I made a humongous pork shoulder and served it with a cider-sage-cranberry sauce, which was the friggin' bomb. Also veggies, salad, rice pilaf, etc.

My sister lent me her Giada cookbook. She's got some great recipes in there that I'm definitely going to try.
She has a white bean dip that's like an italian hummus. I'll make both and compare:)
I have a few of her cook books and they are my fav. I've made that white bean dip and it's delicious Trish. :drool:

I have made her mushroom risotto a few times and it's my fav risotto recipe. Easy to make too.
My husband just warmed up the chili I made last week. :lol:

That recipe does sound yummy! My ginger chicken came out good too.
And yes, there's no good way to say that you like pork! :lol:
We had hotdogs on that roller/grill machine with diced red onion, crumbled bacon, sauerkraut and mustard.

Hmm...I thought I posted this, but anyway...If you're new to hummus, do it w/o the tahini. Just a can of garbanzo beans (drained), clove or two of garlic, 1/4 c of olve oil, a rst red pepper (do it yourself), and a juice of 1 lemon, some ground pepper, basil?, and kosher salt.

The only problem is he only likes corn. Actually, he will eat broccoli if it's part of Chinese takeout, and if there's enough bacon in it, he'll eat baby brussel sprouts, but veggies are not exactly playing front & center in any meal he puts together!

I just looked at mine:
creamed and whole kernel corn, sour cream, eggs, butter and corn muffin mix. Almost the same. The sour cream makes it a nice texture and it's only 3 oz. I bet if you used low fat sour cream, it wouldn't be so bad. But the cup of butter is killer. :lol:

That's exactly what my recipe is, too... I had never had it until Christmas. It was damn good. I know it's fattening, but yummm!!!
It was good with the ribs - and I have some turkey & white bean chili that I froze that I think it will be good with, as well.

I had pizza for lunch and wasn't hungry for dinner tonight (which btw was fettucine alfredo with chicken and brocolli)
It's disgraceful what I'm seeing here from those of you who joined the Hippohowideismyass Club.
Last night's dinner: A large helping of fresh Romaine lettuce, topped with carrots, cucumber, olives, grape tomato, red peppers, pickled beets, onion, unsalted cashew halves, bamboo shoots, extra sharp cheddar, croutons, baked chicken strips and light caesar dressing. A huge pile of food, and only about 750 calories.

Tonight is a sliced steak salad - we have a meeting at church this evening and won't be home till late.

I was pretty proud of myself last night. The guys wanted steak. Portion control is my weakness so I cut off a measly 4 oz for myself. Baked sweet potatoes and salad. Then the ever popular fat free pudding cup for dessert. Not bad.

You pick the carcass free of any meat, and stick it in a pot with water and some chopped onion, celery, garlic, bay leaf, and any other spices that come to mind. Some poeple tie the veggies up in a little bag but I can't be bothered.
Then put this whole thing on the back burner and simmer away for several hours, remove and strain all the bones and veggies and stuff out. That's your stock.
From that you just make a c hicken soup--add in all the chicken pieces you picked, as well as whatever else you like to put in Chix soup, and have at it.
We had lasagna casserole with green beans. I used low fat cheeses, too.

I am making a Turkey soup with the carcass of my Thanksgiving turkey which I saved in the freezer to make after the holidays. This will be good to put in the freezer for when I want to make other soups, etc., or if I catch a cold or something I have the broth in the freezer. :)
For dinner I am making broiled chicken legs, salad and corn.

My son was so funny yesterday. He was in class and they were reading. The teacher had Reader's Digest in the classroom and he found a recipe for Frenches Fried onion chicken. He was afraid he would get in trouble for copying a recipe, so he wrote it on a tiny piece of paper and put it in his pocket.
He was so excited to show it to me when he came home from school, so we got the ingredients tonight and I'm making it tomorrow.
I thought it was so cute that he got so excited over a recipe. :)

8 manicotti shells
1 1/2 cups low-fat cottage cheese
1 cup cooked chicken
1/4 cup sliced green onions
1/4 cup sliced or chopped ripe olives
1/4 cup chopped red bell pepper
1/4 cup cilantro
1 clove garlic, minced
1 1/2 cups salsa
1 (8 ounce) can tomato sauce
1 cup shredded Monterey jack cheese
Preheat oven to 400 degrees F.
Cook and drain manicotti according to package directions.
In a large bowl, combine cottage cheese, chicken, onions, olives, red pepper, cilantro and garlic. Mix well. Fill manicotti with mixture and place in a lightly greased 13 x 9-inch baking dish.
Combine salsa with tomato sauce, mixing well. Spoon over manicotti. Cover tightly and bake for 10 minutes.
Remove cover and continue baking for 10 minutes.
Sprinkle with cheese, if desired and bake 3 minutes longer until cheese melts. Serve immediately.
Yield: 4 servings

Grilled chicken, spinach with garlic and oil, sauteed mushrooms (in butter flavor spray) and salad with olive oil and champagne vinegar dressing. It sounded better than it was actually.
I caught a movie after work today and went to this place across from BAM for barbecue called "Smoke Joint" Had a pork sandwich and collared greens. Delicious and my stomach was singing.

I think Turkey soup is more flavorful. The aroma coming from this soup when I was cooking it was scrumptious. I haven't had any yet as I still have to strain it. I didn't put any special ingredients in there either.

I like to just marinade my steaks in some olive oil, ginger (fresh), garlic, lime or lemon juice and either some parsley or cilantro, whichever I have on hand. It's quite delicious and doesn't overpower the steak too much.
Tonight I am having some grilled chicken and an arugula salad with sliced apples and provolone cheese with a sprinkling of white balsamic.
Going out to dinner tomorrow night, so trying to be good. They have choc souffle on the menu :drool:

For store bought, the Lawry's 30 Minute Marinades are really good. I use the Steak and Chop, and it's great.

And the recipe didn't call for cayenne but I put some in because Trish likes her chili spicy also.

Heat up some olive oil, and when just when hot, turn off and drop in frersh rosemary and a few garlic cloves. Remove from heat, and let steep until cool. Once the mix is cool, pour over steaks and then marinate.

I have never used an acid with this marinade. The rosemary really comes through, with a little garlic backround.
I have a rosemary bush outside and try to use it as often as possible as I love the taste.
Everyone's too beat to cook so we ordered pizza.

Fettuccine with Veal, Peas, and Mint
2 T. butter
2 T. olive oil
1/2 lb. veal scaloppine, cut into strips
s&p
1 small onion, chopped fine
2 T. dry vermouth or white wine
1 c. chix broth
1 c. heavy cream
1 c. frozen peas
fettuccine
mint leaves, cut into thin strips
1. In a lg. frying pan, melt 1 T. butter with 1 T. olive oil. Add veal and some salt and cook, about 2 min. Remove
2. Reduce heat to moderately low. Add remaining 1 T. oil and onion. Cook, stirring occasionally, until translucent, about 5 min. Stir in vermouth and then the broth and cream; bring to a simmer. Cook, stirring occasionally, until thickened, about 4 min. Add peas and heat through, about 1 min. Add meat and more salt if needed.
3. Boil fettuccine. When done, drain. Toss with sauce, add pepper and more 1 T. butter.
(i added mushrooms too for extra flavor).

Yes, the French's Fried Onion chicken. It was very simple and tasty. He loved it. My daughter actually tried it even though she hates anything oniony, but she liked it and said it tasted like potato pancakes. :)

My friend had a bunch of us over for dinner last night. She's the best cook I know.....truthfully. I love me an Italian cook! Anyway, she made the best ribs I've ever had and the best vegetable lasagna I've ever had and some thin homemade bread with rosemary and sea salt sprinkled in. And olive oil from Greece. Delicious dinner and as usual with all of us gals, lots of laughs. :)

This place is not at all a fancy restaurant. It's actually where I buy my ingredients. They have all kinds of different types of food that you can't buy in a reg store. They did make a counter and put some stoves/ovens etc in so it's very casual but the best Greek food around. :)

It wasn't much - I just used the shredded broccoli/red cabbage/carrot mixture from the supermarket and for the dressing, I used 1 tablespoon rice wine vinegar, 1 tablespoon canola oil (the recipe called for sesame oil, which I didn't have and didn't feel like buying), 1 tablespoon toasted sesame seeds (just take some regular sesame seeds and heat them up in a small pan - no oil or spray or anything), a little salt and pepper. Mix the dressing except for the sesame seeds, add half a bag of shredded broccoli, mix well, and then mix in the sesame seeds.
Delicious and nutritious!
Ally, that sounds so good. My kid probably wouldn't eat it, but I think I would love it. :)

It wasn't much - I just used the shredded broccoli/red cabbage/carrot mixture from the supermarket and for the dressing, I used 1 tablespoon rice wine vinegar, 1 tablespoon canola oil (the recipe called for sesame oil, which I didn't have and didn't feel like buying), 1 tablespoon toasted sesame seeds (just take some regular sesame seeds and heat them up in a small pan - no oil or spray or anything), a little salt and pepper. Mix the dressing except for the sesame seeds, add half a bag of shredded broccoli, mix well, and then mix in the sesame seeds.
Delicious and nutritious!
I think that's the recipe my friend uses but she adds sugar in it to make it a little sweet. Either way, it's delicious!

Last night I was going to make my usual hamburgers but I dropped an egg and before it could go oozing all over the floor, I picked it up and broke it out of the shell into a cup. It was then that I decided to make meat loaf instead! :D It went over very big so I guess it was a happy accident! We will see what happens for tonight's meal. :)

I am making Beef Stew, Italian Style.
Mr. LDG made broccoli rabe sauteed with garlic, mozzarella (he wanted to use fontina but we didn't have any) and sundried tomato sandwiches on lightly toasted portuguese rolls. :drool:

Oatmeal with brown sugar except there was so much brown sugar it really was like eating a bowl of brown sugar with oatmeal on it. I felt sick after eating it. :lol:
