That's a good idea. But don't deprive yourself. If you need to, up the exercise this week a little. :)

I know, it's just a meal like that makes you want to throw it all away (the diet, that is!) and dive in for 2nds and 3rds. I don't want to fall off the wagon this soon!

I think you can make a healthier meatloaf by using a high percent lean beef (I only use beef for meatloaf anyway), not as much salt, but more spices/onions/garlic, etc for flavor.

I think you can make a healthier meatloaf by using a high percent lean beef (I only use beef for meatloaf anyway), not as much salt, but more spices/onions/garlic, etc for flavor.

I use round. I guess I could try the ground sirloin, but I don't know if it'll be moist enough.

I just don't make it that often, so I guess it's not really a problem. Maybe once a month or so.

I hate meatloaf too.....the poor husband grew up on that and mashed potatoes (another thing I hate) and I hardly ever make that stuff. :(

My hubby is not fond of meatloaf either.
Meatloaf and mashed potaotes is one of my comfort meals. I just love it.

I think the tastiest meatloaf uses the combination of beef-pork-veal, but ground turkey works pretty well now that the tasty version is off limits!

I'm not a fan of gound veal.

I do use a combo of ground pork and ground beef for my swedish meatballs. That's awesome!

I was down by Grand Central today, so I picked up some Shiitake and some other mushrooms. Great for salads, pasta and mebbe a sandwich.

Brad, my wife would have your head for that..... it's farfalle, not bowties. (but I'm with you, I call them bowties too)

That leads me to ask everyone a question, what are your favorite pasta types? I would say mine is Farfalle followed by Gemelli, Penne and thin Linguine

I'm not a huge fan of pasta, but I prefer the stuffed type, like shells and ravioli. And of course lasagna.

It depends on the sauce. With clam sauce I like linguine, with vodka sauce it has to be penne rigati or ziti rigati.

I'll be cooking something tonight, I just don't know what yet. I go to Weight Watchers at 3:45, then I usually go to the food store. I feel the urge to cook something healthy-ish.

Try looking up some recipes on Foodfit.com. They have all the nutrition info for each one and you can search by ingredient plus a lot of other options. It will even make a shopping list for you where you can uncheck the things you don't need then print the list. :)

Try looking up some recipes on Foodfit.com. They have all the nutrition info for each one and you can search by ingredient plus a lot of other options. It will even make a shopping list for you where you can uncheck the things you don't need then print the list. :)

Eh, it's not that important, but I thought foodfit had a feature like that. They have alternate recipes, but it's not searchable.

You can if you have time though! :)
I guess one step is using low fat/skim everything.

I've always wondered how much they actually make off a box of cookies. When my neighborhood kids come around, I give them $10 and tell them to keep their cookies. I figure they get more profit on a $10 donation than they would on a $10 cookie order.

I keep pasta on the top of my kitchen cupboard (or whatever we all have agreed to call those thingies) alongside rice. Why? I don't know. I just do. I have ziti, 3 boxes of linguini, spaghetti, penne. The tri-colored bow ties seemed to have gotten too hard. I mean if I cook it for 20 minutes and it's still not soft like what I'm used to (I generally cook it for 8-10 minutes), then it's been up there too long.

Anyway, in the bottom, I've realized that in addition to the vodka sauce I'd bought from the Italian deli near me, I also have a few jars in the cupboard. Crazy how things stock up when you haven't cooked Italian in awhile.

Now onto the kitchen!!! :gulp::O

Farfalle? Wow, I'll have to check out the box. It's like my saying "Italy" and someone saying "Italia". I'm like ... "Ooooooo-kayyyyyyyyyyy".

My fave pastas for cooking:

spaghetti
penne (preferably the mini penne)
rotini (the corkscrew ones)
farfalle/bow ties

My fave for eating (but I haven't made them successfully):

lasagna (I should just try this over the weekend, since I have a 9x13" pan)
baked ziti (that should be much easier than lasagna)

A few I haven't tried in awhile:

linguini (obviously w/white clam sauce)
angel hair

I remember when I lived in Brooklyn, the Italian place had some "pink sauce" that was creamy. That stuff rocked. I just put some regular spaghetti sauce with heavy cream and that worked. Lazy, but it was nice. They had Arabia or some other sauces. They all had a different flavor, but that place was way too addictive. You could take a nice girl there and have something to talk about.

I wish I could find my oxtail. I had some, then some turkey legs and chicken. My usual "mixed bag of meat" soup that I picked up from some Spanish place that had some multi-meat soup. Anyway, doesn't work f/everyone, but I like it.

I have some dry "bean soup" mix that I'm dying to try. I also have a few dry cans of navy beans, and some bean soups in the can. The ones in the can are already softened, so no need to boil them endlessly. Anyway, beans and meat seem to go well together for me.

I made some seafood soup last week (shrimp, mussels, crabs legs, mixed seafood mix, etc). I got the fishy taste by adding 1/2 of a fish. Anyway, tasted good. My fault was that I'd added the noodles too early, so those went soggy. I'll have to remember that the next time.

I was a cookie mom for years so I should remember this. They get a pretty large percentage of the sale price, which here is still $3.50.

My daughter is in girl scouts also, for a $4 box, the troop makes .65 cents. All that work and they get so little.

Yeah, I was a GS leader for a few years when my daughter was young. I remember the troop making very little, so muggs is better off giving the money to the troop so they can use it to save up for whatever they are fundraising for.

What kind of recipes are you looking for? I usually just look them up online or use the book my crockpot came with. Sometimes I wing it.

The key is not to add too much liquid because the liquid doubles in the crock pot. And if you are making something like chicken (with the bone), ribs or a roast, is to sear them in a pan or in the oven first.

Well I don't know what I'm thinking then...I could have sworn they got a larger percentage.

We always were able to throw a great end of the year party/trip because of our earnings.

I have a lot of good crockpot recipes but nothing for pierogis - I can ask my mom because she lives in a Polish area and maybe someone knows how to make them. I just use the frozen ones, which I love. I love gnocchi too, but I am avoiding all of the above for awhile (see weight loss club post, ha ha).

I have a backlog of food this week, so I'm not sure what we're eating - either hot turkey sandwiches (JP made a roasted turkey breast Sunday that was delicious), or pasta primavera, which I bought veggies for so I really have to make it, plus I've been craving it, or sloppy joes, which I have the meat defrosted for, so again, they have to be made. The problem is that we're probably not eating at home Saturday and then we're definitely away Sunday/Monday (and possibly Saturday night too). I'm not sure what to do - I could do the sloppy joes and freeze them for next week and then eat the other two, or I could bring the sliced fresh turkey upstate to my brother-in-law's house. We'll see.

Oh...I don't know how to make pierogies. I just buy them frozen.

I am making pasta with brocolli, garlic and olive oil tonight. That's really easy.
Just sautee the brocolli in olive oil until tender, then add the chopped garlic. Toss over the cooked pasta. Done! :)

Usually ziti or rigatoni. I like when the little pieces of garlic get stuck inside the pasta!

We had homemade veggie and shredded beef. Mom in law made it. My husband is a garlic fiend so that souonds like something he would love.

It has been 30 degrees here at night with snow flurries by my house! Brrr....

Yikes! My best friend lives in Orange Cty and she told me about the snow flurries. I just started laughing b/c she is from the East coast and she has totally acclimated to the warm climate and she has been FREEZING!!

Tonight I am making a Filipino dish - Chix Adobo. One of my friends growing up is Filipino and we were chatting about it last night and I remember it being really good so it's in the slow cooker now....

Tonight is one the "treat nights" at my house (a night where my wife is allowed to eat a small bit of some food that pregnant women need to eat in moderation).

So, it will be cedar-plank salmon (slamon roasted on the grill over a water-soaked cedar plank). So good.... She won't get to have any wine though, so I guess I'll have to cover her end on that one... :D

It's really, really good, Krystl. I've done it with salmon, lobster tails, steak-kabobs, all kinds of things.

But, save yourself some $$ - don't buy the yuppified, fancy-schmancy, cedar planks at some food store. Go to a hardware store and pick out an untreated cedar board (an inch thick or more is best) and ask them to saw it down into one foot sections (or do that yourself at home). It costs a fraction of the price and works a lot better.

Here's my cedar plank salmon filet recipe (its the best thing I do on a cedar board):

Soak one or two cedar boards in warm water in the tub or a bucket (you'll need a rock or a can to hold it down) for a good hour or more before you grill (it will make your bathroom smell good, too).

Marinade:

-Juice lemons (I would say at least three for each standard grocery store cut of salmon filet). Add a lot of salt to the lemon juice so that it saturates the juice. Let the salt settle out, and then decant the juice into a large container.

-Add extra virgin olive oil (about one-half the amount of the lemon juice).

-Finely dice fresh parsely (about a whole bundle from the store) & add to the marinade.

-Crush as much garlic as you like and add to the marinade. Whisk together so that the lemon juice and oil combine, mixing the garlic and parsely along with it.

-Lay the salmon filets in skin-side down. Marinade for at least 30 minutes (an hour is even better).

Grilling:

-Once the boards are soaked thoroughly (an hour or more), place them on the grill racks over high heat.

-Place the filets on top of the cedar skin-side down. Close the lid, and let the smoke and heat cook the salmon to your liking.

-BUT: don't leave the grill. Keep a water spritzer handy to knock down the flames. The board will catch fire and toast your fish if left unattended, so you need to open the lid every now and then and spritz down the flames. You might also want to have a fire extinguisher handy in case things get really bad. I also "baste" the salmon with remaining marinade after putting down the flames - adds nice flavor to the exterior crust.

-You'll know the salmon is done when it has a nice orange-tan crust on the surface of the skin.

This is hands-down my favorite way to eat salmon. I guarantee you it is better than anything you've had in a restaurant.

Soak one or two cedar boards in warm water in the tub or a bucket (you'll need a rock or a can to hold it down) for a good hour or more before you grill (it will make your bathroom smell good, too).

Marinade:

-Juice lemons (I would say at least three for each standard grocery store cut of salmon filet). Add a lot of salt to the lemon juice so that it saturates the juice. Let the salt settle out, and then decant the juice into a large container.

-Add extra virgin olive oil (about one-half the amount of the lemon juice).

-Finely dice fresh parsely (about a whole bundle from the store) & add to the marinade.

-Crush as much garlic as you like and add to the marinade. Whisk together so that the lemon juic and oil combine, mixing the garlic and parsely along with it.

-Lay the salmon filets in skin-side down. Marinade for at least 30 minutes (an hour is even better).

Grilling:

-Once the boards are soaked thoroughly (an hour or more), place them on the grill racks over high heat.

-Place the filets on top of the cedar skin-side down. Close the lid, and let the smoke and heat cook the salmon to your liking.

-BUT: don't leave the grill. Keep a water spritzer handy to knock down the flames. The board will catch fire and taost your fish, so you need to open the lid every now and then and spritz down the flames. You might also want to have a fire extinguisher handy in case things get really bad.

-You'll know the salmon is done when it has a nice orange-tan crust on the skin.

This is hands-down my favorite way to eat salmon. I guarantee you it is better than anything you've had in a restaurant.

I wish I liked Sun Chips because they're better for you than other chips, but I'm just not a big fan. My favorite chips are actually plain tortilla chips (homemade are best - cut up corn tortillas and fry them at home...Mmmm!) with some homemade salsa. I've also recently discovered new Tostitos Multigrain chips and they are REALLY good! I figure maybe they're a bit healthier than regular Tostitos because of the whole "Multigrain" thing. That's what I tell myself, anyway. :lol:

Speaking of that, I should go get some chips for my taco salad! I just realized I don't have any! :eek:

I have found this delicious salsa mix at the grocery store. All I have to do is chop up some fresh tomatoes - my favorite fruit in the world! - and mix it in. I was all excited when I was at the store last night and the vine ripe tomatoes were $1/lb.

Isn't that how they make corn chips at the Mexican restaurants? Fried pieces of the 6" round corn tortilla thing?

I may end up frying some chicken legs shortly. I need to finish defrosting the one I took out of the freezer yesterday, but I'll do the "skin off" variety. I'll have to get some buttermilk for this. Why they don't sell buttermilk in smaller sizes than a quart, I don't know. I never use more than a pint, if that.

Today's when I do the chicken & goat stew.

We're pretty well paired, except she keeps trying to put an Italian spin on my Irish family recipes.

The stew came out fine. However, I'll have to remember next time to undercook it a bit, so that when it's reheated, it won't be slightly overcooked. Still tasty tho, and the beans were fine.

I still have a few taters which were boiled and need to be baked. The whole time, one of the crazy mysteries was how baked taters were made. You simply boil them at low temperature, then bake them later on. Man, these things drive me nuts, especially since I almost never make taters. Hey, I'm not Irish!!! :gulp::O

I make ground turkey meatloaf when Stop & Shop has the turkey on sale (usually a "buy 1-get 1 free" deal) and it comes out great. You just have to be prepared for a much lighter colored meatloaf. It almost looks undercooked when it comes out of the oven if you're accustomed to using beef.

Every single time I've been to a place that sold baked taters, be it Wendy's (theirs are pretty good, but the sour cream & chives are a little cheesy), I keep wondering. Finally when I used the lowest setting on the oven to keep them warm w/o boiling them until their splitting apart, I figured that they only needed oven time.

This boiled meat is easy, but unless I keep reminding myself to undercook it, it's like a waste, especially when I use a large pot.

Anyway, the food was tasty. There's just a bit too much BBQ sauce left around, but I'll deal with it.

I still try just grilling steaks and such. I've got a few grills, so that may end up more to my liking.

Now that I've got all that rice, I may as well make some more.

The only way I'll eat a baked potato is if the skin is really crisp. I don't like the potato guts so I just eat the skin. I nuke the potato for like 5 min and then put it in the over at like 400 or 500. It's awesome and crunchy. I'm weird.

Well, the turkey meatloaf got mixed reviews. It had fresh chopped parsley and chopped sundried tomatoes in it, so needless to say, my picky daughter wouldn't eat it. My son and I ate it (but I like my regular meatloaf recipe) and my hubby, who hates meatloaf, said he loved it. He's looking forward to me making it again. :lol: He didn't know if it was the tomatoes or the turkey, but it was the first time he ate meatloaf and LIKED it. :)
The mashed potatoes were made with chicken broth instead of milk and 2 Tbs low fat sour cream instead of the usual whole stick of butter I add. Everyone liked them.

And I'm with Trish...I love potatoes! :D (Except for french fries...not a big fan)

I guess they would cook faster by boiling them first, but I've never made baked potatoes that way. They do take about an hour in a good hot oven, but I just nuke them now. So much easier. Just poke some fork holes onthe skin and nuke for a couple minutes.
I used the smaller ones that you get in a 5-lb bag. The ones they sell at the fast food joints are larger.

I've got 3 smaller ones, so I'll bake these. I need some sour cream. Shows that I'm not Irish in that I have nothing for potatoes. I still have to bake the sweet potatoes. Knowing me, I'll boil them both then bake them both. Weird sense of taste, but I usually mix everything together anyway. :P

I'm a potato whore. Any kind, any time. :lol:

I'm assuming since it's roasted, you have to cook it in the oven for a bit before using the slow cooker?

Yum! One of my friends made this the other night. I don't like mushrooms so I picked around them but it was really good. The mushroom taste was still there, I think it's the texture I don't like. My friend got to eat all my mushroom so he was happy!

I love mushrooms and the recipe called for 2 lbs, which I only used one 14 oz package. I can't imagine using 2 lbs. The ones I used took up most of the broth as it is.

I like mushrooms because of the texture. :)

I don't have much expierence with the sweets. I figured there might be some funky recipes out there that are a little different,fun to do and good for groups.
So now till Super Bowl weekend I am going to try out a bunch of reicpes so I will be ready come the big day.

I figured you moms out there would have a few recipes under the belt.

Check out the other recipes on those sites then, if you're looking for something a little different. They may even have "theme" sections that would be good to serve at a Super Bowl party. The Land O'Lakes site in particular has some very good recipes. I've made several of those cookies.

But you really can't go wrong with those Chocolate Chips. They are always a crowd favorite here.

Just finished eating. The tilapia was delicious over the spinach! I tweeked the recipe a bit from the original I found.

There's a recipe on foodfit for Fettuccine with Swiss Chard, Garlic and Parmesan Cheese. I don't worry about the sodium being a little high because I can control that, but because it's pasta, the carbs are high. I never really worried about carbs before as we don't eat a lot of pasta (we'd eat it every night if hubby had his way!).

I've never had swiss chard. What does it taste like?

I've heard the Gasho across the river is nice but I haven't been there. My parents used to go there a lot. The gardens are beautiful I've heard. The one in Hawthorne just isn't the same as it used to be. It smells bad and the chefs aren't even Japanese anymore.

Samurai is pretty good. We have been there 2 or 3 times.

I had fish everyday in FLA.... grouper, dolphin, tuna. But tonight I have a hankering for a big piece of artery clogging red meat.

EDIT: By the way, dolphin fish as in mahi mahi, not dolphin the mammal as in Flipper.

Not a diet night tonight: filet mignon with thyme-sage garlic butter sauce, sauted button and portabella mushrooms with onions, and potato salad (my wife made the salad).

And now I've got my mom's cinnamon rolls in the oven - I'll add cream cheese frosting when they're done.
