Lemon Chicken, Sugar Snap Peas and Mashed Potatoes. My daughter's leaving for school on Saturday so she's getting all her favorites all week long.

Sounds nice. I just had a lemon-garlic pork loin roast in my hand from the freezer. Was thinking about having it. What other favorites are in store for your daughter this week?

All WOW! Daughter is gonna be missing home for sure. Gilroy is the garlic capital in America ... maybe the world. Tons of Artichokes around Monterey. Do you know what city is considered the Artichoke capital? Some things I really really miss about California ... :(

Refried beans, sour cream, guacamole, salsa, lettuce, tomato, shredded cheese and olives. You can pretty much add or take away anything you don't like. I was gonna put some seasoned ground beef on it but my mom doesn't eat beef so we left it out.

Po'k chops and apple sauce.

I found some lamb sausage in the back of the icebox. I'm cooking that now. I also have some Spanish Arroy con Pollo (bought).

I should be having some more of their chicken soup. Too much bird? Could be dedicated to the Jays and Orioles duo.

It's not really a white sauce, it's pizza with ricotta and mozzarella. And garlic, oil and basil, of course.

The place I go uses mozz, olive oil, basil but no ricotta. I ask for very little garlic on it. It's delicious pizza! I love it.

I had a crockpot recipe that called for a can of cola, but not bbq sauce. It's probably tasty because root beer is sweet.

We ordered Chinese last night.

I found some interesting recipes on foodfit.com, so if I can get to the store today, I'm going to make something new.

One of the recipes was a red pepper slaw. Sounds yummy. :)

Went to Applebees for appetizers last night. We shared a plate of nachos and an appetizer sampler.

I complained about their nacho chips though. I don't ever remember them being so oily and hard to chew. The waitress said they're always fried. Yuck.

I used the last of my hero bread (some wide loaf, not the Italian bread kind). My lettuce was on its last leg, so I used what little was good. The last tomato was soft, so I tossed it. Still, the turkey bacon, carrots and a can of corn were still good. I picked up some additions at the local deli.

I had some eggs and home fries for breakfast. Their turkey sausage was OK. I put some juice I'd bought into a vacuum thermos jug. I may have a little Chinese or Japanese from their lunch menu later on.

The first one seems more like duck sauce I'm used to, except for the chopped fruit like apples, etc. I always thought of duck sauce as more of an apricot thing (that recipe does call for apricot preserves).

Who knows what goes into stuff? When some lady at a local health foods place made apple juice for me and mixed in a bunch of other fruit, I couldn't figure why she didn't just use a juicer.

The first one has dry mustard in it. Yeah, regular duck sauce does look apricot-based, but then again, it looks like some orange marmalade could be in it also (but lacking any tartness).

I would just go to some neighboring state and raid some Asian supermarket, so I'd have all of the packets or some dispenser thing so that I could just pour my own.

However, if the Chinese food sucks down there, then she may have to take up Chinese cooking and make her own. Now if they don't have good pizza, I'd suggest they pack up and move. :eek:

My shift is pretty long (13 hrs). I brought a sammich and a salad. We've ordered some Indian food (curry chicken w/basmati rice). Now I'll have to wait before the eating the sammich and salad. I just wish I'd had some mushrooms.

At least I only spent $20 on food today, as the rest was brought from home. I should have lots left over when I get home. I'm saving the home fries from this AM and the gravy from the chicken.

Only took home 2 cheeseburgers and a couple pieces of chicken. There was a lot of food leftover but I didn't want too much. My kids aren't big on leftovers.

Yeah, well there's this expensive Asian deli that's open 24/7, and they get boatloads of tourists there. They've got great food, but if you fill up a small plastic thing to the top, it's $10. So last Sunday, I bought a large one for breakfast, another for lunch, and then I ordered some Japanese food in later on. $30.

So far, I've barely spent $10. Some eggs 'n' home fries + cherry danish was under $5. A cinnamon bagel w/cream cheese was under $2. Then I added stuff to make sure I was full, and that was just a little more egg, then some corned beef hash (which looked identical to the one I'd opened up in a cane from Libby's), and a biscuit. That was another $5.

I didn't touch my salad yesterday, so I kept it in the fridge. If it's still good, I'm in good shape.

I should have a blueberry yogurt in honor of us kicking the arses of our Blue Jays bird-brained feathered friends. Of course, if they kick ours, I'll end up feelin' blue.

We need a win and I need a drink!!! :gulp::O :P

I don't know if it was Bugs Bunny, the Flintstones or what, but I remember some popular 'toon some time ago (20 years, mebbe?) where one of the guys orders a fancy steak (porterhouse, t-bone, etc), then puts ketchup on it. The enraged chef all but cemented his foot up his hind quarters.

Now why is ketchup also called catsup? How could the most famous condiment have two names? Kinda like Hannukah and Chanukah.

Actually Catsup is the British or The Queens english of saying it......guess ketchup is the trailer trash version.....

Considering that it's pronounced "catch-up", then both seem a might funny. Who would pronounce something as "cats-up" or "ketch-up"?

USA English is a bastardization of UK English anywayz, sooooo ... considering there's nothing fancy about ketchup in the first place (better ingredients, not a better name may help, as in "BBQ Sauce"), I'll take the trailer park version of this, and I'll even bring around the RV filled with condiments, too.

And SNL style cheeseburgers for all. :)

Considering that it's pronounced "catch-up", then both seem a might funny. Who would pronounce something as "cats-up" or "ketch-up"?

USA English is a bastardization of UK English anywayz, sooooo ... considering there's nothing fancy about ketchup in the first place (better ingredients, not a better name may help, as in "BBQ Sauce"), I'll take the trailer park version of this, and I'll even bring around the RV filled with condiments, too.

And SNL style cheeseburgers for all. :)

I remember someone had bought a bunch of candy from some nostalgia company. Bazooka bubble gum, Charleston Chews, Now or Laters, etc. They had tihs also, but I couldn't remember the name. Now I'll have to go google it.

I've got some. I had forgot about a box being put up on a shelf. Had bought the root beer flavored ones at a Cracker Barrel awhile back. Told Katelynn what they were and she wanted to try what daddy drank 100 years ago. Got the cold water and she dropped the fizzie in. She drank almost all of it - with me trying just a sip. YUK! But Katelynn said she liked it. :)

I also think that Cracker Barrel had those little Nik-L-Nips for sale.

What a gorgeous day (again!!) I'm firing up the BBQ later for burgers, dogs, drumsticks and country-style ribs.

I also made potato salad with a smoky ranch dressing, cheddar cheese, bacon, celery and red peppers, then there's the corn on the cob (something about Connecticut corn - it's incredibly sweet), pasta salad and watermelon.

Hope everyone has an enjoyable Labor Day! :)

Exactly. Don't want to dry the steak out. My Jenn used to tell me that she didn't care for beef. She always had it cooked medium-well. Said she wouldn't like the pink. I got her to try it ... in the dark. (Boy ... that sounds kind of kinky ... as will the rest, maybe for someone like a Sam :eek: ;) ) Anyway's, she said the steak I gave her was the best beef she ever tasted. Said she could really taste it and it was so juicy. Lights came on, and I showed her a medium rare steak. She went :eek: ... and never turned back to a well-done steak again. Accepting for ground beef of course. :)

Yeah, same here. However, I need to remember to stick the chickens back into the freezer when I'm not going to cook them for awhile. I hate letting them sit in the bag for awhile. Could be bad planning also. :o :(

Baked/broiled chicken. I just covered some chicken legs and wings with some foil on the top of the toaster oven, used the "broil" setting. The fat on the bottom (I cook bacon in there, so it piles up a little) started getting hot, but it was OK.

After about 50 minutes, it seemed like it was done. It was getting too heated before I covered it with the foil. It was cooked thoroughly, browned nicely. Looked like I'd cooked it in the oven.

Last night I cooked a steak on the grill, and sauteed some butternut squash in some olive oil with salt and pepper on the grill as well (in a griddle pan). It was so good. :drool:

Today, I'm making home made BBQ sauce and grilling ribs. :)

I figured I'd try my Ronco thingy again for chicken. I added foil to the chicken, then put it in there for 45 minutes. I looked like it was getting cooked, so I took off the foil and let it go another 45 minutes. It wasn't fully done, but it sure looked very nice. My previous efforts resulted in the chicken looking slightly underdone. I just put the chicken into the fridge, and I'll stick it into the toaster oven to finish it off.

I made a nice salad today, just to see how it would come out. Green leaf, romaine, I coked some eggplant (I have a grilled pan with low grills, and it's for use on veggies or cold cuts, not burgers or anything requiring lots of heat).

I grilled some red peppers also, and some carrots. I think I'll nuke the carrots next time instead. Either that or use longer strips for grilling, instead of the pieces sliced small.

Anywayz, when the eggplant gets a bit moist from the oil, it tastes really nice. I'll have to try EVOO instead of my regular corn-canola combo that I've been working with lately.

My sammich included pepper turkey, pastrami and corned beef (the usual).

We splurged last night and bought steaks at Whole Foods. NY Strip for the hub and a filet for me ($26- gulp - just for my piece).........I'm not kidding when I tell you cutting it was like taking a dull knife and cutting through soft butter. It was that tender. Prob the best piece of meat I've had in a long time (yeah, I know POOC). We don't get meat there that often but it's absolutely the best unless you're going to a fabulous steak house restaurant IMO.

I'm at work, so I just pick up some stuff along the way. I can't afford these "meals" people charge. Once the restaurants see "meat or poultry", they want money. I just figured that baked chicken was easier to prepare than me worrying about some sandwich w/lettuce, tomato, mayo, mustard.

I seasoned the chicken, but not too much. I don't usually take potatoes with me to work. I only use peppers for salads, but the onions and garlic sound good.

Now I'm wondering why "potato" becomes "potatoes" when pluralized. It's like Dan Quayle was half-right the whole time. :eek:

If I were grilling something like that, I'd either use the rotisserie or the toaster oven. I'd cover it with foil, like I did my chicken, then put it in there to get it cooked overall. All depends upon how thick that was. Only t-bone or porterhouse are really thick.

Then I'd just brown it some more in the toaster oven. I may try that some more. Of course, you can't smoke it like that, but wot-evah.

BTW, what kind of grill do you use? Gas or charcoal? :D

I've only cooked chicken on the roti and haven't put much steak on the toaster oven. I think it should work.

So why wouldn't it be a good idea? Just wouldn't taste right?

Well, if you're on an outdoor grill, I can understand not wanting to use foil. You'd burn the whole thing down, since aluminum catches fire.

I use foil to wrap microwaved potatoes, and I make foil packets to steam vegetables. I've never had them go on fire either.

Here's the recipe from Cooking Light for chicken pesto with pasta. Just a side note. I rarely measure so make your own decision if you want to follow this to the T. I think it calls for way too much cheese so I only added a little.

1 3/4 lb. skinless boneless chix breast halves
s&p
20 oz. bowtie pasta
1 T butter
2-3 garlic cloves, minced
1 1/2 c 1% low-fat milk, divided
2 T flour
1 (3.5 oz) jar commercial pesto (about 1/3 c)
3/4 half-and-half
2 c (8 oz) shredded Parm cheese, divided
grape tomatoes
fresh chopped basil (optional)

1. Prepare grill; add chic already seasoned with s&p. Grill approx. 10 min or until done, turning after 6 min. Remove and keep warm. Cut into 1/2 " pieces.

2. Cook pasta, drain and put in bowl. Reserve 1/4 c cooking liquid.

3. Heat butter in med saucepan over med heat. Add garlic to pan; cook 1 min, stirring occasionally. Combine 1/2 c milk and flour in small bowl, stirring with a whisk. Add milk mixture to pan, stirring constantly. Stir in pesto. Gradually add remaining milk and half-and-half, stirring constantly. Cook 8 min or until sauce thickens. Add 1/4 c reserved cooking liquid, s&p, 1 c cheese; stir until cheese melts.

4. Add chix and sauce to paste, tossing well to coat. Add tomatoes and basil; toss gently. Sprinkle with remaining cheese. Serve immediately.

I had spaghetti w/turkey meatballs last night.

I had a brownie ice cream sundae at lunch today, so dinner has to be somewhat healthy. Think I'm leaning towards a Turkey sandwich w/provolone cheese.

It's pickled ginger. They dye it to make it more appealing. Real pickled ginger is kinda beige.

I don't remember seeing any, but I never really looked. I'll have to check it out. I know we have an Indian place nearby that I've been wanting to try but I don't know anyone who would go with me.

And we have tons of Indian restaurants here. We've had a major influx of Indian population in our town, so much so that you'd be hard pressed to find an American or other type of store in the south part of town. It's knows as Little India here now.

But I wouldn't know what to order if I went in. I'd love to try it though.

Pad Thai Ingredients

3 Tbs. fish sauce, to taste
3 or more Tbs. tamarind juice the thickness of fruit concentrate, to taste
2 Tbs. palm or coconut sugar, to taste
4 Tbs. peanut oil
1/3 lb. fresh shrimp, shelled, deveined and butterflied
3/4 cup firm pressed tofu, cut into thin strips about an inch long, half an inch wide and a quarter inch thick
4-5 cloves garlic, finely chopped
3 shallots, thinly sliced (or substitute with half a medium onion)
1/4 cup small dried shrimp
1/4 cup chopped sweetened salted radish
2-3 tsp. ground dried red chillies, to desired hotness
3 eggs
3 cups fresh bean sprouts
1 cup garlic chives, cut into 1 1/2-inch-long segments (optional)

Here's a few dishes you could try. The spellings will probably be off.

Yam woon sen...a glass noodle salad with cooked shrimp spiced with a garlic sauce, hot red pepper, onion and some green leafy stuff...don't know the name...not parsley or oregano.

Tom kah gai...a coconut based broth with chicken, mushrooms, red and green pepper, another thai spice...the name escapes me now.

Geng keaw wan...green curry based broth with shrimp...you could replace the shrimp with beef....with eggplant peppers and spices.

Yam neur yang...steak salad....thinly sliced strips of steak...with cut up cucumber, tomato, onion, lettuce.

Pla rat prik...basically a fish dish with chile sauce.

The appealing thing about Thai food are the exotic spices and flavors. They are very unlike anything we are use to in our typical meals. Give it a shot.

P.S. Don't drink the Thai beer or whiskey. The beer (Singha) sucks and the whiskey (Mekong) will rot your stomach out. :lol:

I'm not an expert in Indian cuisine, but I usually get either the Tandoori chicken (roasted with a bunch of spices) or the chicken tikka masala (chunks of chicken in a tomato/curry sauce).
