Glad the weather held up. I'm sure the expensive chicken tasted way better last night. ;)

She had a BLAST. Seats were supposed to be SEC 26, Row U, but there were empty seats way down in front that some guy said they could take. They didn't get to the seats until the 3rd inning, but we had so much fun texting back and forth, especially in the 6th when Melky made those 2 catches and then hit the homerun! :lol:
My favorite text was at the end...she wrote "start spreadin' the newwwwws..."
They went to the Yankee Tavern after the game and took the 12:32am train back from 125th St. (I think she got in just before 2am).

I'm playing pool tonight, so I'll keep it simple. I had some fried chicken with my veggie rice, but later on, it's the turkey breast + beef salami sandwich, green leaf and tomato. Nothing fancy.
On Saturday, I may splurge. I'd also bought some of that Chinese food to make at home. I've never made chicken chow mein before, but if the rice doesn't work (how good can it be in a can?), I'll have my own. If anything, the chicken and veggie can always be saved one way or the next.
Finally went food shopping. Bought stuff to make Swedish meatballs. Yum!

I use ground beef, but I buy a powdered Swedish meatball mix which I mix in with the meat and it comes with a packet to make the gravy. I serve them over egg noodles.

It was pretty tasty, but I have never made it from scratch, so I can't really compare.
The only thing I would have done differently had I read the small print first, is that I would have baked the meatballs instead of frying them in the pan. Too spattery.

I think they're usually served with egg noodles (at least that's what my mom always does). If you want to be different (and I know you do), you could do mashed potatoes instead, but I wouldn't use pasta.
Swedish meatballs are in a brown gravy - you can use the packet like Karen, or open a jar of mushroom gravy over the meatballs in the frying pan, or make your own like Trish and my mom do.

So that's why Stouffer's and a few others always have them in brown gravy for the frozen TV dinners. I'm still wondering why they're routinely tiny. It's like they're the "cocktail franks" out there, treated like appetizers.
I have a few packets of brown gravy, so I may try it. I have a 14" non-stick frying pan, so anything that I don't want to get burned but cook smoothly, that's my choice. That works great with ground beef.
Last night, I used my cast iron frying pan to slowly cook some eggplant and yellow squash for a salad. Good stuff. :) :2thumbs:

Ground beef actually. You make it kabob style and throw it in the tahini sauce. Then you throw cauliflower and potatoes(if you like..I forgot to mention potatoes are in there too) and cook it all.
Make some rice, throw that on top of rice.....its delicious :D

I think it's been like 30 years since I've had a sloppy Joe. I've kept thinking about those, but never actually went to the store and got the stuff.

Really easy...once again, I use a packet mix for sloppy joes. Ground beef, browned, then drain the fat and add the packet mix and a small can of tomato paste and some water. Cook for like 10 minutes and serve on hamburger rolls. :)
My kids love them and I enjoy them too. :)
Tonight we're going to a Japanese Hibachi place for Nick's birthday. Yum. :)

Well, yours may be different. Mine has about 5 restaurants on there, a few of which I've never heard of. They must all be owned by the same group, I'm assuming.
Tonight I made meatloaf again (everyone seemed to enjoy it last night... why not go for it again).
This time I substituted ground up kitchen sponge (new... right out of the package) instead of the goldfish, which were instead of the bread crumbs.
People didn't seem to like it tonight.
That's too bad John. I would have thought the sponge might have added a nice texture. :lol:

Tried a new chicken recipe tonight. It was really good.
Ranch Cheddar Chicken
Ingredients
1/2 cup Ranch Dressing
1 tablespoon All-purpose flour
4 (about 1 pound) Boneless, skinless chicken breast halves
1/4 cup Shredded sharp Cheddar cheese
1/4 cup Grated Parmesan cheese
Preparation
Prep Time: 15 min.
Cook Time: 30 min.
Combine dressing with flour in a shallow bowl. Coat each chicken breast with dressing mixture. Place on ungreased baking pan. Combine Cheddar and Parmesan cheeses; sprinkle on chicken. Bake at 375°F. for 30 minutes or until chicken is no longer pink in center and juices run clear.
Makes 4 servings.

Start with no less than a 3lb. boneless Prime Rib roast. I remove the fat from the outside. There is enough for flavor inside the cut.
Coat a baking pan, not a baking dish, lightly with oil. Set the baking pan on one of the top burners on the stove and heat it up on medium. Sear the cut on all sides and all around the cut. Remove pan from burner. Leave the roast on the pan.
Next, take one small clove of garlic and mash it. Put this mashed garlic in a bowl and add 1/2 teaspoon of pepper and 1/2 teaspoon of seasoned salt and mix together. Take this mixture and rub over the entire cut as evenly as you can.
Set the roast thats still on the baking pan and place uncovered in a pre-heated oven set at 325 for 2 1/2 hours. After the time is up, remove from the oven and let it set for 20 minutes. It still is actually cooking within itself during this 20 minutes.

Friday, I did the "Golden Arches" thingy and got a grilled chicken sandwich w/small fries. They have a deal with Vitamin Water, so I had the red one.
I also took in a chicken made on the coal-burning grill that the street vendors sell in Manhattan.
Last night, no cooking either. In fact, I didn't even get home early, so I only had some grilled chicken (is that becoming a habit?), rice & black beans at a Mexican restaurant that I like. Good stuff. :)
Later on, just some Chinese food (beef chop suey + chicken wings). Suddenly, everything tastes like chicken now. :P
Tried a new chicken recipe tonight. It was really good.

That's about it, other than eating it. Although I'm sure you could tweak the recipe anyway you wanted for your own taste (like adding onions, minced garlic, chipotles or whatever) It was really, really good... and it hit the spot on a chilly, dreary weather day.

I just made an olive spread (food processored black olives with walnuts, mayo, sour cream, salt, pepper, minced onion and thyme) to spread on crackers.

That's ok! My son loved it (he also helped me make it) and it's a quick easy recipe, so I will make it again, just with the pepper this time. :)
Btw, it said to put the chicken in an ungreased pan, but I used a glass baking dish and thought the cheese would stick really bad, so I sprayed a little PAM. Worked out great!
I think I'm just making hot dogs and beans tonight.

I was set to make some hamburger helper, then decided against using the HH. I'd bought a small amount of ground sirloin, then after the chicken breast had defrosted, I just threw them together. Added some Spanish rice and made another concoction in my 14" pan.
Yeah, BronxBaumer is right, I make weird combos, but it still tasted good when I added some oregano and Adobo.

Ohhhh. You should look for some healthy recipes online then. Once you start craving foods and depriving yourself of things you like, it gets harder to stick with the diet.
Yeah, the cheese and creamy dressings will add calories, but you don't have to overdo it. You can buy lowfat cheeses and dressings, too.

Yeah, I have been letting myself eat more what I like at this point, because I am back to a 30 waist...but I don't want to balloon back up again. Once I'm under 160, I'll breathe a huge sigh of relief.

It's so simple, you don't really need a recipe. :)
Just put a packet of powdered/dried onion soup mix into the crockpot. Then add a 3-4 lb roast (beef or pork will work. Cheaper cuts are better). Then smear a can of jellied cranberry sauce over the roast. Cook for 6-8 hours. That's it!
It makes the best gravy!
I can't take credit for coming up with it, but I (and several others here) have made it numerous times.

We ended up at the Playwright in New Haven and I had the most delicious salmon dinner with mixed veg and mashed all in a to-die-for cream sauce.
(Oh yeah, and a Magners cider to wash it down. :D )

I love how meatloaf is so good warm with gravy and just as good cold as a sandwich with mayo.
I think I'm going to try a recipe I found for scallops in a tomato pepper sauce over warm buckwheat noodles tonight.

Tilapia filets (baked), asparagus, and rice tonight.
I think I'd gotten this same fish. I don't know how to make it, but I may grill it on low. I'm not sure if I'll do this either in the toaster oven, in the regular oven (inside of a dutch oven) or the pot on the stove. I'll figure it out later, since I make fish about 2-3 times a year. Otherwise, I just order out.
In the meanwhile, I'm just making some chicken legs with goat meat. Yes, I know some of you aren't into goat meat, but in the Caribbean, goats are plentiful and taste great. Lots of onions, a little chicken broth, oil, some oregano and Adobo. I'll see how it works out.
Earlier, I just had some Hebrew National beef franks on a roll, added some kraut and vendor-style sliced onions in tomato sauce. I should just try the franks with veggie beans next.
Brad, Tilapia is a very mild fish. You don't need to season it too much.
I either cook it on my countertop grill (like a Foreman), just sprinkled with a little salt, pepper and lemon juice or bake it over a bed of spinach in the oven, with a little chicken broth, tomatoes, chopped onion and salt/pepper.

When I bake my Tilapia I just spread some butter on top and sprinkle with garlic power, lemon pepper and dill. I bake it at like 375 for about 10mins (?)...I just keep an eye on it and take it out when it's done. It always comes out really flaky and tasty.

It's so simple, you don't really need a recipe. :)
Just put a packet of powdered/dried onion soup mix into the crockpot. Then add a 3-4 lb roast (beef or pork will work. Cheaper cuts are better). Then smear a can of jellied cranberry sauce over the roast. Cook for 6-8 hours. That's it!
It makes the best gravy!

Another easy recipe: take a chuck roast and top with 3 cans of golden mushroom soup, a packet of onion soup or 1 onion sliced on top of that, and then put baby carrots along with some canned potatoes (new potatoes I think) around the sides. Cook in crock pot(6-8 hrs) or 325 degree oven for about 2.5 hrs and you have a complete dinner. I usually have some kind of bread with it and you can add other veggies to the mix if you want.

Well, my crockpot has 4 settings...4 and 6 hours are high and 8 and 10 hours are low.
Regarding your recipe, don't the canned potatoes turn to mush in the crockpot for that long? They are pretty soft to begin with.

I love fish but I've never had Tilapia. Does it have bones? I don't like eating fish with bones.
