My daughter was diagnosed with pneumonia last week and was hospitalized for a few days...needless to say cooking went by the wayside. She's home now and feeling much better. Tonight it's gonna be quick. Scrambled eggs with spinach, mini-bagels and turkey breakfast sausage.
Yikes! How scary! Glad she's home and feeling better!
Tonight was my son's basketball awards dinner, so the lovely dinner I had was ziti in a bland thin sauce with rubbery meatballs. And chocolate chip cookies for dessert.
Hey, what could I have expected for $6 a head? :lol:

I actually ate what they put on my plate as I was starving. But my son took exactly one ziti and that was all he ate until the cookies got passed out.
My hubby just picked up my daughter from her friend's house and stopped at McD's on the way to get something for my son. :lol:

Mine too......I had it at a restaurant. They broiled it and put a little dressing on top of red onions (which I didn't eat), small orange slices and chopped asparagus. It had sauteed spinach which was delish!
How's your daughter feeling today? Better?

I'm taking this weekend off. I'll have to figure out which flour works best with it. I think the instructions say wheat, but I think it's something else.
The only reasons I'd gotten it is that it's from Italia (where else?), it's relatively cheap, heavy, and takes *TONS* of attachments. I'd gotten an attachment thinking it was the unit, then had to buy the unit (ebay, of course). My attachment is a "Ravioloni", which makes triangular-shaped ravioli that's fairly large.
I may experiment with various cheeses once I get the knack of this, then try meats also. I'll see whatever Contadina has in their ravioli and use the same. So long as it tastes better'n Chef Boy R Dee, I'm fine. :) The instructions are in Italian, English (UK), French and German, per the flags seen.

Yep, so I usually add some beans (black, white or garbanzo) and a little crumbled cheese (either feta, goat or blue)... sometimes I even add tuna.
I tend to go way crazy with my salads.
Tonight I think I am going to have pancakes with sliced strawberries for dinner. Pancakes make me happy....

I like to make big salads too and add a lot of things. Some other things I might add would be artichoke hearts or hearts of palm, walnuts or pecans, pepperoncini, red peppers, fish, or meat or whatever leftovers are there. For salad dressing I always use a good extra virgin olive oil and lemon with a little sea salt to taste. I think making your own dressing that way is better for weight control and health because the bottled kind, especially fat free or low fat versions have additives that are not so great.

You can't beat fresh caught fish. It never tastes as good when it is store bought. I eat fresh caught Swordfish and Blue Fish on Nantucket and it is like heaven. Then when I buy it at home it is just so-so. Actually, I can't even get Blue Fish here in California anyway but if I did it would be inedible because it was probably frozen.

Good luck with that. I think semolina flour is supposed to work good for pasta.

I had made it with a tomato base, so it looked like sauce. What a dope I am. :doh:

My parents used to take us to a fondue place when we were kids. I loved it.
I did make a chocolate fondue once. The kids loved it.

I rummaged through my fridge and freezer to see what I could put together as a main dish salad and I came up with: Romaine and Arugula, with radishes, artichoke hearts, greek olives, goat milk feta cheese and Colossal Shrimp (from TJoe's that were in my freezer) with Extra Virgin Olive Oil and Lemon dressing.
That's not bad for a cupboard that is bare.

Yeah, I always forget they are in there too. I usually use them for Shrimp Marinara. I keep homemade marinara sauce in the freezer that I make in the summer to use during the winter. In a pinch I can defrost the sauce and heat it up and throw the shrimp in, then make the pasta and I have a meal.
They are also good in stir fry dishes.

I'm seeing that semolina durum flour is some by-product or whatever of wheat, so I won't get wheat flour itself. I'll get the semolina.
I'll likely pick some up this week or weekend at one of those gourmet places in Manhattan. If that works, I'll try the spinach pasta flour also, just to see what that tastes like.

1 pound large shrimp -- peeled and deveined
1 teaspoon chopped garlic
3 tablespoons olive oil
1 teaspoon chopped tarragon
1/4 cup dry white wine
3 tablespoon grey poupon country dijon mustard
2 tablespoons chopped fresh parsley
hot cooked rice
Melt butter in large skillet. Add garlic and shrimp. Cook over high heat, stirring constantly 1 to 2 minutes or until shrimp curl. Remove from heat. Stir in parsley, mustard, wine and tarragon. Serve immediately over rice.

I will. On Thursday afternoon, I picked up some semolina durum wheat flour down by Union Square (humongous gourmet market that warehouse-sized). It was the only one they had, so I'll see how the basic one goes.

Hey, I never said it would be simple. If the basic thing is for spaghetti or whatever, I'll do that. I may need some of those "molds" thing to cut into different shapes. I've never used a pasta maker before. I'm sure that one of those "insert ingredients here and here's your fresh pasta" machines from Ronco would've been easier, but hey, I've gotta spend my weekends doing something (other than the usual). Oh, and don't ask what's the usual!!! :gulp::D

It'll be as simple as ordering out if it doesn't work the first time. Hopefully, more successful than making pizza or beef patties.

Looks good....I'm gonna try this. I don't think anyone else in my family will eat it however.....
Tonight - baked haddock, brown rice and brocolli. 2 fillets are low-cal, just some lemon-pepper seasoning and a sprinkle of sea salt, the other two fillets will have a mixture of horseradish and blue cheese dressing spread over them, then topped with breadcrumbs.
We'll be on the road by 7 and I won't have time to cook before we go, so probably something quick. I don't know what yet.

I'm Italian, but not Sicilian and I have never heard of this. It sounds very tasty but I can't handle that much starch in one meal myself.

Extra firm tofu cubes dredged in corn starch, salt & pepper and lightly sauteed, served with a warm peanut/milk/soy sauce/garlic powder/ketchup/red pepper flake sauce and a cool glass of pinot grigio.
Good as it was, I would have liked Trish's penne better!

Hee. I, too, once said that about Chuck E. Cheese. To no avail, although I have absolutely refused to have birthday parties there.
Speaking of trashy food, McD's tonight. Had to go to a wake so grabbed a fast dinner. It's repeating. (Thought I'd share.)

It turned out that it knocked me out.
Tonight I had leftover dinner from last night - salmon with wild rice and steamed broccoli. No vino, just a cup of tea. I'm determined not to make the holiday a WLC nightmare.

It's WHAT? :eek: Guess what I did. I ate it a two way. I decided to save the cheese for taco's tomorrow!
We ate at a place called Dick's Last Resort. The gimmick is rude wait staff that insults you and throws your menus and straws at you as well as make paper hats with insulting sayings on them that you have to wear! But we have been there before and the kids get a kick out of it. I had a very good pasta pimavera in a jalapeno cream sauce with shrimp on top. Yum. :)
I don't want to weigh-in Tuesday!

I went to a Dick's Last Resort while away for a tradeshow. One of the company partners was celebrating a birthday, so our waiter came over, blew up a condom and wore it on his head like a party hat. The photograph of this guy with our guy looking HORRIFIED was classic!
