boneless chicken breasts topped with chopped garlic and parmesan cheese set in a baking dish filled with two cans of Delmonte diced tomatoes (350 for 45min. to an hour) steamed brocolli and microwaved baked potatoes (ends cut off, stabbed through 8 times in a dish 1/2 water lots of butter. i use smart butter.)
came out WICKED GOOD!!!

We did the famous slow cooker cranberry/onion soup mix thing yesterday. My wife liked it but I must say I wasn't overwhelmed with it at first. I thought the sauce was too sweet tasting.... so, the wife doctored it up with mustard powder and worcestershire and after that it was pretty good.

I think that was the problem because from the way it shredded (which I like) I expected it to taste like barbecued pulled pork but tasted way too sweet for my taste. It was fine after she adjusted it, though. I'd definitely make it again.

It is sweet from the cranberry sauce, but I think the onion soup balances it out. I don't like overly sweet things either.

Fresh bread baking is the best smell ever.
I'm making homemade sauce too for din din tonight. Can't wait to eat it later.

:lol: I haven't used mine in quite awhile. That's what I should have done...made a fresh loaf for tonight. It has an express bake setting where you can make bread in an hour. I don't know if I have any yeast though.

It's so easy in the breadmaker. You put the water in, the flour and the yeast (and anything else for whatever kind of bread it is) and push the settings buttons. You can choose how dark you want the crust. Then it goes through the different stages...mix, knead, rest, bake etc.
It smells good, but I don't think anything beats bread in the oven. My dad used to make his own bread and all these years later I can still remember the smell.

That's one of the things I love about that site, moreso than an actual cookbook. You get several opinions and sometimes see trends regarding tweaks that should be made. The only one I recall making with this one was kind of unintentional...I always end up with 3lb. roasts. I didn't adjust the root beer or barbecue sauce and it came out fine.

I found a 1.5 lb. pork in the freezer so I set out to make the pork thingy but I didn't have root beer and was too lazy to go out and get some so I threw a bottle of bbq sauce in the crockpot instead. We'll see what it tastes like.

Just keep an eye on the liquid. The BBQ sauce by itself may burn because of the sugar in it if the pork isn't juicy enough.

My brother-man sandwich was 1/3 of one of those very long Italian hero breads, adding in red leaf lettuce, some tomatoes (forgot which kind, but not the plum ones), pastrami, pepper turkey, beef & turkey bacon. I'll take my chances, but it tasted great w/mayo & mustard.
For my salad, I had some romaine, the same tomatoes, broccoli, mushrooms, carrots, yellow peppers. I should've added some eggs to this.
Anyway, some juice with this made it a meal.

I can deal with tuna exactly once a week and that's it. Usually Mondays, since it's easy to make, but beyond this, no dice.
I just buy the ones in the foil wrap. Anything in the cans need to be drained forever and they still turn out soggy. How the heck does someone make a tuna fish sandwich if the tuna fish is wet? I should just pack the thing in tissue paper and stick it in the fridge for a day or two. Either that or dehydrate the thing.

I have to play pool again tonight, so I just made my salad beforehand, then I'll take it to work tonight.
I had some of the tuna in the foil pouch. No water to drain, so not a complete PITA.
I bought some egg shells & tuna thing from one of the delis, and added some veggies. Asparagus, green leaf lettuce, mushrooms and avocados.
Would Karen be freaked out if I told her that I also added some kippers and anchovies? If so, then never mind, but I did. :)
If I pass out when eating this, then I'll blame Karen!!! :gulp::O :P

I think I've posted it before, but after I roast a chicken, I put the carcass in a big pot with water covering the chicken bones. Add some celery, onion, carrot & seasonings. Bring to a boil, then turn down heat and cover. Simmer for a few hours. Strain the bones and veggies, and then you have broth/stock. :)

I made broiled salmon last night and will make the same thing tonight. I went for weeks not eating fish because I couldn't get to the fish guy. So now I will be eating fish for awhile.

You ever did this on a crock pot? 4-6 hours seems like something I'd do while sleeping, but I'm a little funny leaving the fire on for such a long time. Either the oven or a crock pot seem likely.

I'm glad that you're feeling better. That crazy salad yesterday (started w/tuna, then I added kippers & anchovies) was definitely great. I like tasting different things with every bite. Tuna alone is pretty boring, and I've even tried some tuna by an Italian deli owner who brags about his.
Back to a BLT (beef & turkey) + pastrami for me tonight. I had some arroz con pollo earlier today for lunch.
I need to cook some rice.

I def leave the skin on....it makes it more flavorful. S&P for seasoning. I also put parsley in for seasoning.

I never tried to make stock in the crock pot. I usually cook it on the stove when I know I'm gonna be home all day.
There really isn't any skin on the carcass. I don't pick it clean, but after we've had the chicken for dinner, there isn't much left on it.
If you do have leftover meat, I would save it to add when you make soup, not for the stock.

We went to a movie tonight and on the way home stopped at Trader Joe to pick up something for dinner. I bought Tilapia Citronette from the frozen section. When I took it out and read the packaging I realized I couldn't eat it because there was wheat in the ingredients. So, my BF ate that and I ate some leftover salmon. We also bought some Pate for an appetizer and the Country Italian Salad which was OK but my own salads come out much better!

That sounds good enough. If someone else wants it and they are more exact, then you can post it. Me, I'm of the "a little of this, a little of that" in my recipes, which is why I'd never make a recipe.
I've never used parsley or parsnip for anything, so I could skip that step. For pasta, the Asian things (the thin one for chix noodle soup) or that longer ramen noodle thing works fine for me, if both are used at the end.

I'd gotten some soup from Golden Krust, which is a Jamaican restaurant chain. In addition to carrots, celery and potatoes, they also had some boiled dumplings, which many West Indians like. I think I'll try this, but I haven't made boiled dumplings in ages. I'll have to see how long everything takes to cook.

I've never made a soup with dumplings, but I've made them for my stew. I'm not sure how to do it since with stew, the dumplings sit on top of the liquid and meat and veggies. How would that work with soup? You just drop the dough in and boil it?

I've done it both ways, but I have to say the flavor from boiling the carcass to make stock gives it sooo much more flavor.
Depends on how much time I have how I do it ;-).

Yes that's exactly what I use. One of those smaller chickens.
I've also used quarters if I'm making just a small pot, but those little chickens work out really well.
It does make a very flavorful soup. Sometimes I'll throw in a little extra chicken boullion if I used too much water.

So anyway, where was I? Oh yeah, I'm really not that hungry. Had a gyro, dolmades and baklava for lunch. I'll prob skip dinner tonight and just have a few drinks. :D

I drove there in rush-hour traffic in the rain, but missed the turn. I ended up on the freeway (again, at rush hour). I get off at the next exit, and the roads are closed for construction. I ended up detoured back towards In 'N Out, but their drive-thru line was so long that I said, "Screw it." On the way back, I stopped at Wendy's. My trip for a burger took over an hour. :lol:

I do it both ways. When I use just the carcass it is for the chicken stock to be used in recipes, etc. and I freeze it for later use. When I use a whole chicken it is for chicken soup to be eaten right away and I add the vegetables to it cut up so they will be part of the soup. Either way is good and healthy.

I agree that the dark meat gives the soup extra flavor. I like to buy chicken thighs, about 3 lbs and add that to the soup. That way the chicken does not come out as dry when you cook it for a long time.

It was quite an adventure. I had wanted In 'N Out Burger, which is about 5 miles away. I drove there in rush-hour traffic in the rain, but missed the turn. I ended up on the freeway (again, at rush hour). I get off at the next exit, and the roads are closed for construction. I ended up detoured back towards In 'N Out, but their drive-thru line was so long that I said, "Screw it." On the way back, I stopped at Wendy's. My trip for a burger took over an hour. :lol:
Jenn, I hope you get your Valentine meal over the weekend at least. We have done that many times because the restaurants are so overpriced on Val. Day. We just go to brunch on the Sunday after and it is much more enjoyable and less expensive.

I think I'm going to have to start making my rice with cold water then boiling it. I made some rice, there was too much water, so I drained some and then boiled it, added some frozen veggies into the double boiler (one of those 10 qt things that has both a rice and a deeper pasta insert, plus a lid).
Anywayz, even after removing about 32 oz of liquid (I have those soup things which measure a quart), I still had my rice looking a little mushy. Should I just start it cold? I think my rice was better and nicer that way, not mushy.

We have these things called Measuring cups here in Canada.............2 cups of water to one cup of rice..........salt and tb butter and For the love of God.......Don`t lift and peak......:P

The soup came out very well last night. We're ordering Chinese tonight - chicken and broccoli. I think I'm going to make some boil in bag brown rice to go with it instead of the white rice they give you. We'll see...

The game dinner was a success - started with haggis with 'nips and 'taddies, then rounds of food including ostrich medallions, braised duck with sauerkraut, venison patties with a roasted corn salsa, pheasant pie, Scottish meat pies, mixed veg and homemade shortbread with lingonberry sauce and Downey's Irish Whiskey cake for dessert.

I made the slow cooker pulled pork recipe that LDG posted a few pages back (the root beer one).
Eh ... it was okay. I think I might have liked it better not using a tenderloin but unfortunately, that's all the supermarket had.
I did serve it on rolls with coleslaw. I will probably try it again with a different cut of pork.

Darn, I forgot to look at the cut of the pork hubby cut up last night. I have half of it left and I was going to try that recipe too. But I think it's a tenderloin. It's boneless with not much fat.
I just had some real bad tasting hamburgers, I'm feeling rather sick...:D
Tonight we made cubed fried tofu in a peanut sauce and spring rolls made with some of the leftover duck from the other night. It went really well with plum wine. :drool:
