Mr. LDG and I stopped in at Johnny Rockets for a bite at 10:30 last night after racing around shopping. I had their BLT on wheat toast with a side of fries. Tonight I have no idea what we're doing for dinner, but I hope it's before 10:30!I'm thinking of making BLTs tonight. It'll be that or tacos.

I ended up making marinated Caribbean jerk chicken breasts, sour cream & chive mashed potatoes, and green beans. Pretty good. :)

I can't wait for those BLTs, though. That bacon is staring at me from the fridge. :lol:

Christmas Eve Dinner, part 1 finished about a half hour ago.

I lost count, but I honestly believe I had over 100 mussels. They were small, so they weren't a problem, but I feel accomplished.

I'm waiting on the Lobster, should be 15 minutes or so before it's ready.

Italian Christmas FTW :) .

My cousin made a really yummy ham (complete with pineapple and cherries), with mashed potatoes, fresh green beans, and dinner rolls. She bought a delicious cheesecake for dessert. It was great.

After we ate, we played Pictionary. Another cousin and her family were there, too. :)

We had our traditional Open House last night. The menu was a buffet of:

Chili (made with tenderloin tips) over rice
Beef barley soup
Asparagus & goat cheese tart
Shrimp cocktail
A 3ft. Italian combo sandwich
Shortbread sticks with white chocolate orange and gingerbread dips
Beer bread with spinach & herb and lobster bisque dip
Warm spinach, artichoke, swiss & crabmeat dip stuffed into bite sized phyllo cups
Stuffed mushrooms

I don't know if it's all the sodium in it or what but I feel like crap after eating food like that so I rarely do.

I didn't cook tonight. We have so many leftovers from Christmas Eve, we just picked on that stuff. Mussels, fried calamari, sausage and broccoli rabe, chicken marsala, penne a la vodka, etc.

And we have enough cookies and desserts to make me very fat. :lol:

Might be the MSG. I thought most places stopped using it, but that's usually what people have adverse reactions to.

I mostly washed a big pile of dishes. Lufe is hell when the dishwasher breaks down.

I had some shrimp chop suey and shrimp toast. I should've gotten the quart, instead of the pint.

meh, I'm not a big Chinese food person.My wife told me she ordered $800 of Chinese food for work a couple weeks ago. She has an ample supply of calenders from the Chinese restaurant if anyone needs a 2009 calender.

(that order must have made their night. Who orders $800 worth of Chinese food? And how is that even possible?)

Mr. LDG made the first 3 items, the next 2 came from Stop & Shop, and I did the rest (save for the last two items which were gifts).

As for prep time, not as long as you would think. Dips all got made the night before while the cheesecake was baking.

EDIT to give credit! The stuffed mushrooms were a brought by a guest, too!

Someone gave my wife a panini maker and a panini cookbook. I have feeling I soon will have paninis coming out my wazoo.

I almost added that to my list - that's my latest fav food esp with Italian cold cuts on it. :drool:

I think you can use any kind but I don't actually have the pannini maker - I order the sandwiches a lot though if I'm getting take-out at work. Maybe Muggs can let us know what type of bread is used the most.

The recipe book recommends ciabatta bread but I imagine you can use any good rustic type of bread.

She used regular old Italian bread because that's what she had. It still was good, though.

Sounds better than the shells with cocktail sauce. ;)

I have a countertop grill. I think I'll try to use it as a panini maker. The recipe book says you can make sandwiches in it. I think one difference is that a panini maker closes all the way (more pressure on the bread). But I can try.

How will you make it with the countertop grill? Just put somethin on top of it to flatten it out to make it a panini? Let me know how it comes out. :)

No, the grill has plates on the top and bottom and you close the top on top of the food.

Wow that looks almost exactly like a panini maker - I'm sure you can duplicate the recipes with it. The only diff I can see is the grill parts are a little thicker (I think).

I think a panini maker has a handle that pulls down and locks in place so the thing closes tight. I could be wrong though.

My FIL came over for our usual Sunday pasta dinner, but he decided we should make gnocci, so I helped him with that. Some looked more like cavatelli, but it's all the same anyway. :lol:

Red velvet cake with cream cheese frosting is my favorite cake in the whole world. It was one of the layers of my wedding cake. It's so damned good. :drool: :drool:

The cake was pretty much caca. I don't know what I did wrong...maybe I overbaked it. This was the second "from scratch" recipe that I've tried. Feck it, next time it's me and Betty Crocker.

The frosting I made was delicious though. Very sweet but good. It was a white chocolate cream cheese frosting.

I was in the food store yesterday afternoon for the ingredients for the cake, the vodka sauce and an artichoke dip that I'm going to make to pick on today, but I couldn't think of what I wanted to make for dinner today. I wish I'd thought of the chili.

I probably wouldn't have remembered all the ingredients I needed though.

Does anyone have a good recipe for cranberry muffins?I do. I do. It's for mini-muffins though. I imagine it's fine for full size but I've never tried it.

Cranberry-Orange Muffins

1/2 cup chopped pecans
2 cups all purpose flour
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 (12 ounce) package fresh cranberries
1 cup sugar
1/4 cup butter, softened
1 large egg, lightly beaten
3/4 cup orange juice
24 miniature baking cups
vegetable oil cooking spray

Preheat oven to 350 degrees.

Bake pecans in a single layer in a shallow pan 8-10 minutes or until toasted and fragrant, stirring occasionally.

Whisk together flour, baking powder, and salt.

Pulse cranberries and sugar in a food processor 3-4 times or just until chopped.

Beat butter at medium speed with an electric mixer until creamy. Add eggs, beating until well blended. Gradually add flour mixture alternately with orange juice, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in cranberry mixture and pecans.

Place baking cups in miniature muffin pans; coat with cooking spray. Spoon batter into baking cups, filling completely.

Bake for 25 minutes or until a wooden pick inserted in center of muffin comes out clean. Remove from pans to a wire rack.


Orange Cream Cheese Glaze (optional)

1 (3 ounce) package softened cream cheese
1 tablespoon orange juice
1/4 teaspoon vanilla
1 1/2 cups sifted powdered sugar

Beat one 3 oz. package of softened cream cheese at medium speed until creamy. Add 1 tablespoons orange juice and 1/4 tsp of vanilla; beat until smooth. Gradually add 1 1/2 cup sifted powdered sugar, beating until smooth.

^^^^ Thanks bot.....I just made some and the recipe is very similar. If the batter is any kind of indication, these things are gonna be awesome!! Next time I'll add the pecans though - this recipe I found didn't call for them - must have not been a Southern recipe. :D

You just reminded me of my friend from NC. She always brought the blacked-eyed peas over on NY's day so we'd have luck. :lol: Forgot all about that. She moved back to NC - hated the North and her husband lives in Branford, CT - I'm surprised that so far, they are still "together." :lol:

The frosting I made was delicious though. Very sweet but good. It was a white chocolate cream cheese frosting.Of the three major brands of boxed cake mixes (Betty Crocker, Duncan Hines, and Pillsbury), the only red velvet mix I can find at the grocery store is Duncan Hines. It's so tasty!

Red velvet cake is a southern tradition, and my paternal grandmother was from Texas. She made the best red velvet cake EVER. OMG, it was delicious. My mom has her recipe. She made her own frosting, too, and sprinkled almonds all over the top of the cake. AMAZING. :drool: :drool:

Of the three major brands of boxed cake mixes (Betty Crocker, Duncan Hines, and Pillsbury), the only red velvet mix I can find at the grocery store is Duncan Hines. It's so tasty!

Red velvet cake is a southern tradition, and my paternal grandmother was from Texas. She made the best red velvet cake EVER. OMG, it was delicious. My mom has her recipe. She made her own frosting, too, and sprinkled almonds all over the top of the cake. AMAZING. :drool: :drool:

Actually it is the Duncan Hines now that you mention it.

For the other brands, you can just use a german chocolate or devil's food mix and add a bottle of red food color and some extra cocoa and get the same result.

My sister has a recipe that she's had for years. She makes it every New Year's Eve for my brother in law because it's his birthday and that's his favorite cake. I'll have to get her recipe because hers is always good and moist.

Or I'll just use Duncan:D

Doubling a baking recipe doesn't always work, for some reason. I know when I tried to double a chocolate chip cookie recipe, they didn't come out good, so now I just make 2 seperate batches.

The recipe that Vic gave me had 3 pounds of beef and 3 tablespoons of cocoa. So a tablespoon per pound I guess. She said she uses more because she likes the flavor. I've made this twice and followed the proportions. I loved it. It really mellowed it.

I don't think I have ever made chili. At least I don't remember ever making it.
I like it though, and it doesn't look too difficult.

Rustic Chili - Bon Appetit

6 T. olive oil
3 lbs. lean ground beef
6 garlic cloves, minced
3 c. chopped onion
3 7-oz. cans diced mild green chilies

I put out a bowl of shredded cheese, sour cream and tortilla chips too. yum. I also don't measure any of the ingredients and just eyeball how much to use. It's delicious.

That recipe from Bon Appetite rocks. Now when I make it I don't measure anything and I completely leave out the beans. I can make it in pretty much no time and like Trish says, I really think the cocoa powder gives it an awesome flavor. :drool:

I always use ground turkey in chili - I think it comes out good, but the secret is to season the meat itself well as it's cooking, otherwise it's kind of ugh.

Using sirloin in chili is THE BEST. Cooking it for a few hours makes it perfectly tender, not chewy. Highly recommend.

I've been there a few times, at Lex & 43rd. They have great salads, cheeses, seafood. They also have different sausages. Nice fruits also.

I ran out of time to make my salad, since I had to get some sleep. I just picked up one of those small with the purple and green leaves, then some grap tomatoes, and the rest, I picked up at a local deli.

I had a corned beef sandwich yesterday. Strangely, I make a better sandwich with the same meat than the deli does. Must be their lettuce, since I've never been a fan of iceberg.

I still need to make some of the more complex meals you make. Sounds simple to you, but not me.

That's the one! It is, but they have a pretty extensive menu, everything from $5.95 Recession Special dinners to NY Strip! They're famous for their grilled hotdogs, which come standard with sauerkraut and beanless chili if you don't speak up.

My made-bought salad. I only had some green leaf, broccoli and tomatoes. Didn't even have time fer no sliced carrots. I just picked up some stuff at the deli. There's a very good one that has the typical salad stuff, but you pick out your own, and it's still fresh in the early evening.

Anywayz, I had my pick of goodies, and for much cheaper than what I'd pay for some larger salad with 6+ ingredients or wot-evah.

Swiss works. I like ham and swiss melted together. Use a cheese that you like that that really melts well. I usually go traditional with American cheese but I do add tomato to it.

That would be perfect. Bread crumbs give it a little crunch and lemon is a great compliment to seafood. Sounds great.

I'm having stuffed zucchini (stuffed with the inside of the zucchini, turkey sausage, tomato, a little diced onion and low-fat mozzarella), broccoli, and a salad tonight. Oh, and possibly spaghetti squash - I've never made it but I bought it to try - I'll keep you posted.

When I make a grilled cheese sandwich, I usually use a mix of sharp cheddar and swiss. I then stick the combo dirctly on my frying pan let it melt and brown a little bit...then the cheese gets slightly cripsy on the outside but hot and gooey on the inside. I then put the cheese on the bread, combine it with a tomato and brown each side of the sandwich.

They're delicious!

The tilapia over spinach with onions and tomatoes came out fantastic. The only one who won't eat fish is Shannen. Hub, Nick and I demolished it. :)

I made her ravioli and a side of spinach. She doesn't know what she's missing.

It's a very plain fish. Not a lot of flavor, so you can't use too much seasoning. Sometimes I just cook it on the countertop grill with some salt and pepper, and a little onion powder and garlic powder. Sauteeing it in olive oil is good too.

I baked the salmon with a little olive oil and salt and pepper only. I don't think it was overly fattening either.

The veggies were sauteed in just a little oil and butter, so that seemed ok too.

I'm not sure about the couscous.

Last night after I went to the movies, I treated myself to some gelato from this little hot-spot that's only been around for a few years. The last time I was there was when it had just recently opened. It's still just as popular as ever, if not more so! The gelato and sorbetto are absolutely to-die-for! Take a look at the pictures on their menu. This place is a little bit of heaven. I had the stracciatella, amarena, and roche. It's a good thing that they don't have a shop close to me! :drool: :drool:

My sister taught me a great trick with spinach that's good for you, but still really good tasting. Buy the regular lettuce-esque spinach that comes in a bad or one of those other things at the supermarket. Boil it in water for a couple of minutes and melt some "Smart Balance" spread. Put the spinach in a bowl, mix with the melted spread and add some garlic powder. The sis swears by it. I love it with a bit of whole wheat pasta or some chicken parm (not breaded).

Vicki, BTW, what buffalo sauce do you use? I love, love, love buffalo chicken but I know it's bad for you so I don't make it. I'm trying to find a version that's a bit healthier (though I suppose not frying the chicken and baking or sauteeing it is better.

I'm going to start following this thread for more cooking ideas. The tilapia sounds great though I'd substitute out the tomatoes.

Well, it needs tweaking. Even though I used condensed soup and didn't add water, it still was a bit more watery than I liked.... and even though I cooked the dinner rolls twice as long as recommended, they still were a bit doughie on the bottom.

If I were to try this again I would add some type of thickening agent and I would probably cook the dinner rolls separate and plop them on the top when they were finished.

Oh well, I tried. At least I was only experimenting on myself.

Kim, I use a brand called Frank's Red Hot Buffalon Wing sauce and it's soooooo freakin good. I have an awesome recipe too for an appetizer if you ever need something easy but really tasty. I think you can get this in most grocery stores. If not, I'll bring you a bottle at the next Fans forum party. :D

I never bought zucchini, so we had the spaghetti squash last night. I'd love to know what I did with it - I remember putting it in the bag in the store, so either it fell out of the cart or out of the shopping bag. :lol: The spaghetti squash was yummy, though.

I am now a pressure cooker believer. :)

Hub brought one home and I was ready to put the thing on Ebay because I was always afraid of the one my mom had. But he convinced me to google some info and recipes and I'm glad I did.

I made a pot roast tonight. It made the best tasting gravy I ever had!
I browned the seasoned (salt and pepper) roast first, in oil. Then added Lipton onion soup mix with water and some Gravy Master for color. Also put in 2 sliced onions.
Put the lid on and got the pressure up to speed, then turned down the heat and cooked it for an hour on a medium flame.

Served with mashed potatoes.

My husband and I ate till we were stuffed. :lol:

It didn't come with any directions (it belonged to one of hub's customers and they bought a fancy new one), so I had to google info on using it correctly. I started the heat on high until the pressure built up and the jiggler at the top moved around a lot/made noise, then I turned it down to medium for the rest of the time. It was a little intimidating, but I got through. :lol:

How do you make spaghetti sauce in there? I'd like to try it tomorrow.

Hi! Sorry for the delay! I steam the cauliflower and then put some of it in the container that goes with the stick blender, spray butter flavored food spray on it and squish it with the stick blender. Then I just add more and continue like that. Add plenty of pepper, salt to taste, and garlic powder if desired (you can also put shredded cheese on it if you want), and it's really good. I've tried it with butter and margarine too (not together :lol: ), but it doesn't seem to make much difference taste-wise.
