A salad from Saladworks.
D'oh. Typo.
I've been having sandwiches & salads for most of my lunches. I may need to try something different, since after the lettuce (usually red or green leaf), I'll add cherry tomatoes, broccoli, chicken breast, cauliflower, red or orange peppers, then some mushroom (shiitakes are my fave).
For the sandwich, mostly cold cuts like pepper turkey, corned beef, salami, pastrami.
Perfection.

It's crazy food night tonight. For dinner, some chicken breast sandwich w/turkey sausage, beef bacon on lettuce, tomato.
For lunch, just some chicken boiled in gravy w/beans (I'll bake it later on), then some rice I'd made and thawed out.

I should just pack the thing in tissue paper and stick it in the fridge for a day or two. Either that or dehydrate the thing.

Soup is the one thing I've almost never brought to work. Me, it's either salad (sometimes I make these too large) and a sandwich. I'll also bring some juice with me in a thermos.
I've never been able to go home for lunch, since I've never worked near where I live. Lucky you. Sounds like what a school teacher I know did before, since she'd worked near home.

I got bored so I went to the supermarket and got some ingredients. Since I couldn't pass by the dairy aisle, I picked up some heavy cream and some buttermilk. I made some chocolate liquer (tasted more like liquor) ice cream. The dairy-based chocolate liquer I'd used somehow doesn't freeze well. I added skim milk and used my churning thing straight out of the freezer. It didn't look like it was becoming "ice cream" until the end. At least it tasted good, especially when I added some Bacardi. I'll have to eat this before going to sleep (and long before going to work).
I opened a box of scalloped potatoes. First time I've made anything other than baked or mashed (unless you count potato salad). Tasted good. I threw in some heavy cream and some alfredo sauce (yeah, I'm experimental, but only *SLIGHTLY*). Anyway, I used some oval baking pan, they said to keep it uncovered. Used the correct amount of ingredients. Tasted nice, and I watched it so it didn't burn. Had a nice cheesy & creamy taste to it. Mmmmm.
I'll have to revisit the "fried" chicken thing. I'll have to get a recipe for buttermilk fried chicken, since I coated it with the egg wash, but by the time I'd mixed the bread crumbs w/the flour, nothing stuck. It's like all that stuff was around the chicken like batter but not sticking to it. The baked chicken tasted good anyway.
I'll have to revisit buttermilk pancakes in the AM. I've also got some bananas, so hot cereal seems good. Then there's my wondering why I haven't made any iced tea in ages. All those tea bags and I'm wasting them on hot tea.
As to bread crumbs, are they really just day-old-bread that's been scrunched? That's what I did in my toaster oven last night, but I'll have to see if it has any flavor. Oh yeah, I used some corn flakes along with the bread crumbs for the chicken.
One day I'll stop experimenting and combing crazy things. One day.

Forget dinner, I just made some pasta with home made sauce and garlic bread for lunch. :)
(Hope I dont talk to anyone judgemental about garlic the rest of the day)
Tonight will be a German feast. Mr. LDG auctioned his culinary services (dinner for 8) and tonight is the night the winner is cashing it in. I'm going along to help serve but I will get to enjoy the fruits of his labor. :D
The menu consists of weiner schnitzel, frikadellen (a German meatball), homemade spaetzle, potato pancakes, red kraut, an assortment of wurst with sauerkraut, bread and a Black Forest cake.

Its not difficult. You just need to make sure you have the ingredients and the recipe.
There are some Indian supermarkets somewhat near me. I'd need an Indian cookbook, since I don't have their spices (other than curry).
In Manhattan, they're all located by 28th St & Lexington Ave or so.
I just had something I'd reheated before: beef w/rice and some juice.
I've actually got very little coffee in my place right now. In fact, literally only enough for a single cup!!!
As to plaintains, many West Indians and Hispanics use these, it's a staple w/lunch & dinner, sometimes breakfast. People cook it differently, some w/oil, lard, shortening, different amounts of oil. I use vegetable oil.
I use a grill, and if the pot's cast iron, I'll keep the fire lower, and if aluminum, I'll turn a little higher, since it doesn't conduct heat as much. I'll pour oil onto the grill, light amounts of spices (garlic powder, salt & pepper usually). Either green or ripe, after you slice the skin off (you can't peel it like a banana, so I slice it in half both lengthwise then widthwise).
I'll get the skin off by slicing it widthwise, then making a cut along the length of it, then peel it off w/hands. After this, slice it on the long side either into 2 or 3 slices, depending upon preferred thickness.
After the skin's off, just drop it onto the grill w/not too much oil (a little more than you'd use to fry cold cuts). If you've got a smaller pot, you must add oil after you put another plaintain in the same place on the pot, as it gobbles up oil quickly. Make sure that you use two sheets of paper towel to dab off the oil when cooked. There should be some grill marks (unless you use a frying pan, of course), but not too black.
Each plantain should make 4 or 6 slices, depending upon whether you cut it 2 pieces the long way, or 3. Make sure that the round corners are grilled properly, not raw, which is why some people use 1" of oil to get it all cooked. This will usually make it softer, especially f/the ripe ones, but can be greasy.
The green ones will be a little tougher, like a yellowish complexion when raw; the ripe ones will be pinkish when raw, but they taste great when cooked. Just pretend it's a piece of bacon and toss it onto the fire, but make sure you sear it w/spatula, keeping the round parts fully cooked.

When eating pizza, have a tray right next to or above the keyboard.

Leftovers tonight
I make my egg salad w/some oregano, a little paprika, then salt & pepper, mayo.
Simmer them using what? I use a 1-qt small pot, do them f/15 mins. I've also got some egg cooker machine which heats them up f/predetermined time after I add water, as measured out.
I often use them in salads, as lettuce & tomatoes can get quite boring afterawhile.
Ribs were yummy. I also made potatoes sauteed with onions and we had leftover brocolli rabe from the pizzeria last night.

I just wish that I had the chicken cutlet thawed out but it was frozen. I tried defrosting it and baking it on high, but it still wasn't done. It looked good, but wasn't fully done. I had a BLT triple decker sandwich and that chicken breast would've worked fabulous on that pile.
Next time, I'll get that right.

John's trying to say that I've posted some doosies in here. Wot-evah.
I've defrosted my juice, and I've also defrosted my rice. Since the turkey sausage dries easily, I've just added some marinating sauce to it and some BBQ sauce, put that into the toaster oven (yeah, I'm lazy).
I've breaded the chicken breast, have put that into the other toaster oven. Once those are ready, I'll nuke the rice and I'm in biz-niz.
How soon before John posts this?
I'm just defrosting some sauce and making pasta tonight. Nothing fancy.

Yup, I cook a large amount then freeze it. If I don't freeze it, it goes bad.
Milk, juice and rice can all be frozen.

I've been using the boil in bag rice. So easy and tastes just as good as long grain, IMO. I like it much better than minute rice.

I thnk I might just have myself some rice for dinner. Vick, how do you make yours? With sour cream and lemon juice? I think I have both in the house.

Well I always use chicken broth to cook it in......I don't use water. And I squeeze fresh lemon juice. I prefer plain white yogurt but if I don't have that I sometimes just use butter or sometimes sour cream. I put a little on the side of the bowl and sort of mix it a little at a time instead of dumping a bunch of it on the rice.

I love sour cream too. Sometimes I get a fruit platter at the diner and it comes with sour cream. Yum.

You have more mouths to feed than I do. I can't eat a whole mess of rice at once. Now I'm starting to eat more rice, so I'll be OK.
I mix Uncle Ben's with the Goya rice, then add some frozen veggies. I also think that my rice takes a bit more than 15 minutes to make. I boil the water first, use a double-boiler thingy, and the water is only about 1/2" above the steamer vents. In the water, I'll add salt, margarine, sometimes a little pepper.
Carolina rice must be good, since lots of people I know use it. I've never used it much, and Uncle Ben's has always worked, but Carolina's is less expensive (10 lbs costs about the same as 5 lbs of Uncle Ben's).
I'm making pasta, but I would gladly eat something else. I'm weird I guess. :lol:

I ordered some through my cousin's daughter and wondered when they'd be around. (Not that it really matters now that I'm being good!) :lol:
I just got my boob tube, a 20" TV/VCR combo and ordered digital cable. I'm finicky about the picture (it's a flat screen TV), so why not? If it's another $20/month, figure it's a decent lunch at Mickie D's per week. Eat chicken and eat at home. Invent cheap week and don't spend anything unnecessarily and the non-budget-busting digital cable shall be yours.

Anybody got a good recipe for innards? Patient at the store brought us a couple of bucketsful and they are starting to go bad. I hate to waste them.
Related question: if they have the green bubbly stuff starting to show up, are they still safe to eat?

I just got my boob tube, a 20" TV/VCR combo and ordered digital cable. I'm finicky about the picture (it's a flat screen TV), so why not? If it's another $20/month, figure it's a decent lunch at Mickie D's per week. Eat chicken and eat at home. Anyone try a Flat Iron Steak before? They're pretty darn good and very tasty. A lot of flavor - like a tri-tip. Anyway, they are a perfect cut for steak fejitas. You can pan fry the cut of beef and then use a sharp knife for cutting it into strips. Total cooking time is right about 10 minutes in total - five a side, for medium rare.
Or ... cut the meat into strips first then pan fry. Meat will cook up quicker this way - but won't be so pink. (I like it somewhat pink inside) Season it any way you want for fejitas. Do some bell pepper strips and cut onions in another pan and then combine everything with some fresh tomato pieces also for a quick heating together. Like my veggies kind of on the crunchy side.
Ready for your soft flour tortilla now. Top off with some sour cream, guacamole, and maybe some chedar cheese. Some people like lettuce also. Don't forget about some salsa of some type.
That's dinner ... once you add a side of refried beans - topped with a little cheese.

You mean the Chinese corn things? I've had those. I usually use that for stir fry.
Other than the baby corn, my supermarket has had those for salads when they're fresh. The stir fry version they sell is frozen.
Right now, I'm just making chicken legs and rice, then baked chicken breast sandwich on a hero. I'll have to see if I'll even make a salad. Sometimes I just want a huge sandwich instead, since after the sandwich, any salad I make seems pretty light.

I wasn't too crazy about how the chicken legs turned out in the crock pot the other day, so I put them into a covered 9" round pyrex dish, aluminum foil at the bottom and some sauce inside. Turned out great when I made it, nice and smooth, not just watered down.
I'm also making a chicken breast sandwich. There has to be some cure to keep those thingies from going dry all the time. I've added onions to both.

We ended up at Edo Sushi and it was great. I had three apps for dinner - a skewer of grilled asparagus, edamame (natch) and a side of spinach/cubed tofu in a peanut sauce with sesame seeds. I went for the green tea ice cream since we walked both ways from the hotel and I was able to hit the treadmill before dinner. :D

In the mid-80s, I was a diary nut. Pizza, I'd get extra cheese. I'd always get a cheeseburger, milk shake, whatever. I couldn't take the "side effects" anymore.
When Lactaid came out, that was great. The calcium one I didn't like, since that produce the same (effect), so I went w/the 100% lactose-free, non-fat skimmed version. I haven't seen this recently at jersey, so now I just buy regular non-fat skimmed milk. It's cheaper, that's what I'd used to mix w/Lactaid anyway and it works.
With Lactaid being less available and IMO, somewhat overpriced, skim milk seems to do just fine. I'll never have whole or lo-fat milk, butter nor ice cream, but sorbet, frozen yogurt, margarine, "I Can't Believe..." all work f/me, so I don't have any problems now. I'd taken about an 8-year dairy hiaitus around '88 or so, but now, milk shakes, cereal (hot & cold), smoothies all work out.

In the mid-80s, I was a diary nut. Pizza, I'd get extra cheese. I'd always get a cheeseburger, milk shake, whatever. I couldn't take the "side effects" anymore.

I know. That's why I'm bummed that you had a not-so-good meal there too. It was may favorite place to "splurge." We really need something new that's not just another chain. :lol:

Had half a burger. It wasn't that good. The hub wasn't on his game cuz usually he cooks thee best burgers. I gave most of it to the dog. :lol:

Ah well. It's still early (for you). We don't eat till 7 or 8 some nights.

It's easy and very fast. Put a little bit of sesame oil in a skillet and saute some fresh spinach (I used about a half of a bag of spinach leaves). Toss in some peanut sauce (I used 3TBSP Lee Kum Kee Peanut Flavored Sauce). At the end throw in cubed tofu, give it a few stirs then out onto the plate it goes with a sprinkle of sesame seeds.
Serve it with some shelled edamame and some wam sake.

You should try goat milk, or goat milk yogurt or goat cheese. It is much easier to digest than regular milk. I can't handle cow's milk but eat goat milk yogurt that I buy at Trader Joe and I don't have to use any Lactaid with it. The difference is that cow's milk has very large molecules and goat milk has much smaller molecules that are similar to human milk and thus easier for humans to digest. That is the only dairy that I eat.
