What kind of meat, Sam? Chicken is really good with olive oil and garlic/salt and pepper. You can grill it or broil it, or even pan saute it.
Howsabout stir fry? Pick up a green, red and yellow bell pepper, a small onion and some beef or chicken strips. Quick and reasonably healthy.

I always add some soy sauce for color and flavor. I also thicken it with some corn starch and water.
If you are concerned about the health aspects...get low sodium soy sauce.

All depends on how smart-assed Sam's latest remark was.
I barely ate anything yesterday, so it's my salad today, complete w/some hard-boiled eggs and some more pasta that I'd picked up.
I'm drfrosting then heating up some chicken and rice that I had frozen.
Now then, will you, Billy Jeanne or Karen be my taste tester tonite? I may need to make some tiramisu. :D :P

Went for dinner with my sister at Carrabba's Italian in Novi, Michigan. Very good. Rotini Martino..rotini pasta with grilled chicken, mushrooms & sundried tomatoes in a tomato/cream sauce...I like Carrabbas!!!..:ga-ga:

I guess that's true. Many nights my hubby works late, my son is at a friend's house and/or my daughter is working, so I've been known to have cheese and crackers with wine for dinner. I love that. :)
But having schedules like that make it difficult for me to really cook family meals lately. I can probably say I've cooked 5-8 meals in the month of July.

Oh...they're not going in dead....cooked alive. Cruel I know, but there's no other way. I once heard of sticking a skewer into the head between the eyes or something crazy like that. That's way to scientific and complicated for me to figure out. :lol:

we're going upstate this weekend, which means we'll be smoking some meat (that's what she said).
Last night I had a turkey burger with no bun with hot sauce. A sweet potato that I cut into fries, brushed some olive oil on it and sprinkled some pepper on and baked in the oven, and some peas.

I'm curious, how'd you make all that stuff? Did you fry, steam or bake the trout? You make the crab meat yourself, or buy it already cooked?
I can't eat a dinner w/o starch, so it's either rice or taters. I've never been into cous-cous.
I don't really drink much wine.
I could make a fruit salad, but I generally prefer a green salad, as in lettuce.

Went out to dinner with the in-laws last night to Yonkers Raceway. The races are fun and I even won some $$ on the horses. :)
For dinner, I had potato crusted haddock with a tomato cream sauce. It was very tasty. I never had haddock before.

Two sandwiches. I should've just made 1-1/2, but wot-evah.
Made w/beef bacon, turkey ham, beef tongue, some pepper turkey and pastrami. I should've added chicken cold cuts or chicken breast.
One sandwich was on rye (I got the tongue as a "sandwich w/bread on the side", which is $7 cheaper than by the lb). The other sandwich was the same, but on a small roll.
For a salad, I made some spinach, green leaf w/yellow pepper, cut baby carrots and some avocado.

Most of the ingredients I buy at Wegman's from the fish monger. The Rainbow Trout is filleted at Wegman's and usually fresh off the boat that day and the crab meat they have in the showcase. They hate seeing me come in, though, because I so finicky about the lumps of crab meat I want. :)
The stuffing includes diced onions and celery, Old Bay and mayonnaise.
When I get everything home, it all gets a good rinse. Then I dice up the onions and celery and mix in the crab meat Old Bay and Mayo. That mixture is then tucked into the trout.
When I'm ready to cook it, it goes into an old Visionware (http://ezinearticles.com/?Vision-Cookware---Revolutionary-See-Through-Cookware&id=608213) glass baking dish. I put a little olive oil in the bottom of the dish, the fish on top and drizzle about 2 tablespoons of unsalted butter on top. I season the outside of the trout with sea salt and cracked peppercorns. That goes into a 375 pre-heated oven for about 25 mins. or until the center of the crab meat stuffing is about 165 degrees.

I usually don't put any salt or pepper into the stuffing just because the sea salt that crusts on the outside of the trout is usually enough. But if you plan to use this with another fish (this is the same stuffing I do for the flounder roll-ups and salmon on occasion), you may want to add just a bit for taste.
Oh yeah, tonight:
Pulled pork on Martin's potato rolls with steak fries and julienne carrots.
Wine: Robert Mondavi Reserve Cabernet Sauvignon (http://www.napacabs.com/Robert-Mondavi-2006-Cabernet-Sauvignon-Napa-Valley-P4823.aspx)
Dessert: Pineapple cake with buttercream icing
I would probably try it with sole or something.

Got it.
You may want to be careful with the soles or "flat" fish. I've rolled a few and sometimes they hold together and other times they break apart. :-shrug-:
So I usually saute the sole and serve the side. Usually for "stuffing" fish, I go for the meatier fish like flounder, cod loin, snapper, and of course the trout.

Marinated 30 minutes with Lawrys Garlic Herb..wrapped in aluminum foil and baked for 40 minutes @ 350
Baked potatoes w/ all the fixin's, steamed veggies & Kings Hawiian rolls..
I am NOT a fish person..but OMG..it was delicious.:D If you've never had Walleye...you should.:)

Tilapia might work as long as it's not filleted too thin. I'd probably look for pieces that have a somewhat even cut, especially near the head to middle.

Mr. LDG made an awesome dinner (we had a couple of friends over).
Antipasto, Italian bread, crab cakes, mussels over angel hair with a white cream sauce and strawberry rhubarb pie & ice cream for dessert.
We ordered food from the pizza place at like 8 pm...mussels and fried calamari and wedges.
I hate that we've been eating so late, but hubby's schedule has been crazy.

I've got so many vegetables ready, it's got to be a vegan night. Tomatoes, broccoli, peppers, zucs, lettuce, beets, beans, eggplant. Then, there's a few peaches almost ready and cantelope. I may have to bring a basket to work to off some before it spoils.

Too bad - it sounds delicious. We had whole wheat penne with chicken and broccoli in garlic and oil, and if I say so myself, it came out really good. Tonight is leftover london broil (cold with hot gravy) and homemade mac & cheese (with whole wheat pasta of course). I hope JP likes it - it's kind of a comfort food meal for me because my mom used to make it about every two weeks (every time we'd have a roast for Sunday dinner instead of chicken), but I never make it myself.

Had some family over, so I did lots of cooking tonight. Chilled corn soup, grilled tomatoes, yukon gold potato salad, and pork and veal "Pâté Melts" with emmentaler cheese (w/homemade pickled veggies). And a fresh blueberry tart, just for good measure. At least I didn't have to do the dishes! And it kept me from watching the baseball game, apparently a good thing.
About ready to kick my shoes off and nod off in front of the TV.

Beef tongue, corned beef, pastrami and chicken breast on a roll w/green leaf and tomato.
Green leaf and romaine salad w/avocado, carrots and some red peppers. I should've added some eggs, but wot-evah.
Made the beef roast in the crock with the cranberry sauce and onion soup today. With mashed taters, sauteed asparagus and a salad. It was so good. :)
Just went to the diner tonight and had Spanakopita with a side Greek salad. Opa!

Salad, steak, baked chix, green beans, stuffing, mac & cheese, corn, bbq chix, baked beans, choc cake, bread pudding, sweet potato pie, choc brownie w/ vanilla ice cream.
Very small portions of each...but omg....I LOVE that place..:o

Karen, the only ones remotely "near me" are in Audubon, NJ (sounds like South Joisey, near Ryan) and two near Albany.

Parmesan-Crusted Pork Chops

Ingredients
• 2 large eggs
• 1 cup dried Italian-style bread crumbs
• 3/4 cups freshly grated Parmesan
• 4 (1/2 to 3/4-inch thick) center-cut pork loin chops (each about 10 to 12 ounces)
• Salt and freshly ground black pepper
• 6 tablespoons olive oil
• Lemon wedges, for serving
Directions
Whisk the eggs in a pie plate to blend. Place the bread crumbs in another pie plate. Place the cheese in a third pie plate. Sprinkle the pork chops generously with salt and pepper. Coat the chops completely with the cheese, patting to adhere. Dip the chops into the eggs, then coat completely with the bread crumbs, patting to adhere.
Heat 3 tablespoons of oil in a very large skillet over medium heat. Add pork chops, in batches if necessary, and cook until golden brown and the center reaches 150 degrees, about 6 minutes per side. Transfer the chops to plates and serve with lemon wedges.

The Red Lobster in Secaucus was pretty good. I had to force myself to stop spending after I'd reached $30. They can easily get you, since once I'd ordered some lobster tails, I wanted some seafood soup or something, then a bunch of other stuff. Everything looks so great, and the $8 drink, but all that stuff adds up at a ferocious rate. I can only go there after I've paid the rent.

Cooks...wanted to share this recipe. Made these pork chops last week and they were the best pork chops I ever ate and extremely easy to prepare.
Parmesan-Crusted Pork Chops

Ingredients
• 2 large eggs
• 1 cup dried Italian-style bread crumbs
• 3/4 cups freshly grated Parmesan
• 4 (1/2 to 3/4-inch thick) center-cut pork loin chops (each about 10 to 12 ounces)
• Salt and freshly ground black pepper
• 6 tablespoons olive oil
• Lemon wedges, for serving
Directions
Whisk the eggs in a pie plate to blend. Place the bread crumbs in another pie plate. Place the cheese in a third pie plate. Sprinkle the pork chops generously with salt and pepper. Coat the chops completely with the cheese, patting to adhere. Dip the chops into the eggs, then coat completely with the bread crumbs, patting to adhere.
Heat 3 tablespoons of oil in a very large skillet over medium heat. Add pork chops, in batches if necessary, and cook until golden brown and the center reaches 150 degrees, about 6 minutes per side. Transfer the chops to plates and serve with lemon wedges.

Homemade (as in ground the beef at home and added my own spices) hamburgers with American cheese
Sauteed onions
Sliced vine-ripened tomatoes just picked
Fresh cucumbers and diced tomatoes with olive oil and balsamic vinegar
Wine: Red House Wine
Dessert: Home-made golden yellow cake with vanilla icing
Hamburgers sound great! Especially home made ones!
I have no idea what to make tonight. Hub is not home yet, Shannen is working and Nick is at a friend's house till 7:30. Another late dinner night.

For lunch, we went to a local Italian place that was really good, surprisingly. The owner actually is from Italy. I wanted to ask him how he ended up in Northeast Texas. :lol:
I had manicotti and Aaron had Frutti di Mare. We'll just have the leftovers for dinner.

I am going to pack on few this weekend. Morton's tomorrow night in San Jose to celebrate my son going off to a new college, then Lawry's one night and Spiaggia the next during my stay in Chicago. I can feel the arteries clog just writing this.
Oh yeah, and Chili Verde tonight.
I made a really good artichoke heart frittatta..... plenty of romano cheese, and a wee bit of sauted minced garlic in it, too. Served w/crusty warm Italian bread.
(I know that self-praise stinks, but damn that frittatta came out GREAT!)

Today is the Hubs birthday..but he didn't want to go out...so I picked up Boston Market on the way home...
Tommorrow we'll go to either one of his two favorite restaurants..Little Havana or JB's On The Beach..

They were delicious. A lot of work though.
Next time, I'm going to use my electric skillet. I had to cook them in two batches.
Part of the extra work was my own doing. I pounded the chops so they'd be thinner. They cook better that way, and I'm nervous when it comes to pork so this worked fine.
Not a dietetic way to prepare them, that's for sure, but boy were they yummy.

Well, just as a sammich involves various tihngies, a seafood-fest involves similar other thingies. I'm sure that there's a seafood chili in there too. :D :P
I may just order a clam bake, which has tons of goodies. I'll do that just to keep thingies interesting between us two. :O :P

I should try one also. There are several in Newark, NJ, and the heavily Spanish parts of Hudson County (Union City, North Bergen & West New York) all have these.

Just came back from dinner. JB's On The Beach was a wash-out. Creepy, windy, rainy evening here...and the stinkin' fishy ocean smell was not appealing at all.:(
Across A1A another of our favs.."Whales Rib"..funky little seafood place on the beach, but indoors.
Appetizers were NE Clam Chowder (you can tell its gonna be good when the spoon stuck in the middle of the bowl stands straight UP..:D ) and crabmeat stuffed mushrooms.
Hubs had the fresh dolphin..baked with crabmeat stuffing, black beans & rice & garden salad.
I had my favorite...baked sea scallops augratin (sooo tender & tasty), black beans & rice with the same salad.
BTW..for all you 'foodies'...Whales Rib will be featured on the FoodNetwork's 'Diners,Drive-Ins & Dives' on Monday, August 31st @ 10 p.m..check it out.
It definitely qualifies as a 'dive'... but the food is awesome:)

We're thinking of going to a Brazilian steakhouse (churrascaria) tonight. I've never been to one, and I've heard they're great.
We have a quite a few Brazilian restaurants in Deerfield Beach..love them. Can't go wrong with the churrasco (med-rare, please) w/ chimichurri sauce... YUM!:drool:

Three different dredgings (and the cleanup of the pie pans involved), and like I said, I pound the chops to at least a quarter inch because that's how we like them.
I usually don't fry my chops and cutlets anymore, so I'm just out of practice.
Beleive me, I'm not complaining...they were delish. And my husband and daughter went nuts, so it's all good. It just wasn't something I should have started at 9:00 at night, but that's my own disorganization:lol:

We went to a Brazilian steakhouse called Rafain in Dallas. It was great. The Rafain family started their restaurants in Brazil and now have two in the U.S. (the other in Cincinnati, of all places), the first of which was the Dallas one. Lots of steak cuts...and a great salad bar...Aaron loved the leg of lamb and lamb chops too. :drool: :drool:

Oh I see. I don't use pans for the dredgings....I just throw the stuff on waxed paper...easier clean up!

I use ziploc baggies for dredging, kinda like shake-n-bake!
I had Macaroni Grill's "Simple Salmon" - plain grilled salmon fillet, grilled asparagus, and steamed broccoli.

Steak, sweet potatoes and snap peas. I hope to be in a cooking mood tonight, I haven't been all week - I think because it's so hot. I have cooked all week, I just haven't been happy about it.
