Mashed cauliflower sounds good. I like it but never tried to mash it.

I put on a pot of sauce this afternoon but no one ate home, so I put it in the fridge and tomorrow I'll cook up some Italian sausages to add to it.

Leftover 'sauce' & pasta. When I 'do' cook on the weekends...I always have plenty to freeze. :D

I make all my sauce in the summer from fresh tomatoes I buy at outdoor Farmer's Market. I freeze enough to last me for the winter. Last year I got soft Heirloom tomatoes at a good price. I made tomato sauce in all colors, yellow, orange, green, and red! Delicioso!

I guess it depends on how lumpy you like your mashed potatoes. ;)

Caulifower gets pretty mushy of you cook it long enough, so I'd think just mashing it would be fine.
I'm gonna have to buy some and try it.

I steam it, then pop it in the food processor with a little milk, S&P, garlic and smidgen of butter and sour cream...
I am almost liking it better than real mashed potatoes ... and it is a heck of lot healthier.

Hey Karen - would you like to tell me your recipe for sauce if it isn't a secret? It's the one thing I have never made, and I keep seeing people make it and I figure I would give it a try...

I'm no expert, but my sauce usually comes out pretty good. :)

I put some olive oil in a sauce pot and add chopped onions, sauteeing them for a bit, then I add chopped garlic, but not until you are almost ready to add the tomato paste because it will burn fast.

Add a can of tomato paste and stir it around a bit, then add water a little at a time. It can be a little thin because it will thicken as you cook it, but not too watery. Sometimes I add a little red wine if I have a bottle open. I also like shredded parmesan cheese in my sauce, so I add that too, along with some seasoning (italian seasoning, salt and pepper, maybe a little garlic and onion powder) and I aways add a little sugar (maybe a teaspoon) to take the edge off the acidity of the tomatoes.

Cover and let it simmer on low, and keep stirring periodically. If it's getting a little too thick, add more water, unless you like it thick.
After it's been simmering awhile, add a can or two of either pureed tomatoes, crushed tomatoes, or tomato sauce. I switch it up...using whatever I have.
You can also add more seasoning if you need to. And I always add more parmesan cheese! ;)

Then just let it simmer, covered for awhile. Sometimes I cook it for an hour, sometimes 3. Stir occasionally. I once had someone tell me never to stir the hardened sauce off the bottom, but I do.

If you like it with meatballs or sausages, you can add those, but I don't like to cook the meatballs in the sauce...too mushy. I make them first in the oven, then add them to the sauce. Or for sausages, I parboil them first, then cut them in half lengthwise and fry them before adding them.

That sounds good. I am going to try it but I will have to substitute goat yogurt since I don't use cows milk.

That's exactly how I make my sauce except I add the paste at the end once I know how thick i want it to be. I also add hamburg meat after I put the onions and garlic in. I make it every Sunday so I can count on it for a few meals during the week.

I don't know why, but I have always started with the paste. I have even made a marinara for mussels with just paste, wine and water.

I also use chopped meat sometimes. I brown it with the onions and then add the paste.

Browned ground beef doesn't get mushy in the sauce and if I am making meat sauce, I add it at the beginning. But meatballs come out soft if you cook them in the sauce, no?

I guess it's all relative. ;) Ours are not falling apart or anything like that. Do you put the meatballs in raw or brown them first? We brown them pretty well so maybe that makes them more firm. Then they finish cooking all the way through in the sauce.

I never put them in the sauce until after the sauce is done and the meatballs are cooked in the oven. I'm going by my mother in law's sauce and the meatballs are always too soft. Definitely not falling apart, but not browned. Ewww.

Sometimes I cheat and buy those little frozen Italian meatballs. I actually like them. Shhh. :lol:

Thanks Karen - this is great - it's the 'blueprint' I was looking for. And I guess after I get the hang of it, I can tailor it to mine (or my guests) tastes.

I will give it a go hopefully this weekend and I will let you know!

Does it generally freeze well? Or does the family wind up eating it all ;) ?

Sometimes. I just use 2 cans of paste (or one of the bigger cans) instead of one and 3 or 4 cans of puree. But there's usually enough leftover from a single batch to freeze a small container, then I just add that to the next batch I make.

:D Can't wait to hear how it comes out. I am sure it will be fine. You just have to adjust the seasonings to your liking. I never measure, so I don't even know how much I put in.

I make my sauce much different. I don't use paste at all. I like a sauce that is a little more "saucy."

I start with a couple of cloves of garlic in olive oil. I saute them just until the aroma comes up. If you brown it too much, it makes the sauce icky. I don't use onion unless I'm making a marinara sauce. Then I put in about 4 of the large cans of Tuttorosso or Redpack tomato sauce (the only brands I'll use). The I add some basil, fresh if I have it, but dried works fine too. A little pepper, and about a good sized tablespoon of sugar.

I make the meatballs while the sauce is starting to boil. I use about 1 1/4 pounds of ground round, a couple of cloves of garlic, some parsley, some romano cheese, and I take a couple of slices of white bread which I run under the faucet and then squeeze the water out. It's a little old fashioned, but it makes the meatballs more tender than bread crumbs. (An old trick from Grandma).

I brown them well on the top of the stove, then I drain them and put them into the sauce. The sauce gives them flavor, and the meatballs also flavor the sauce as well. I also will take some pork ribs and cook them in the sauce. It makes the sauce incredibly flavorful.

Let it cook for a couple of hours. Even better, make it the day before.

If I use the canned tomatoes I like the Tutturoso also and Luigi Vitelli is good too. I use canned tomatoes only when I want to make a lot of it or add a lot of meat to it. In the summer I get fresh tomatoes and make big batches of marinara sauce that I freeze and use all winter long in cooking.

I like the fresh tomato sauce too, but I only really seem to like it in the summer. For me, it doesn't seem to make that real hearty type of sauce that I like.

I agree on the fresh tomato sauce - I like it but it's not "sauce" to me, it's fresh tomato sauce (if that makes sense). If you like roasted red peppers, I have a recipe for a roasted red pepper pasta sauce that is fantastic. I make my sauce more or less like Karen does. I make meatballs with bread crumbs, not white bread, although I should try that. I usually lightly fry the meatballs first and then finish them in the sauce.

OH - I have a fantastic crockpot tomato sauce too - I lightly saute onions and garlic and put them in the pot with canned diced tomatoes (don't laugh - I usually use Stop & Shop, mainly because they have the no salt added ones and I prefer adding my own salt as needed), olive oil, red wine, dried basil, oregano, salt and pepper, and crushed red pepper. Turn the pot on and 8-10 hours later, you have a great pot of sauce. I could put meat in it, but I usually don't, I put some of the sauce in a pot on the stove and then reheat it with meatballs or turkey sausage. Oh, speaking of meat, do you use regular ground beef or ground turkey for meatballs or "meatloaf mix" - I like the meatloaf mix better, but JP isn't supposed to have any of those meats, so I tried using a mix of ground turkey and ground pork once and it wasn't bad - not as good as beef/pork/veal, but decent.

Ah well, tonight is takeout night because I'm cooking for the FP today, which I should go do now. :)

My grandma was Scandinavian, so she never cooked an Italian meal in her life. If she wanted spaghetti, she opened a jar or can of stewed tomatoes and that was her sauce. :lol:

Her "meatballs" were pan fried, more like hamburgers and she always used bread in them. I don't know if she wet the bread first, but it never mixed completely in, so there were pieces of white bread in the meatballs. I loved them like that as a kid.

Anyone else used to eat pieces of the raw chopped meat after it was seasoned? I used to love that when my mom or grandma made stuff with ground beef. Wouldn't dare do that now though! :eek:

Sure - it's really simple and EXTREMELY fast to make.

In a small saucepan over medium heat, put in the following:

3T peanut butter
2T soy sauce
Crushed red pepper flakes to taste
About a ½ tsp. garlic powder
3T milk (if you want or have it, use light coconut milk)
1T ketchup

Stir until it's all blended and heated through. You may have to add a little milk at the end because it thickens pretty quickly. Pour over the cubes of sauteed extra firm tofu and serve.

Mmmm, now I can't wait for dinner! :drool:

My grandma was Scandinavian, so she never cooked an Italian meal in her life. If she wanted spaghetti, she opened a jar or can of stewed tomatoes and that was her sauce. :lol:

Her "meatballs" were pan fried, more like hamburgers and she always used bread in them. I don't know if she wet the bread first, but it never mixed completely in, so there were pieces of white bread in the meatballs. I loved them like that as a kid.

Anyone else used to eat pieces of the raw chopped meat after it was seasoned? I used to love that when my mom or grandma made stuff with ground beef. Wouldn't dare do that now though! :eek:

When I was in grade school my best friend was Norwegian. When I slept over her house the first time I was in culture shock. The food was so different than what I was used to. They had a lot of boiled stuff and they mashed it together when they ate it. Also, they had down comforters which regular people didn't have in those days!

I bet your grandmother's meatballs were good because Scandanavian meatballs are very good. I also remember finding some pieces of bread in my mother's meatballs. I loved her meatballs. After she took them out of the oven they were nice and crisp on the outside and I would start eating them before she could put them in the sauce. I liked them better without the sauce. I pretty much make them the same way but don't make meatballs much anymore because I can't eat regular bread.

Since my kids weren't home I went to Whole Foods and bought a nice piece of salmon and put shallots and tomatoes on top with lemon and s&p. I made yellow squash and I did the asparagus with oo and s&p....very tasty. And of course white wine. Delish. I love it when no one is home and I can eat what I want. :D

Oh, and chocolate covered strawberries for dessert. :drool:

Thats similar to mine..except I don't bother browning the meat..but I do season it ALOT with Adobo..

Add the veggies on top, 1 can of french onion soup and 1 can of beef broth.....I'll have to try it with the 'beer' next time..:D

The grilled veggie platter was unbelievable. Check out the picture I posted in the Forum Party thread. Squash, zucchini, red pepper, mushrooms.... and the most delicious dipping sauce ever. (It's Ally's recipe, so hopefully she can post it. She gave me ingredients but I forgot to ask about ratios. Allly, help!)

I can't believe I'm doing this - if ya'll know how to make this, no one will ever come to another FP! But then again, hardly anyone did, so here goes: :lol:

Grilled Veggie Sauce ala JP:
(The measurements are more or less approximate, although he was showing me how to make it yesterday, so we measured the oil/vinegar):
1/3 cup balsamic vinegar
2/3 cup olive oil (any kind, doesn't have to be Rachel Ray's favorite evoo)
1/2 tablespoon mustard
1 tablespoon lemon juice (Laura - I forgot the lemon juice in the PM I sent)
salt
pepper
1 teaspoon garlic powder

Put vinegar and mustard in blender. Pulse on low speed while drizzling oil in blender. When oil is incorporated, add salt, pepper, and garlic powder. Blend some more until mixture thickens. Taste test and add more or less of anything to taste.

I usually make my pot roast on the stove, but if I'm gonna be out all day, I'll use the crockpot. The cheaper cut of meat, the better.

I put the roast in a baggie with flour, salt and pepper and shake it around. Then brown the roast in oil. If it's not a lot of oil, I don't drain it after. The flour usually sucks up the oil anyway.

Add water and beef broth and some more seasonings and some Gravy Master. I usually add an onion cut up at that time, but most of the veggies are added later (potatoes, carrots, etc) because they will cook fast and get mushy.
Simmer it for a couple hours. The gravy is thin, but I like it like that with a lot of onions. You can thicken it with flour though.

The recipe with onion soup and beer sounds yummy!

I couldn't find a boneless shoulder at my supermarket, so I just used a boneless loin, about 3 pounds or so. It worked out fine. Next time I'm making more though, because it cooked down considerably. And this is one of those things that I could eat and eat and eat :lol:

I'm seeing her tomorrow so I'll hand them off. I was worried though about all her allergies and I hope I didn't screw anything up when making them.....I'll be nervous about that. :eek:

My other friend told me not to use any of my usual wooden spoons, cutting boards etc so I was careful about that. It just makes me nervous. This is for my friend that has a house in Nantucket - I think I mentioned that to you since you're going there. I'm seeing her tomorrow so she'll be so surprised. Her kid also has Juvenile Diabetes so I like to help her out when I can.

Do you have lots of gluten free recipes?? I think I remember you mentioning that.

I bought Wild Copper River Sockeye Salmon at Costco. I made it tonight and it was delicious. I also made a salad with Arugula, Pink Grapefruit Sections and Mint and Brown Basmati Rice.

That was really nice of you to make those meatballs for her. :)

My son has 2 friends with severe nut allergies, so when they eat over, I have to watch what I cook with. It's not just nuts, one kid is also allergic to peas, beans (not green beans though), carrots that aren't cooked, watermelon and strawberries (off the top of my head...I think there's a few more things).

I am always double cautious because I am so afraid I am going to give him something he can't have.

I was searching for something to make last night (I need to go food shopping!), so I found some SteakUms in the freezer and some frozen peppers and onions. I sauteed everything up and added some brown gravy and we had it over Boil-in-Bag brown rice.

It was actually quite yummy and very easy! :)

OTOH, I did go to the deli in Hartford today to buy ingredients for my friend's kid that has a gluten allergy. I made 3 pans of meatballs for her (to freeze) so she can plop them in tomato sauce. I'm seeing her tomorrow so I'll hand them off. I was worried though about all her allergies and I hope I didn't screw anything up when making them.....I'll be nervous about that. :eek:

Although I already knew a lot of what is in there I figured it might be helpful anyway. It is a very interesting book and also contains recipes. The son of the woman who wrote the book was diagnosed with Celiac Disease when he was less than a year old and that was in 1991 when not that much was known about it so she had to learn the hard way.

Actually that gluten free bread is pretty good. My BF eats it all the time and he can eat any kind of bread. :)

Vicki, here is one I just found in the Gluten Free for Dummies book. It says it is very easy so I will post it and if/when I find others I will let you know:

Incredibly Easy Peanut Butter Cookies

Preparation Time: 5 minutes

Cooking Time: 20 minutes

Yield: 2 Dozen

Ingredients: 2 eggs, 1 Cup chunky peanut butter, 1 cup of sugar

Preheat the oven to 350 degrees.

Beat the eggs in a medium sized bowl. Stir the peanut butter and sugar into the eggs.

Drop dollops of dough from a spoon onto the cookie sheet, about 2 inches apart. Use the back side of a fork to press them flat.

Bake cookies for 10-12 minutes, or until the cookies spring back a little when you poke them.

I would make sure the child is not allergic to peanut butter though. If so, you can substitute Almond Butter.

Here is another one from the same book:

Zebra Meringues

Preparation time: 15 minutes

Cooking Time: 2 hours

Yield: 40 Meringues

Ingredients: Nonstick spray, 3 egg whites, 1/8 tsp. of salt, 1/2 tsp. of cream of tartar, 1/2 cup sugar, 1 tsp. of vanilla, 1 cup of chocolate chips

Preheat the oven to 350 degrees. Lightly grease two cookie sheets with the nonstick spray.

Use an electric beater to beat the egg whites at high speed until they're foamy.

Add the salt and cream of tartar. Beat the whites until they form stiff peaks.

Add the sugar gradually while beating. Then add the vanilla, beating it in.

Using a wooden spatula, fold in the chocolate chips.

Use a teaspoon to drop the meringue batter onto the greased cookie sheets. Put them in the oven and turn the oven off. Leave the cookies in the oven for about 2 hours.

I always say the consequences of not following the diet is much worse than just following the diet. She should get that book Gluten Free Living for Dummies. It explains exactly why it is important to follow the diet and a lot of other important information.

Hubby came home early enough to cook the pork chops on the grill. I had them marinating in a garlic stir-fry sauce I can only find at Shop-Rite. I made buttered noodles and corn with them. Also, had to have apple sauce. :)

I don't use chopped meat, but here's how I make mine:

4 medium zucchini
3 turkey sausage, cut into slices
1 tomato, cubed
1 onion, diced
Shredded mozzarella

Preheat oven to 425. Cut zucchini in half lengthwise. Cut/scrape out the insides. Cube inside of zucchini. Brown sausage and onion in olive oil. Add zucchini cubes. Season with salt, pepper, garlic powder and oregano. Add tomato. Cook together until sausage is browned and cooked through and onion and zucchini are soft. Fill zucchini halves with sausage mixture. Top with shredded cheese and put in oven till cheese is melted.

NOTE: if you want the zucchini "boats" softer, parboil them for a minute while the other ingredients are cooking.

Thanks for the recipe. I will try it using chopped meat instead of sausage. I have marinara sauce frozen which I may use to mix in rather than the tomato. I don't have any tomatos. I bought these zucchinis that are round, like a softball and you scoop out the center so you don't have to cut them in half so I will probably parboil them since they will be whole.

I didn't make it tonight. It was too hot today so I will make it tomorrow. Today I made the rest of the Copper River Sockeye Salmon instead.

I love zucchini but it has to be cooked awhile. I don't like it when it is still hard.

I like zucchini sliced very thin and sauteed in olive oil and garlic until it is really brown. That is delicious.

Yeah, it is the gluten in the bread that I can't have and it can be made without gluten if you are ambitious enough to make it.

After just reading the last few pages of the Meat-Eater's Thread, I think I'll have some rice cakes tonight.Although Yankeebot's head cheese recipe was very intriguing.
