English Muffin pizzas. :D I also made a nice green salad with Italian dressing to go with it. I bought some fresh pineapple this week so that's dessert. It's totally yummy.

I made mashed potatoes for the crew last night and realized I had no butter. Had to borrow a stick from my friend. :wtf:

Hi! Sorry for the delay! I steam the cauliflower and then put some of it in the container that goes with the stick blender, spray butter flavored food spray on it and squish it with the stick blender. Then I just add more and continue like that. Add plenty of pepper, salt to taste, and garlic powder if desired (you can also put shredded cheese on it if you want), and it's really good. I've tried it with butter and margarine too (not together :lol: ), but it doesn't seem to make much difference taste-wise.

I love pot roast. How do you cook yours? I usually cook it in the crock pot, but the other night I used a pressure cooker for the first time.

In fact, tonight is pasta night and I cooked the sauce in the pressure cooker. It actually came out good and only took about 15 - 20 minutes.

Fondue is effing amazing, I have to go eat it at least once every two months (it's a bit pricey for sure!). The melting pot has a "Big Night Out" special for two for $80. Comes with a cheese fondue serving, salad, main course (usually steak, pork, chicken, shrimp, and salmon), and then of course the dessert which is worth the price itself. and they give you A LOT too.

What makes it so good?Beats me. The oven, the sauce, the dough? Whatever it is, its good pizza.

(its thin crust New Haven brick oven style and I like it as much, if not more, than any of the usual New Haven suspects. By the way, Modern is my favorite in New Haven.)

I've got my beef stew cooking in the pressure cooker. 25 minutes to cook.
I made spaghetti sauce in it yesterday. 10 minutes. Tasted like it cooked all day. I'm getting less afraid of it every time I use it.

It didn't come with any directions (it belonged to one of hub's customers and they bought a fancy new one), so I had to google info on using it correctly. I started the heat on high until the pressure built up and the jiggler at the top moved around a lot/made noise, then I turned it down to medium for the rest of the time. It was a little intimidating, but I got through. :lol:

How do you make spaghetti sauce in there? I'd like to try it tomorrow.

I used to be afraid of the pressure cooker. Be safe with it though. You may want to be careful about how high to turn the heat up on it, even at first, and bring the pressure up a little slowly. It can be scary Karen! :)

Thanks, Jenn. I have used it 3 timed now and it's getting a little less scary each time.
The person my hubby got the cooker from, found the owner's manual, so that made me feel better. :)

Damn, sounded like a good breakfast. :P

I made a big salad, but I didn't even get a chance to eat anything. I'm wondering if my brown-bagged salad creations become just stuff I'll end up taking home. Weird.

Romaine, green leaf, red & yellow peppers, broccoli, then some stuff from the local deli. I think I just go overboard with my salads. I haven't even eaten it yet, so that's pretty bad.

I added some chicken from one of the salad places in Manhattan (Speedy Deli @ 31st & Broadway). They're the only ones who still have fresh food @ 9pm, so the $7.99/lb is worth it. I just make sure to only pick up the "add-ons". A salad my size would've been $17-20 easily. They have the same ingredients you get for the "4- or 6-ingredients" salads, except everything is a la carte. I just bought 2 types of chicken and I'm fine.

My pepper turkey, pastrami and corned beef sammich was great. :P

I'm going to try a tilapia recipe I found that calls for spooning a mixture of chopped tomatoes, green olives, red onion, garlic, hot red pepper flakes, EVOO, thyme and lime juice over the fish before baking. I'll try the mashed cauliflower again as the side dish to get rid of the other half.

I don't know what's for dinner tonight. My son is at his friend's house till 7:30 (I'm hoping they feed him some dinner), my daughter is at the movies with her friend, and hub ran to the auto parts store for a part for Shannen's car.
So no talk of dinner just yet.

I might try that tomorrow...I had a pound of tilapia and only used half so I can divide it into (2) 4-oz. portions. It's delish and cooks so fast!

I like a mild fish flavor and I like the texture (and fish is good for you). That's why I like it. :)

When my doctor wanted me to lower my cholesterol and I mentioned eating tilapia as an alternative he chuckled outloud about that choice.

Tonight I had a wedge salad, and a perfectly cooked filet mignon. Also wine and Baileys and a warm chocolate cake/vanilla ice cream dessert. Awesome.

My sister took me, a friend and my nephew out for his birthday.

I nixed the idea of the fish so I put beef, sliced mushrooms and chopped onion in the crockpot with a beef stroganoff dry mix. Sour cream goes in at the end and it'll go over egg noodles. It's been in since 12:30 and is starting to fill the kitchen with a delicious smell!

Who am I kidding...I'll be saving this to give to my daughter and eating a salad with a can of SlimFast tonight. :lol:

Corned beef and cabbage comes out great when cooked in a pressure cooker. After pressure comes up it takes just 45 minutes. We also add some red potatoes and carrots, and you have to quarter the small cabbage so it all fits. Also need about 3-4 cups water. And don't forget the spice pack. :)

That sounds good Jenn. I love corned beef and cabbage but I never think to make it besides St Patty's Day.

Do you put the potatoes, carrots and cabbage in at the beginning, or do you have to cool it down and add it later?

Tonight, hub and I had some cheese, sopressata and crackers. Then Shannen came home with a lot of White Castle burgers from when she and my nephew went earlier, so hub and I ate a few of those. :) That was dinner.

OH, I drove by a 5 Guys place today and it was 2pm and I hadn't eaten lunch so I stopped in. Holy crap, that was a good burger and the fries were awesome too. :drool: I will certainly be going back there again. :)

We just put them in at the beginning with the corned beef so all the flavor is there. Red cabbage is good too and tastes really great - but it turns everything PURPLE! :D
Kind of neat but it doesn't change the flavor. Try it some time.

Loads of leftovers.

I also have leftover escarole and beans that I made Friday night.

The problem with those two dishes is that you can't just make a little.....

Not many places have fresh food at this time. However, it is near the PATH train, and just east of Koreatown. I like their food, even at $8/lb. I only can afford 1/2 lb of it, tho.

Not many places have fresh food at this time. However, it is near the PATH train, and just east of Koreatown. I like their food, even at $8/lb. I only can afford 1/2 lb of it, tho.

I wish I had a better selection of food places near me.

Chocolate Chip Cookies (an old recipe)

1 c. crisco
3/4 c. brown sugar
3/4 c. white sugar
2 eggs, beaten
1 t. soda
1 t. hot h2O (2-3 ok)
2 1/4 c. flour
1 t. salt
2 c. chocolate chips
1 c. chopped walnuts (optional)
1 t. vanilla

Cream crisco. Add sugar; mix well. Add beaten eggs and mix well. Mix soda with and hot h2O. Add salt to flour.
Starting with soda mix, add alternately with flour mix, about 3 times. Add vanilla, chocolate chips and nuts. Drop by spoonfuls onto ungreased cookie sheet. 10-12 min @ 375.

The problem with those two dishes is that you can't just make a little.....

I have a chuck steak defrosting that I was going to just put on the counter top grill. But I looked up recipes for the pizzaiola and found a nice simple one. I will try that tonight with roasted potatoes.

Well the 13 y/o making dinner thing didn't turn out so great. While she was upstairs on her laptop, we were both in the kitchen, one mashing potatoes and the other cooking the chicken and putting the corn in the microwave. We both looked at each other like :wtf: :thatsodd: We finally called her downstairs to help. After dinner was over, she took off while we were both in the kitchen cleaning up. :giveup: I don't think she had a clue what was involved in cooking dinner and cleaning up after 5 people. I'll cut her some slack since she's only 13.

1 large onion, chopped
1 medium green bell pepper, chopped
2 medium ribs celery, chopped (1 cup)
8 oz smoked sausage, sliced
1 can (28oz) diced tomatoes in juice, not drained
3 cloves garlic, chopped
1 tsp dried thyme leaves
1/2 tsp each salt, pepper and hot pepper sauce
12oz peeled, deveined raw medium shrimp
2 Tbsp chopped fresh parsley
Serve with: rice and hot pepper sauce.

1. Mix all ingredients except shrimp and parsley in a 3 1/2-qt or larger slow-cooker. Cover and cook on low 6 to 8 hours until vegetables are done.

2. Stir in shrimp; cover and cook 20 minutes or until done. Stir in parsley; serve over rice. Pass a bottle of pepper sauce at the table.


Per serving: 355cal, 28 g pro, 23 g car, 3 g fiber, 17 g fat (6 g sat fat), 167 mg chol, 1,386 mg sod.

I only use the lite mayo, and I always buy smaller bottles. Mayo doesn't last more than in the fridge once opened, and I should just get the "dijonaisse" thing, since I always end up using both anyway. I also like the creamy horse radish.

Why am I not surprised that you and Jenn are again strongly differing on food? Lemons, anyone? :D

I made my usual of a salad w/romaine and green leaf, some grape tomatoes, carrots (I used one of the bigger ones, not the baby carrots this time). When I got to work, I added some cut up chicken, eggs and bermuda onion from the deli. That extra $5 saves me from keeping too many things in the fridge, and cuts down on preparation time.

I had some Irish corned beef, pastrami and pepper turkey for my sammich (w/romaine and plum tomato), and have some Jamaican chicken soup in my bag.

I sometimes wonder if I'll finish all of this, but at least I won't go hungry. :)

I guess it was....everyone called today to say thank you and tell us they had a great time and the food was superb. Yay! I was nervous as heck having that many people for dinner. I even brought out some of my fine china and silver for the event. :lol: We are usually a pretty informal group so it was nice for a change.

Oh and there's about $200- sitting on the counter - we did a superbowl pool pick last night. :lol: It's killing me that it's sitting there.....:eek: :lol:

Went to a huge Super Bowl party last night. Great buffet and open bar. (I did a 5-mile walk earlier in the day to burn off some extra calories). I was pretty good - no bread, no pasta. Welcome to my world - Monday/Tuesday/Wednesday of every week I have something until Palm Sunday, then it goes to Monday/Wednesday till mid-May, and I believe I have at least one week that I'm out Monday-Thursday! I've heard the summer night classes are four nights a week - yowza! The crockpot is going to explode from overuse! :lol:

Last night, JP had stew (I made it in the crock on Monday, but he wasn't feeling well, so he had it now) and I had a whole wheat wrap with cheese because I didn't feel like stew. Tonight, we're having spaghetti squash with sausage and homemade sauce.

I didn't really have much today. I got tired of the usual salad & sammich routine, sooooooo ... I made a salad (green leaf, romain, chopped carrots, brocolli, Mini-Me tomatoes), grilled up some chicken nuggets, cut up some corned beef and turkey cold cuts from the deli, tossed that into salad.

I had some chicken, so I fried it in my big frying pan (not a deep one, so it wasn't totally immersed). I used yellow corn meal and white flour as breading. I then cooked it more thoroughly for another 30 minutes in the toaster oven, then degreased it by putting it into the storage thingies (Rubbermaid), with thick napkins on the bottom. I got rice & peas from a Jamaican store near me.

I don't think that I could keep eating the same salad & sammich again alll the time.

We had pizza at 4:00 so no one is hungry yet. But I'm planning on making pasta with shrimp and scallops in oil and garlic, even if we don't eat till 8 pm. :lol:

I just made linguine with oil and garlic.

I also have a batch of yellow cupcakes in the oven and a batch of devil's food cupcakes ready to go in. I forgot I volunteered to make cupcakes for someone's birthday at work tomorrow.

I'm my own worst enemy. Did I really need to make two kinds?

Just put a pork roast in the crock. I'm trying it with the onion soup/cranberry sauce. Never used pork for that recipe. Hopefully, it'll be good.
