I just threw out all my Thanksgiving leftovers today. Wasn't a lot left, but I didn't know how good they still are almost a week later.
Tonight is "smorgasbord" dinner, where the fridge gets cleaned out and nothing makes any sense as a food combination and healthy, it is not.
Toasted English muffins with sliced Spam, cheddar cheese, pickle slices, mayo & mustard
Lavash pizza with chorizo, chicken and pepper slices
Rye bread with ham, cheese
French fries

My youngest son called me at work and asked me to bring home something to eat because he was starving. When I asked him what he wanted, he said "surprise me". Well I did, with two humongous broccoli sausage Calzones and a six pack of Killians Irish Red. It just doesn't get any better than this.:D

If I were to ask my kids what their favorite food is they'd all say taco's. They love them.....messy as they are!!!
They are my kids' favorite food, too, but they don't agree with me, which is why I said Boo.
Tonight was American Slop Chewy, which is another kid favorite not beloved by me. Boy, they owe me this week. Tomorrow night we should have foie gras seared and served on a bed of bitter greens topped by a warm fig chutney. That'll show em.
Linguine with oil and garlic.
I just can deal with life, and this is easy to make.

Yeah, that's what I'm going to make them from next time. I made them from scratch from my Betty Crocker cookbook, so they're probably pretty much the same. But the Bisquick will be faster.

Wow! The closest I ever came to knowing any politicians was my neigbhbor in the condo complex where we lived awhile back. He ran for mayor.

The sausages were yummy. My daughter wouldn't even try them, but she really doesn't like sausages anyway.
We also dipped Italian bread in olive oil with fresh ground pepper (ala Romano's Macaroni Grill). Mmmm...I have olive oil coming out of my pores now.

Italian the best. Spanish very good. Check the bottle, though. Since the olive freeze in Italy a few years back, some of the old houses are mixing all kinds of other countries' oil in--and charging the same price. Get one that says 100% Italian o.o.
Do you have a favorite brand?
Not really....since I go through it so fast, I usually have to buy what's on sale, unfortunately.
BTW, under Italian oo, if you really want to get fancy, the order by region (1 is best) is
1.Liguria (Tagiasca olive oil is absolutely stunning)
2.Toscana
3.Umbria
4.Sicilia

We put pepper in the olive oil, but not just regular ground pepper. We like the coarse ground pepper that you almost have to chew. :)

:drool: is right! That is one of the most addictive things to have for an appetizer. I think I could make a meal of of that and some wine.
I like using the larger elephant garlic bulbs on toasted baguette.
How long do you bake it?
I put the elephant garlic bulbs in for about 30-35 minutes at 350ºF. (First slice the tops off.) When it's browned and looking carmelized and you can literally spread it on the bread like room temp butter, you're done!

hoisin-honey drumsticks in the slow cooker, green beans, salad, rice pilaf.
Tomorrow night is a ham steak with homemade mac and cheese and some assortment of green stuff. Friday is grilled chicken breasts topped with pico de gallo. Then I'm out of food. ;)

Recipe for drumsticks. You don't have to broil them, but I do b/c I can't stand looking at that pimply white flacid skin otherwise.
Drumsticks with Hoisin and Honey
Prep time: 45 minutes
Cooking time: 2 hours on high, 4-5 hours on low
Additional steps: Pre-broil the chicken
2 pounds Chicken Drumsticks
1 cup Hoisin Sauce
1/2 cup Honey
Pre-heat the broiler. Put the drumsticks on a broiler pan and cook for 10-12 minutes, until the skin is crisp and brown. Mix together the hoisin sauce and the honey in a large bowl. Add the drumsticks and stir gently to coat. Put the drumsticks in the slow cooker. Cook for 2 hours on high, or 4-5 hours on low.
Serves 4.

I don't know what to make tonight. It would definitely be a good night for soup. I have some chicken stock, but no chicken to add.
Maybe I can figure out another kind of soup (hubby brought home a cup of corn chowder the other day that was sooo good. Maybe something like that?...)

If I don't make my soup, I buy it at Whole Foods. They make excellent soups. Last night I had Carrot Ginger. And they make an awesome Triple Squash.
They also have chilis and homemade bread :-).
Tonight ... grilled salmon with sauteed spinach and I think a little mac and cheese. Not your most compatible meal but mac & cheese sounds sooooo good right now.
I'm going out to an Italian restaurant tonight. I don't know what I'm having yet, but I do know that I'm going to have an stuffed artichoke for starters. They make it just like my mom used to.

I make mine witha nice red sauce. I like that on some nice crusty Italian bread. Add in a salad and you are done. That's an easy and inexpensive meal for those of you with kidlets. It keeps if everyone has to eat at different times. I might also make some spaghetti and butter with parm cheese. Simple, cheap and yummy.

Tonight I had Lobster Ravioli (Decadent lobster-filled tarragon pasta topped with sauteed shrimp, asparagus, tomatoes and lemon butter sauce).

6 boneless chicken thighs
2 (10.75 ounce) cans condensed cream of celery soup
salt and pepper to taste
1 (12 ounce) package refrigerated biscuit dough
In a large pot over high heat, combine the chicken with enough water to cover, and boil for 15 to 20 minutes. Drain some of the water from the pot, reserving 3 cups in the pot. Remove chicken and allow it to cool, then pull it apart into bite size pieces; return to pot.
Reduce heat to medium, and add the cans of condensed soup. Season with salt and pepper. Pull the biscuit dough into pieces, and add to the soup. Simmer over medium heat for 7 to 8 minutes, or until the dough is cooked through.

Okay, here are a couple chicken recipes and I'll post a couple soups next.
I almost didn't post that link at all, b/c frankly there are a lot of posters in this thread that are much more accomplished cooks than I am. I'm what you call an enthusiastic and reasonably knowledgeable amateur. And these are really low rent cookbooks in that we get paid not enough for the work involved. But they are fun to do, and extra money is extra money!
Chicken Breasts with Endive
Belgian Endive, in our humble opinion, is better cooked than raw. It develops a much deeper and sweeter flavor. The slow cooker is perfect to cook this vegetable.
Prep time: 30 minutes
Cooking time: 3 hours on high, 5-6 hours on low
Additional steps: Sear the chicken breasts before adding to the slow cooker
4 pieces Chicken Breasts, bone-in and skin on – about 2 1/2 pounds
4 bulbs Belgian Endive
1 cup Chicken stock or Broth
Season the chicken breasts with salt and pepper. Heat a large saute pan over high heat and add a little oil. Sear the chicken, skin side down, until well browned. Turn and brown the other side. While the chicken is cooking, split the endive lengthwise in two and add to the slow cooker. Put the chicken on top and pour the stock over.
Cook for 3 hours on high, or 5-6 hours on low.
Serve the chicken with some of the endive and pan juices. Serves 4.
Lemon Rosemary Roast Chicken
A fast sear to brown the skin, followed by a slow and gentle cooking makes for a tender, moist and flavorful roast chicken.
Prep time: 30 minutes
Cooking time: 3-4 hours on high, 6-7 hours on low
Additional steps: Sear the chicken to brown the skin before putting it in the slow cooker
1 Roasting Chicken – about 4 pounds
2 Lemons
4 Tablespoons Chopped Fresh Rosemary
Rinse the chicken and pat dry inside and out. Salt and pepper the chicken inside the cavity and on the outside. Heat a saute pan over medium-high heat and add a little oil. Sear the chicken, one breast side down for 5-8 minutes, then turn and sear the other side for 5-8 minutes.
Cut the lemons in half and squeeze the juice into a bowl. Put the lemon halves into the cavity, along with half the rosemary. Truss the chicken and put it into the slow cooker. Pour the lemon juice over the chicken and sprinkle with the rest of the rosemary.
Cook for 3-4 hours on high, or 6-7 hours on low.
Remove the chicken from the slow cooker and carve. Serves 4-6.
The pan juices can be made into a gravy by degreasing and stirring in a couple of tablespoons of flour mixed in water. Cook over medium-high heat until the gravy boils and thickens.

Serve with tortillas, fresh cilantro and lime wedges for added zip.
Prep time: 20 minutes
Cooking time: 6-8 hours on low 2-3 hours on high
2 pounds lean Pork, such as Loin
2 14 ounce cans Black Beans
1 16 ounce jar Salsa
Trim fat off of the pork. Cut the pork into 1 inch cubes and put them into the slow cooker. Drain the beans and add them to the pork. Add the salsa and stir. Cook for 6-8 hours on low, or 2-3 hours on high. Adjust seasoning with salt and pepper to taste.
Serves 6-8.
Lentil and Tomato Soup
Be sure to wash your lentils in a colander and pick them over for any small rocks before cooking.
Prep time: 10 minutes
Cooking time: 6-8 hours
1 1/2 quarts Chicken Stock or Broth
2 cups Lentils, washed and picked over
1 14 ounce can Diced Tomatoes with Onion and Celery
Add all of the ingredients to the slow cooker. Cook for 6-8 hours, until the lentils are soft. Adjust seasoning with salt and pepper to taste.
Serves 6-8.
I''d add some garlic and oregano to this one--we were confined by the 3 ingredient rule, which is kind of gimmicky, but that was the book they wanted.
The Pork & Black Bean Stew looks great, Hildy! If only my husband ate beans...(but then again, it's probably one of life's little blessings that he doesn't ;) )

I stopped at the supermarket and picked up a some potato salad and couple Hummel Red Hots to throw on the grill this evening. It feels almost like summertime out there today, so I figured, why not?

Well I'm debating on if I should go to another Christmas party tonight or not..........but if I don't I found a nice recipe for Beef Stroganov from Epicurious.com. I'm not a big meat eater so I will prob just eat the noodles and mushrooms. The recipe looks delish though. :)
I don't see myself cooking anything between now and Christmas.
I'm so screwed....

We have a friend's Christmas party to go to tonight too. I'm looking forward to it. My son is coming too because he's friends with their daughter and some other of their parents and friends will be there too. It's just going to be lots of appetizers and drinks. :)
And some karaoke. Oh boy! :lol:
