty happy with how it worked!

My supermarket (Shop Rite) has a very good seafood department. I've never been disappointed in what I get there.

well this is promising :D ..I can also follow a recipe - I think that's why I can bake well where everything is exact -- just not a good cook if that makes sense.

I looked at Consumer Reports before and they had some recommendations for types...and amazon's ratings. There was one that had an insert for 2qt, 4qt or 6. Does that make a big difference if most times I'm cooking for 1 or 2 people or can I just get the one size?

The meat wasn't dry at all, just not enough liquid. Once I added the beef broth it was fine, but it tasted more like a regular pot roast and not the cranberry/onion soup variety. It was still really good, though. :)

No, like I told Karen, the roast wasn't dry or awful at all. There just wasn't enough liquid, but it was great once I added the broth.

My mom told me to put the potatoes and carrots in at the beginning, because they usually take longer than meat to cook in the crock. (They were done after the meat.) However, she'd never used this recipe (though when I told her what it was she said it sounded delicious). Next time, I'll either cook them separately or add another can of cranberry sauce.

Yeah, it probably was just because of the potatoes and carrots. The cranberry sauce and juice from the meat probably absorbs right into them.

Personally, I love them. And they're a good test if your microwave is working right - not cooking the middles of them is a good sign the microwave is on its way out (at least that's how it's worked for me twice). :lol:

i can't think of a single food besides pop corn that i would cook in the microwave (the first time) before eating. Heating up leftovers is a different story... but even then i need to do it on the stovetop sometimes.

Elitist.:dunno: I like food, i dont think that's much of a secret. I have an oven, a stove top, a full kitchen of pots and pans spices and sauces.. the microwave is a nice tool for heating stuff up for the kids but i LIKE food. Good food.

Lunch today the wife made spaghetti and meatballs (from scratch).

tonight my wife made a chicken out on the grill, marinated in various asian spices. It was awesome.

The night before last I made myself cajun catfish with rice pilaf - and that was fantastic.

I use the microwave like most people...reheat, defrost, popcorn, baked potatoes, etc.

I haven't tried to really cook in it because I can't be bothered worrying about what cookware is best or what type of thing to cover the food with for best results.

If I make french fries, bagel bites, pizza rolls or anything with bread, it's always the toaster oven or regular oven. I like those things crispy and it's just not the same in the micro.

Chicken Pot Pie tonight. If anyone likes pot pie, this is a real easy recipe. You can also substitute turkey (there might be some leftovers later this week!)

In a large bowl, mix:

1lb. bag of frozen mixed veg
1lb chicken pieces (If I don't have leftover chicken, I use 2 or 3 of the 6-oz. boxes of Hormel or Perdue carved chicken)
1 can of cream of chicken soup
2/3 cup gravy (chicken or turkey)

Pour into a 9x13 pan and top with the following mixture for the crust:

1½ c flour
2 tsp baking soda
stick of melted butter
1½c milk

Bake uncovered at 350ºF for an hour.

But I cook a lot of things that are as good as on the stove - a lot of steamed veggies, a few casseroles that I really like, some indian foods especially curries. I have a number of microwave recipes that I love and they cook faster and use fewer pans which for a working parent is a huge bonus. I would never choose the it over the stove but you said you don't like it because you like good food and I disagree that you can't get good food from the microwave.

Right now I'm going to have a glass of wine - I stood outside and froze my butt off at Matt's football game. I don't know what I was thinking not wearing socks today. Brrrr.....:upset:

Bake in 350 oven for about 25 min or till fish is cooked through.

I just tossed the spinach on the roasting pan. I usually boil it for a few min before but I didn't. Hope it will be ok. I figure since it will be in the oven for 25 min or so it should be ok. thx for the recipe. Hope the rug rats will eat it. :lol:

Yeah, you don't have to cook the spinach first. The chix broth and juices from the fish will cook it. Sometimes I use frozen, so I thaw it out first, but for fresh, just put it in the pan.

Yeah, you don't have to cook the spinach first. The chix broth and juices from the fish will cook it. Sometimes I use frozen, so I thaw it out first, but for fresh, just put it in the pan.

I think it should be ok. The juice from the whole berries should add the needed liquid, but I've never tried it. As long as you put in a good amount, I don't see why it wouldn't be good.

Okay - thanks ladies - I am keeping my fingers crossed - it wasn't like it was all whole cranberries, there was some jellied so I think it'll be okay.

I wasn't even thinking - just ran into the food store and the roasts were half off so I grabbed one and didn't pick up the jellied cran sauce ...

Last year I froze the whole carcass because I didn't have time to make the soup right away and the soup turned out great. I may do that again this year if I am short of time again. If I make it now I will just end up freezing the soup itself so probably better to just freeze the carcass and the gizzards and make it later on.

My sis bought the wrong kind for Thanksgiving by accident...I didn't even know it existed, but it was very good...raspberry cranberry sauce. It had the seeds in it and tasted sweet.

I found a crockpot recipe somewhere for Gingered Beef. I have it cooking now. Smells yummy.

I made a few changes though. It called for hoisin sauce, which I didn't have. So I substituted garlic stir fry sauce. And it said to cook for 10 hours, but I didn't start it till noon, so 6 will have to do. The meat is cut in cubes, so it should be fine.

I don't alter many recipes. All I do is leave something out or substitute things. What I subbed today was one sauce for another, so it would just change the taste a little, if anything.
As for shortening the cooking time, I've cooked many things on the 6 hour setting, so I wasn't too worried about that.

We ended up going to Olive Garden because Bugaboo was crowded. Eh. The one we go to is usually good, but we had to send back the fried calamari and they comped hubby's steak because it was overcooked. I asked the manager why it takes 20 minutes for a medium rare steak to come out and he said because it has to be flash-thawed. Ew, no thanks.

That is why I never go to the Olive Garden. I have had to send back food there a coupe of times. I can make better Italian Food at home. I agree that you should not have to get frozen meat in a restaurant! Too bad your original choice of restaurant didn't pan out.

It was a recipe from the Wegmans' magazine that they send out - I tried to de-Wegmanize it as best I could ;-)...

Escarole & Bean Soup with Sausage
MAKES 8 cups
1 1/2 lbs Italian Pork Sausage - shaped into little baby meatballs
3 Tbsp Olive Oil, divided
8oz Chopped Onions
3 cloves Garlic
14oz Escarole
Salt and pepper to taste
1 carton (32 oz) + 1 1/2 cups Chicken Stock/Broth ( I added more)
1 can (15.5 oz) Cannellini Beans drained
1 cup Ditalini Soup Pasta
1/4 cup finely chopped fresh parsley
2 Tbsp lemon juice

Heat 1 Tbsp oil in large braising pan on MEDIUM. Add sausage balls and cook, turning to brown all sides, 3-4 min.
Remove sausage from pan and set aside. Discard pan drippings.

In a soup pot, add remaining 2 Tbsp basting oil and onions.
Cook, stirring occasionally, 2-3 min, until onions are translucent.
Add garlic; cook, stirring until softened, about 1 min.
Add escarole; cook, stirring occasionally, 1-2 min, until wilted. Season to taste with salt and pepper.

Stir in stock, beans, and browned sausage; heat to boiling on MEDIUM-HIGH.
Reduce heat and simmer 10 min.
Add pasta; simmer 10 min. Add parsley and lemon juice. Season to taste with salt and pepper.

I like their magazine. :) and my sister has made many of the recipes -- a lot of them are on their website as well. I know she's made a lot of the stir fry ones and the no-bake lasagna and the cheese souffle. She said if there's something she doesn't know how to do, there's also usually a link to a video...can you tell she was trying to encourage me to cook? :)

It really does have great recipes - I have ripped many out and popped into my 'book'... this is by far one of my favs.
There is also an eggplant lasagna I want to try - yummm...

Came out very good, cooked using the Ducassi method. Had that deep beefy flavor you get with aged steaks. Definitely going to do it again.

I use those bags, but they aren't necessary.

You have to keep the temp between 34-38 degress, and it has to have good air flow.

I ate leftovers, because I had to just eat anything quickly... and then get to work on my shrimp and calamari salad that I needed to make for tomorrow night.

I'm done... and I can't wait til tomorrow night! (I had to taste-test it and make sure it was ok. And it's FABULOUS! ha... yes, I know self praise stinks, but it IS good.)
