Im still hungry after that spaghetti. I might go to the bars after work, ill grab some food there.
Hmmmm wings, mozzarella sticks, pizza......decisions decisions
I found a recipe for a tomato/spinach/lentil soup, but I didn't have diced tomatoes (only crushed) and I didn't have lentils (only barley). So I substituted the stuff I had. The barley had to cook a little longer than the lentils I guess and then I shut the flame off because it was getting too thick.
Voila...the barley sucked up most of the liquid, so the result was kind of a pasta fagioli with barley instead of pasta.

Originally, it was going to be ravioli... but the hubby doesn't want to cook so we're off to the Japanese food court again. I'll probably have noodle soup but I'm not sure. Grilled fish is always good, too.... and better for you than the noodles.

We are eating the leftover Beef Stew from last night which came out really good. It is a great night for it too with all the rain/cold weather we have been having.

Mitsuwa Market -- the West LA version at the northeast corner of Venice and Centinela. It's in a lot with a bank (Washington Mutual???) and a CVS pharmacy. The food court is inside the Mitsuwa Market.
If you're ever looking for Japanese ingredients and/or pre-prepared foods, it's great!
http://www.mitsuwa.com/english/index.html is still under construction but you can do a Google search for "Mitsuwa Marketplace" and find 'em across the US -- in major metropolitan areas, of course.

For breakfast, I had some eggs over easy, grilled fries (I use a toaster over on a sheet of foil), a muffin.
Lunch, I'd heated up some fried chicken I'd made, added some West Indian rice & beans I'd bought, then some yuca with the bermuda onions that the Spanish people make. They also make crushed platanos, which I adore.
American and Caribbean foods rock!!! :gulp::O

I make a kielbasa casserole that's pretty good and very easy. I've also made it with ham for breakfast with salsa.
Slice the kielbasa to bite size, mix it with a package of frozen hashbrowns and about two cups of shredded cheese. I use cheddar but you could use whatever you wanted. Put the mix in a 9 X 12 baking dish and pour 1/2 cup of milk over it. Sprinkle a little more cheese on the top. Bake for about an hour at 375.
Karen,
Did you ever make cabbage & noodles? That makes a great side or base for grilled kielbasa.

Thanks Linda. Sounds good. I have frozen hashbrowns but they are the patties, not the loose ones. I guess I could crumble them so I don't have to make a trip to the store.

No, I never made that. I was eyeing the cabbage in the store yesterday too, but I didn't buy it.
I see a lot of kielbasa recipes calling for sauerkraut, but my kids would never eat that.
I didn't get to the baked rigatoni. Maybe tomorrow.

I'm recovering from knee surgery that I had last week. I anticipate going back to work on Thursday. It's feeling much better....just looking for some more doting....it was fun while it lasted.:)
Yeah, I knew you had the surgery. I figured that's what you meant.
Glad it's feeling better.
Btw, Trish...how did you make that sausage/broccoli rabe/pasta thing?
3 tbsp olive oil
1 lb sausage (she uses spicy...I used 1 lb sweet plus one link of hot) with casings removed
1 or 2 bunches of broccoli rabe, stems trimmed
1 lb orecchiete or penne
3 cloves garlic, minced
1/4 cup parmesan cheese (grated)
Pinch of red pepper flakes
salt and pepper
Bring a large pot of salted water to boil. Put in broccoli rabe and cook to desired doneness (I like it a little crunchy). Strain it out when done and keep it in a separate bowl. Save the water in the pot for the pasta. Bring the water back to a boil and cook the pasta until al dente. Reserve 1 cup of the pasta water, and drain the pasta. Return to the pot.
Meanwhile, heat the oil in a large skillet, and brown the sausage over medium heat, crumbling it with a spoon until browned and juices form, probably around 12 minutes or so. Then add the garlic and red pepper and saute it until fragrant.
When the sausage is done, add the broccoli rabe to the skillet and add salt and pepper to taste. Then add the whole mixture to the pasta in the large pot and toss. You can add the reserved pasta water if needed, 1/4 cup at a time.
Add parmesan and serve.
I added some roasted red peppers to mine, and I thought it tasted terrific, plus it gave it a nice color.
That sounds like something everyone here would like. Too bad I didn't buy sausage the other day, because I have everything else. May have to stop for sausages tomorrow.

I made sausage with broccoli rabe and orrechiette instead. I'm waiting for my husband to come in from the garage to eat. It smells really yummy, but I don't know how it's going to taste.
Edit:
It was outrageously delicious. This is a keeper.
I love Orechiette with sausage and broccoli rabe. I have made it many times in the past but now I can't eat the orechiette because of the gluten so I have to substitute Gluten Free Fusilli instead. Too bad they don't make gluten free orechiette! :(

So far the only pasta varieties available in gluten free are Penne, Spaghetti, Shells (some brands) and Fusilli. I'm just happy to have a subsititute at all so that I can make these recipes once in awhile. I used to make pasta dishes very often until I found out that my health was suffering from it. They are coming out with more and more gluten free choices, however, breads, crackers, pizza crust, etc. so I'm happy.

Here's another version of the Taco Salad. I got this from my friend at our beach. Karen's is much easier though to prepare.
2 lbs hamburg
2 packets of taco seasoning
1 head of lettuce (sometimes more if you wat a bigger salad)
2 tomatoes diced
1/2 onion diced
8 oz. shedded cheddar cheese (I like the really fine kind!!)
bag of doritos - crushed (not the smallest bag)
sauce:
1/2 cup vegetable oil
1/2 cup vinegar (I use the apple cider vinegar)
1/4 cup sugar
1 teaspoon minced garlic
a pinch of dry mustard (or a squirt of yellow mustard)
1. Brown hamburg, drain, make taco meat as per directions on packet. Put in refrigerator to cool ( I usually just put it in a gallon ziploc bag).
2. Chop lettuce (hint use a plastic knife and te lettuce will not brown) You can do the night before also
3. Chop tomatoes and onion
4. Make sauce the night before
In a large bowl (because you need room to mix), add lettuce, cold taco meat, tomatoes, onion, cheese. MIX GOOD.
Then, pour crushed doritos on the top. Mix just a little. Then shake the sauce and pour half over the top of the doritos. MIX, then see how much more dressing you need.

A bird taste instead of a beef taste? If someone made a turkey burger instead of a beef burger, putting ketchup on a turkey burger sounds just wrong. :p

I can definitely tell the difference between a turkey burger and a hamburger but when it's mixed in something like sloppy joes or stroganoff, it picks up the flavor of the sauce so I can't really tell. But I like the taste of ground turkey anyway so its all good.
I can definitely tell the difference. Ground turkey is just ok to me.

It is blander, but I find it moister than beef. When I make it in meatloaf, I have to add extra bread crumbs.
I haven't made hamburgers with it yet, but I would imagine I would notice the difference because the texture is different. But if you season it enough, it tastes pretty close.

Forget the baking. My friend tried the cranberry/onion soup thing with chicken legs the other night. She said it was a little soupy, and the chicken fell off the bone, but it was delicious. So, that's what I'm making. :) Over white rice. Maybe brown rice to be a little more Bub-friendly.

Thanks Karen. :)
That was the first time I made it. The recipe (from Epicurious) called for kale which I really liked! I think that was the first time I had it. The recipe also called for a can of beans but next time I make it I'm leaving the stupid beans out so I don't have to pick them out.
You should the beans in. In addition to being the musical fruit, they're really healthy for you.

I made up a soup tonight and it came out really good - I sauteed up some chopped onion, carrots & celery, added chicken broth, some of that pre-cooked grilled chicken and seasonings (salt, pepper, parsley and sage) and let it simmer for about 20 minutes. Then I added fresh spinach for a few minutes. I often try things from my mind and they don't work, but this really did. :)

She just threw in a chix and added onion soup and cranberry? I'll have to try it.

Not a whole chicken. I used legs. But yeah, just the powdered onion soup mix with some cranberry sauce smeared over the top of the chicken.
It came out ok, but not as flavorful as when I've made it with a beef roast. The chicken was moist and tender though.

I don't know if George has seen this, but you mean that you've bought chicken legs from the supermarket, or that you HAVE chicken legs? I couldn't help but look quizzically at this post.
Anywayz, I've been having sandwiches & salads for most of my lunches. I may need to try something different, since after the lettuce (usually red or green leaf), I'll add cherry tomatoes, broccoli, chicken breast, cauliflower, red or orange peppers, then some mushroom (shiitakes are my fave).
For the sandwich, mostly cold cuts like pepper turkey, corned beef, salami, pastrami.

I'm thinking of making some chicken soup this weekend. I may get the broth either from the supermarket or the Chinese restaurant. I hadn't even realized they'd sold this until someone walked into the restaurant and ordered this for about $2 or so (for about 20 oz).
Which pieces of chicken did you use? I'd likely add some Asian Ramen noodles into mine.

 Vicki already quoted that in the Posts out of context thread.
When I make chicken soup, it's from stock I make from simmering the carcass of a roasted chicken I cooked for dinner. Then I cut up pieces of the meat we had leftover.
Making a steak in the broiler tonight. With broccoli and rice. :)

For the moment. Day 2 of the new meds. Fingers crossed. Thanks.
